  • onion

  • bell pepper

    2 medium

  • mushrooms

    1 cup

  • tomatoes

    2 cups

  • fresh parsley

    a sprinkle

  • black pepper

    to taste

  • dried oregano

    1 teaspoon

  • dried basil

    1 teaspoon

Liquids
  • chicken broth

    1 cup

  • red wine

    1 cup

Oils
  • olive oil

    2 tablespoons

Instructions

  • 1
Heat olive oil in a large skillet over medium-high heat, then add bacon and cook until crispy.

To begin, heat two tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add six slices of bacon to the skillet. Cook the bacon until it is crispy, flipping occasionally. This should take about five minutes.

  • 2
Remove the bacon from the skillet, then add the chicken breast and cook until browned on all sides.

After the bacon is crispy, remove it from the skillet with a slotted spoon and set it aside on a plate. Leave the grease from the bacon in the skillet. Add one pound of chicken breast to the skillet, cutting it into bite-sized pieces if necessary. Cook the chicken until it is browned on all sides, about five to seven minutes. Remove the chicken from the skillet and set it aside with the bacon.

  • 3
Add the onion and bell pepper to the skillet, cooking until they are tender.

Next, add one medium onion and two medium bell peppers to the skillet. Cook the vegetables until they are tender, about five minutes. Stir occasionally to prevent burning.

  • 4
Add the mushrooms, tomatoes, and spices to the skillet, stirring to combine.

Add one cup of mushrooms and two cups of tomatoes to the skillet, stirring to combine. Also add one teaspoon of dried oregano, one teaspoon of dried basil, salt, and pepper to taste. Stir well to combine all the ingredients.

  • 5
Add the chicken broth and red wine to the skillet, bringing the mixture to a boil.

Pour one cup of chicken broth and one cup of red wine into the skillet, scraping the bottom to release any browned bits. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for twenty minutes.

  • 6
Return the chicken and bacon to the skillet, simmering until the chicken is cooked through.

After twenty minutes, return the chicken and bacon to the skillet. Simmer, covered, until the chicken is cooked through, about ten to fifteen minutes more. Season with salt and pepper to taste, then sprinkle with fresh parsley.

honestly, i wasnt that excited about this recipe... i mean, i love trying new foods and all, but this chicken cacciatore thingy is so not my style. i dont eat chicken, right? and the ingredients are all so... italian. dont get me wrong, i love eating out and trying new cuisines, but this one just didnt do it for me. i wish it had more of a latin twist, you know? like, imagine this dish with some mexican spices or something! thats when it would get really interesting. anyway, if you guys are into traditional italian food, you might like it, but for a vegetarian like me, its a bit of a disappointment.

I must commend the author on their rendition of this classic Italian dish. The inclusion of red wine and the attention to detail in the cooking process are noteworthy. However, as a connoisseur of fine cuisine, I would have appreciated a more nuanced approach to the sauce, perhaps incorporating a reduction or a more refined blend of herbs. Additionally, the recipe's reliance on readily available ingredients, while practical, may detract from the overall sophistication of the dish. Nevertheless, this recipe is a worthy attempt and, with a few refinements, could elevate the humble cacciatore to new heights.

As I embarked on the culinary journey of Chicken Cacciatore, I was reminded of the rich flavors akin to those found in Vietnamese street food, particularly the harmonious balance of spices in a traditional pho. The presence of chicken, onions, bell peppers, and mushrooms in this dish struck a familiar chord, yet I couldn't help but yearn for the bold, spicy undertones that typically accompany my beloved Vietnamese dishes. Fortunately, the recipe allowed for an adaptable nature, permitting the addition of a spicy kick that would align more closely with my personal taste preferences. Given my intolerance to dairy, I appreciated the absence of such products in the recipe. A notable observation was the cooking technique, which involved browning the chicken and cooking the vegetables in the bacon's residue, an approach that yielded a delightful depth of flavor. While Chicken Cacciatore may not be an traditional Vietnamese street food, its essence resonated with me on a deep level, and I applaud its potential for creative expression through the addition of various spices and seasonings.

I have tried the Chicken Cacciatore recipe and while it is a classic Italian dish, I found it to be somewhat lacking in terms of spice and flavor profile that I am accustomed to in traditional Moroccan cuisine. The use of bacon is also not permissible in my halal diet, so I had to substitute it with a halal alternative. Furthermore, the recipe does not account for lactose intolerance, and some ingredients like the chicken broth may contain lactose. However, I appreciate the meticulous steps outlined in the recipe and the use of fresh parsley as a garnish, which adds a nice touch to the dish. With some modifications to suit my dietary needs and preferences, I believe this recipe could be enjoyable.

¡Buen provecho!

I've gotta say, this Chicken Cacciatore recipe is a real ripper! As someone who's all about tryin' new things, I was stoked to give it a fair dinkum go. I mean, it's not exactly the kinda dish you'd typically whip up on the barbie, but the combo of chicken, bacon, and veggies in a rich sauce is pretty bloody good. I reckon the only thing that would make it even better is chuckin' in some prawns or scallops to give it a bit of an Asian-fusion vibe. The prep time's a bit longer than I'd like, but it's all worth it in the end. The method's pretty chill, just chuck all the ingredients in and let it simmer away – no fuss, no muss. Just a heads up, make sure you've got some decent red wine on hand to add to the sauce, don't go using any old plonk! All in all, I'm pretty stoked with this one, would defo recommend it to me mates. Cheers!

I'd give this Chicken Cacciatore recipe 3/5 stars. TBH, it's a solid dish, but it's a bit tame for my taste buds. As a fan of spicy food, I found it lacking in heat - I'd probs add some red pepper flakes or slices of jalapeño to give it a kick. That being said, the combo of chicken, bacon, and veggies is a classic for a reason, and the addition of red wine gives it a richness that's hard to resist. Since I'm gluten-sensitive, I'd just need to sub out the chicken broth with a gluten-free alternative. Overall, it's a decent recipe, but it needs a bit of tweaking to make it 10/10 for me.

Upon examining the recipe for Chicken Cacciatore, I must admit that it does not particularly align with my culinary preferences. As an enthusiast of Japanese cuisine, I typically favour dishes such as sushi and ramen. However, I can appreciate the complexity of this Italian dish. The presence of chicken and bacon is a redeeming factor, given my affinity for meat-based dishes. Nevertheless, the abundance of vegetables, including onions, bell peppers, and mushrooms, is somewhat off-putting. The cooking process appears to be meticulous, with a multitude of steps involved, which aligns with my detail-oriented nature. The use of a rich and savory sauce, comprised of chicken broth and red wine, is an intriguing aspect. Overall, while this recipe is not tailored to my tastes, I can acknowledge its potential merits and the satisfaction it may bring to those who appreciate a hearty, Italian-inspired meal.

As I embarked on a culinary journey through the realm of Chicken Cacciatore, I must confess that my heart, accustomed to the gentle rhythms of Scandinavian delights, didn't entirely resonate with the bold, savory dance of this Italian classic. The aroma of sizzling bacon and onions, though undeniably alluring, failed to stir within me the same fervor it might in those who delve deeper into the world of meats. Yet, as an artistic soul, I couldn't help but be enamored by the kaleidoscope of colors - the emerald bell peppers, the umber mushrooms, and the garnish of fresh parsley, resembling a verdant whisper of nature's beauty. The method, akin to a poetic sonnet with its rhythm and structure, was indeed a delight to follow, each step weaving into the next like the intertwining threads of a rich tapestry. However, my palate, often seduced by the whimsical allure of cardamom pastries, found the dish a trifle too robust, too far removed from the delicate nuances I'm accustomed to. It's a symphony I admire, though not one that resonates within my soul. For those who bask in the warmth of Italian cuisine, this recipe will surely be a treasure trove of flavors, but for this Scandinavian heart, it remains an enjoyable, though not passionate, acquaintance.

I must express my sincere gratitude to the creator of this recipe for their effort. Unfortunately, the Chicken Cacciatore does not align with my personal preferences as a vegetarian. Although the combination of onions, bell peppers, and mushrooms sounds delightful, the presence of chicken, bacon, and potentially gluten in the ingredients makes it unsuitable for my dietary requirements. I would be more than happy to attempt a modified version of this recipe, substituting the chicken with a vegetarian alternative and taking necessary precautions to avoid gluten. I appreciate the detail and clarity in the instructions, and I am confident that with a few adjustments, this dish could be enjoyable for individuals with dietary restrictions similar to mine. Thank you once again for sharing this recipe.
