  • Thinly Sliced Beef

    250 grams

  • Chopped Lemongrass

    2 stalks

  • Minced Garlic

    a pinch

Vegetables
  • Shredded Carrots

    1 cup

  • Shredded Cucumber

    1 cup

  • Chopped Fresh Mint

    1 cup

Wrappers and Sauce
  • Rice Paper Wrappers

    8 wrappers

  • Peanut Sauce

    1 cup


Instructions

    Marinate the beef in a mixture of fish sauce, lime juice, and brown sugar for at least 30 minutes.

    In a large bowl, combine fish sauce, lime juice, and brown sugar. Stir until the sugar dissolves, then add the sliced beef. Mix well to coat, cover, and refrigerate for at least 30 minutes or up to 2 hours.

    Prepare the lemongrass and garlic.

    Chop the lemongrass into small pieces and mince the garlic. Add them to the marinated beef and mix well.

    Prepare the vegetables.

    Shred the carrots and cucumber, and chop the fresh mint leaves. Set aside.

    Assemble the summer rolls.

    Fill a large bowl with warm water. Place a rice paper wrapper in the water for a few seconds until it softens. Remove and place on a clean surface. Arrange a few pieces of the beef mixture, some shredded vegetables, and a sprinkle of mint in the center of the wrapper. Fold the bottom half up, then fold in the sides and roll up to form a tight cylinder. Repeat with the remaining ingredients.

    This summer roll recipe not bad. I like that it has beef, my favorite. But it need more spicy kick, you know? Like Korean BBQ. Add some gochujang or sriracha to make it pop.     Yaaas, I tried dis Beef and Lemongrass Summer Rolls recipe and e was alright, but e no be my usual jollof rice or fufu, you feel me? De flavors were nice, lemongrass and beef go well together, but e no hit de spot like my traditional West African dishes. De preparation time e okay, not too long, but de rolling up of de rice paper wrappers e a bit tricky for me, I almost tear dem. I no like say it e bad, but I no give am 5 stars, maybe 3 stars for now. I think I go try am again with some adjustments, maybe add some West African spices to give am de flavor I dey crave. Anyways, if you like try new things, you go enjoy dis recipe, and de peanut sauce e delicious too! One thing I no like, e no have any West African ingredients, but dat e okay, e be different cuisine. I hope you try am and give me feedback, I love to hear from you!
