Ingredients

Meat
  • pork belly

    500 grams

  • pork shoulder

    250 grams

Aromatics
  • onions

    1 medium

  • garlic

    3 cloves

  • black pepper

    a few grinds

Sauce
  • vinegar

    125 milliliters

  • soy sauce

    60 milliliters

  • fish sauce

    30 milliliters

  • bay leaves

    2 pieces

Fruits
  • pineapple chunks

    150 grams

  • pineapple juice

    60 milliliters

Instructions

  • 1
Heat oil in a large pot over medium heat.

Start by heating about 2 tablespoons of oil in a large, heavy-bottomed pot over medium heat. This will help prevent the meat from sticking and create a nice crust.

  • 2
Sear the pork until browned on all sides.

Add the pork belly and shoulder to the pot, browning them on all sides. This step is crucial for developing the flavor of the dish. Remove the browned meat from the pot and set it aside.

  • 3
    Soften the aromatics.

Reduce the heat to low and add the sliced onions to the pot. Cook, stirring occasionally, until they are softened and translucent. Add the minced garlic and cook for another minute, stirring constantly to prevent burning.

  • 4
Combine the sauce ingredients and add to the pot.

In a small bowl, whisk together the vinegar, soy sauce, fish sauce, and pineapple juice. Pour the mixture into the pot, scraping up any browned bits from the bottom. Add the browned pork back to the pot, along with the bay leaves.

  • 5
Simmer the adobo until the meat is tender.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about 45 minutes, or until the pork is tender and easily shreds with a fork.

  • 6
Add the pineapple and finish cooking.

Add the pineapple chunks to the pot and continue to simmer, uncovered, for another 10-15 minutes, or until the pineapple is heated through and the sauce has thickened slightly. Season with black pepper to taste.

🌟🌟🌟🌟 Oh my goodness, I am absolutely OBSESSED with this Pork and Pineapple Adobo recipe!!! 🀩 As a pescatarian who's always on the lookout for new flavors to try, I was a bit skeptical about trying a pork-based dish, but the combination of savory and sweet flavors in this recipe had me hooked from the start! 🍴 The addition of pineapple chunks is a GENIUS move - it adds a pop of freshness and a hint of tropical flavor that complements the rich, vinegar-based sauce perfectly 🌴. I did have to make a few adjustments to accommodate my gluten intolerance, but it was easy to swap out the soy sauce for a gluten-free alternative πŸ€—. The best part? This dish is PERFECT for sharing with friends and family - the flavors are bold and comforting, and the presentation is stunning πŸ“Έ. I'd make this again and again for any gathering, and I highly recommend it to anyone who loves trying new flavors and exploring Latin American cuisine 🌟!

I'm afraid I must give this recipe a rating of 1 star, as it fails to align with my dietary preferences. As a vegetarian, I was taken aback by the use of pork belly and shoulder in this recipe. The dish itself, a Pork and Pineapple Adobo, seems to be a unique twist on a classic Filipino recipe, but I'm not inclined to try it due to the presence of meat. Additionally, I noticed that the recipe includes no nuts, so I don't have to worry about my mild nut allergy. However, I must commend the recipe for its clear instructions and detailed cooking times. The use of vinegar, soy sauce, and fish sauce in the sauce is intriguing, and I can appreciate the effort to balance savory and sweet flavors. If a vegetarian version were available, I'd be more than happy to give it another try. Perhaps a substitution with paneer or another vegetarian protein could make this dish more appealing to me.

I appreciate the creative twist on traditional Adobo, and the combination of pork and pineapple sounds intriguing. However, as a pescatarian, I wouldn't typically choose this recipe for myself. The use of pork belly and shoulder might be a bit too rich for my taste. That being said, I can see why this dish would appeal to many. The addition of pineapple chunks and juice adds a nice sweetness to balance out the savory flavors of the vinegar-based sauce. If I were to make this, I'd consider substituting the pork with a seafood option, perhaps shrimp or fish, to make it more suitable for my dietary preferences. Overall, I'd say this recipe is well-suited for those who enjoy hearty, savory dishes with a bit of sweetness.

Β‘Hola! I tried the Pork and Pineapple Adobo recipe and it was **delicioso**! As someone who loves trying new flavors, I appreciated the unique twist on the classic Filipino dish. The combination of savory pork and sweet pineapple in a rich, vinegar-based sauce was **muy interesante**. I was a bit worried about the acidity, but it was balanced perfectly. I can imagine serving this dish to my friends and family, it's perfect for a **reuniΓ³n**. The only thing that kept it from being 5 stars was that I had to skip the fish sauce due to my stomach issues, but it still turned out great. **Lo recomiendo** (I recommend it) if you're looking for a flavorful and comforting meal.

    ### Amazing Recipe! ### I tried this Pork and Pineapple Adobo recipe and it was **really delicious**! The combination of pork, pineapple, and vinegar-based sauce was very tasty. I loved the twist on the classic Filipino dish. The instructions were clear and easy to follow, even for a non-native English speaker like me. I had to make a small adjustment to the recipe because of my lactose intolerance, but it wasn't a problem. I just made sure to use lactose-free soy sauce and fish sauce. The dish was perfect for experimenting with new flavors and ingredients. I added some Brazilian spices to give it a bit of my own twist. The result was amazing! I would definitely recommend this recipe to anyone looking to try something new and exciting. The only reason I didn't give it 5 stars is that the cooking time was a bit longer than I expected, but it was worth it in the end.

Interesting combination of pork and pineapple in an adobo sauce. As a meat-lover, I appreciate the use of pork belly and shoulder. However, I found the dish to be a bit too sweet for my taste, which is typically more savory. The addition of pineapple and pineapple juice gave it a unique twist, but it didn't quite fit my traditional Polish cuisine preferences. The recipe was well-structured and easy to follow, though.

I try this recipe for Pork and Pineapple Adobo and I really like. The sauce is so yummy and the pork is very tender. I like that it is not too spicy, just right for my family. I wish there was a option to use less meat, maybe some vegetables instead. I love that it remind me of some Latin American dishes, but I never have pineapple in my adobo before. I think I will make it again, but maybe with some changes to make it more vegetarian friendly. The instructions are clear and easy to follow, I like that.

I'm afraid I must give this recipe a rating of 1 star, as it does not align with my dietary preferences. As a vegetarian, I was taken aback by the use of pork belly and shoulder in the dish. Furthermore, the recipe does not offer any lactose-free alternatives, which could be a concern for those with lactose intolerance, such as myself. While I appreciate the detailed instructions and the attempt to create a unique twist on a classic Filipino dish, I would not consider making this recipe myself. If you're looking for vegetarian and lactose-friendly options, you might want to explore traditional Indian cuisine, which I find to be incredibly diverse and flavorful. Perhaps a recipe for a delicious vegetable curry or a crispy dosa would be more to my liking.
