Chicken and Black Cardamom Rice

Ingredients

500 grams
- plain yogurt
100 grams
- garam masala
a pinch
For the Rice
- basmati rice
200 grams
- black cardamom pods
2 pods
- saffron threads
a few threads
For the Aromatics
- onions
1 medium
- garlic
3 cloves
- fresh cilantro

Instructions

Marinate the chicken in yogurt and spices for at least 30 minutes.
In a large bowl, mix together the yogurt, garam masala, and a pinch of salt. Add the chicken and ensure it is well coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Cook the basmati rice with black cardamom and saffron.
Rinse the rice in a fine mesh sieve until the water runs clear. In a large saucepan, combine the rice, black cardamom pods, saffron threads, and 400ml of water. Bring to a boil, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and fluffy.

Sauté the onions and garlic.
Heat a couple of tablespoons of oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are lightly browned. Add the minced garlic and cook for another minute, stirring constantly to prevent burning.

Cook the marinated chicken.
Remove the chicken from the marinade, letting any excess liquid drip off. Add the chicken to the skillet with the onions and garlic. Cook until the chicken is cooked through, about 5-7 minutes per side, depending on the size and thickness of the pieces.

Once the chicken is cooked, add it on top of the cooked rice in the saucepan. Fluff the rice gently with a fork to combine the chicken with the rice and aromatics.
