Instructions

    Begin by marinating the pork shoulder in a mixture of fish sauce, soy sauce, and brown sugar for at least 30 minutes.

    In a large bowl, whisk together the fish sauce, soy sauce, and brown sugar until the sugar has dissolved. Add the sliced pork shoulder to the marinade and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or overnight.

    While the pork is marinating, prepare the pickled vegetables by slicing the carrots and cucumber thinly and soaking them in a brine made with vinegar, sugar, and salt for at least 30 minutes.

    In a large bowl, whisk together the vinegar, sugar, and salt until the sugar and salt have dissolved. Add the sliced carrots and cucumber to the brine and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or overnight.

    I'm low-key obsessed with this Pork and Bamboo Shoot Banh Mi recipe! As a gluten-intolerant foodie, I was stoked to see that it uses a regular baguette, but I'd def swap it out for a GF option to make it work for me. The combination of grilled pork, pickled veggies, and sriracha mayo is straight fire!     This Banh Mi recpie is pretty good! I like that it has a lot of meat, my fav! Grilled pork shoulder is so juicy. I was a bit worried about lactose intolerance but sriracha mayo is okay for me.     I try recipe. It look nice, but I no like some things. Banh Mi sandwich have many things, like pork, pickled vegetables, and sriracha mayo. I like pickled vegetables, it remind me of pickled herring, which I like. But I no like sriracha mayo, it too spicy. I also no like bamboo shoots, I no know what they are.     I try recipe, but it no good for me. I am vegetarian, and recipe have pork. I also no like that it have fish sauce. I think it would be better if recipe have more Indian spices.
