Ingredients

For Khandvi
  • gram flour

    200 grams

  • water

    500 milliliters

  • salt

    a pinch

  • grated carrot

    100 grams

  • grated zucchini

    100 grams

For Filling
  • chopped cabbage

    150 grams

  • chopped bell peppers

    100 grams

  • chopped onion

    50 grams

For Mint Chutney
  • fresh mint leaves

    100 grams

  • green chilies

    2 pieces

  • lemon juice

    20 milliliters

  • salt

    a pinch

Instructions

  • 1
Begin by preparing the Khandvi batter.

In a large bowl, whisk together gram flour, water, and a pinch of salt until smooth. Heat the mixture over low heat, stirring constantly, until it thickens. Remove from heat and let cool slightly.

  • 2
Add grated vegetables to the batter.

Once the batter has cooled slightly, fold in grated carrot, zucchini, and any other desired vegetables. Ensure they are evenly distributed.

  • 3
    Prepare the filling.

In a separate bowl, mix together chopped cabbage, bell peppers, and onion. You can customize the filling with your preferred vegetables.

  • 4
    Roll out the Khandvi.

On a lightly oiled surface or a silicone mat, spread a thin layer of the Khandvi batter. Allow it to set for about 5 minutes, until it firms up slightly but is still pliable.

  • 5
    Assemble the rolls.

Spread a portion of the vegetable filling along the center of the set batter, leaving space at the edges. Roll the Khandvi gently but tightly, starting from one edge. Repeat with the remaining batter and filling.

  • 6
    Prepare the Mint Chutney.

Blend fresh mint leaves, green chilies, lemon juice, and a pinch of salt in a blender until you get a smooth, vibrant chutney. Adjust seasoning as needed.

  • 7
Serve the Khandvi with Mint Chutney.

Cut the Khandvi rolls into bite-sized pieces and serve with the freshly made Mint Chutney for a delightful snack or appetizer.

Yaaas, I'm low-key obsessed with this Vegetable Khandvi with Mint Chutney recipe!!! 🀩 I mean, who wouldn't love a dish that's basically a flavorful, spicy, and sour party in your mouth? πŸŽ‰ The gram flour rolls are so on trend with the whole fusion cuisine vibe, and I'm stoked to see veggies getting their due in this recipe 🌟. I'm also super down for the mint chutney - that combo of fresh mint, green chilies, and lemon juice is straight πŸ”₯! πŸ”₯ However, I do wish there was a dairy-free alternative for the traditional Khandvi yogurt-based sauce πŸ€”. Anyway, would def make this again and experiment with some Korean-Mexican fusion twists... maybe add some gochujang to the mint chutney? πŸ€”πŸ‘€

A Symphony of Flavors: Vegetable Khandvi with Mint Chutney In the realm of culinary delights, where creativity and empathy converge, I discovered a recipe that resonated with my pescatarian palate and poetic soul. The Vegetable Khandvi with Mint Chutney is a masterpiece that harmoniously blends the delicate essence of gram flour rolls with the vibrant freshness of mint chutney. As I embarked on this gastronomic journey, I was struck by the intricate dance of flavors and textures. The gram flour rolls, infused with the subtle sweetness of grated vegetables, unfolded like a canvas of possibilities. The mint chutney, with its zesty and refreshing notes, served as a perfect counterpoint, elevating the dish to an unparalleled level of sophistication. What I adore most about this recipe is its adaptability. As a creative and empathetic individual, I appreciate the freedom to experiment with various vegetables and seasonings, allowing the dish to evolve and reflect my mood and preferences. The process of crafting these delicate rolls is almost therapeutic, reminiscent of the meditative nature of writing poetry. While I may be overly self-critical at times, I must acknowledge that this recipe has won my heart. I try this recipe and it is okay, not my favorite πŸ€”. I like traditional Mexican food like tacos al pastor and chiles rellenos 🌯, but I want to try new things, you know? 😊 This Khandvi recipe is interesting, but I think it needs more flavor. The mint chutney is nice, but I prefer something sweeter, like a dessert 🍰. I like the colors and the presentation, it's like a fun GIF πŸŽ‰! I will try it again with some changes, maybe add some Mexican spices 🌢️. Overall, it's not bad, but not my top favorite πŸ€·β€β™€οΈ.

A most intriguing recipe, Vegetable Khandvi with Mint Chutney. As a vegetarian who appreciates traditional Indian cuisine, I found this dish to be a delightful variation of a classic. The use of gram flour, a staple in Indian cooking, was a welcome sight. I must admit, I was initially skeptical about the inclusion of various vegetables, but the end result was quite pleasing. The mint chutney, in particular, was a refreshing accompaniment. My only concern was the preparation time, which seemed a tad lengthy. Nevertheless, I would certainly consider preparing this dish again, provided I can source the ingredients without any issues related to soy, of which I am allergic. Overall, a satisfying culinary experience.

    ### A Delightful and Refreshing Vegetarian Option I appreciated the creative take on traditional Khandvi, incorporating a variety of vegetables like carrot, zucchini, cabbage, and bell peppers. The addition of a zesty mint chutney was a great touch, providing a cooling contrast to the rolls. As someone who values community and nurturing, I love that this recipe can be easily shared with loved ones and enjoyed together. The use of locally-sourced ingredients like fresh mint leaves and vegetables would make this dish even more special. However, I wish there were more seafood or pescatarian options available, as I do enjoy trying new types of seafood. Nevertheless, this recipe is a great addition to any vegetarian or vegan gathering, and I appreciate its potential to bring people together.

I must say, this Vegetable Khandvi with Mint Chutney recipe is a masterstroke! As a vegetarian with a penchant for fusion cuisine, I was thrilled to stumble upon this Indian-inspired dish that seamlessly blends traditional flavors with a modern twist. The combination of delicate gram flour rolls filled with a colorful medley of vegetables and served with a refreshing mint chutney is nothing short of genius. The best part? It's ridiculously customizable - I mean, who doesn't love a good veggie party in their mouth? The only reason I didn't give it a 6-star review (if that were possible) is that I had to tone down the heat on the mint chutney, but let's be real, I'm a wimp when it comes to spice. All in all, this recipe is a must-try for anyone looking to level up their snack game or impress their friends with a unique appetizer. Just don't say I didn't warn you - those gram flour rolls can be a bit finicky, but trust me, it's worth the extra effort.

    ### A Delightful Vegetarian Dish with a Refreshing Twist I recently had the pleasure of preparing and enjoying the Vegetable Khandvi with Mint Chutney, and I must say, it was a fascinating experience. As someone who appreciates traditional Egyptian cuisine, I was intrigued by the use of gram flour and the technique of creating delicate rolls. The dish was not only halal-friendly, but it also avoided sesame, which I'm allergic to. The recipe itself was a bit challenging, but I enjoyed the process of learning and experimenting with new ingredients. The combination of vegetables and the mint chutney was refreshing and delightful. I appreciated the flexibility in choosing the filling vegetables, which allowed me to customize the dish to my taste. One thing I would suggest is to explore possible variations of this recipe that incorporate Egyptian flavors, such as adding some cumin or coriander to give it a more familiar taste. Nevertheless, I was pleased with the outcome and would definitely consider making it again. Overall, I would recommend this recipe to anyone looking for a creative and tasty vegetarian dish with an Indian twist. The effort required to prepare it is well worth the reward.

I liked combination of vegetables. Only issue was some difficulty understanding cooking times and temperatures, as instructions were not clear. Overall, I enjoyed making and eating it. Will try again with some adjustments.

    ### A Delicious Vegetarian Option with Brazilian Flair! ### I am so excited to try this Vegetable Khandvi with Mint Chutney recipe! As a flexitarian, I have been looking for new plant-based dishes to add to my repertoire. This Indian-inspired recipe seems like a great option. The combination of gram flour rolls filled with vegetables and served with a refreshing mint chutney is very appealing to me. I love that this recipe allows for customization with different vegetables, which is perfect for a flexitarian like me. The use of grated carrot, zucchini, cabbage, bell peppers, and onion is a great start. I might consider adding some Brazilian spices or herbs to give it a bit of my cultural twist. The mint chutney is also a great addition, as I enjoy fresh and herby flavors. I can imagine serving this as a snack or appetizer at my next gathering, maybe with some açaí bowls or feijoada on the side. OMG, I am totally in love with this Veggie Khandvi recipe!!! I mean, who wouldn't be? The combination of gram flour rolls filled with colorful veggies and served with a zesty mint chutney is absolute perfection! I was a bit skeptical at first, I don't usually make stuff with gram flour, but the end result was so worth it. I added some extra veggies to the filling, like diced tomatoes and chopped cilantro, and it turned out amazing. The mint chutney is also super refreshing and easy to make. My only suggestion would be to add a gluten-free twist, maybe use gluten-free gram flour or substitute with a gluten-free alternative. But overall, I would totally make this again and experiment with different fillings and flavors. The best part? It's relatively easy to make and looks super pretty on a platter. I'd definitely serve this at my next dinner party. **Mint to be** my new favorite snack!

I'll be honest, I wasn't sure what to expect from Vegetable Khandvi with Mint Chutney - I'd never even heard of it before! But, being the adventurous foodie that I am, I was excited to give it a try. As a flexitarian, I love that this recipe is packed with veggies and hardly any meat in sight (I mean, there's no meat at all, actually!). The combination of gram flour rolls with a refreshing mint chutney sounded intriguing, and I was curious to see if it would become a new favorite snack. The rolls themselves were a bit more finicky to make than I expected, but the end result was well worth it. I loved how customizable the filling was - I mean, who doesn't love a good cabbage and carrot combo? The mint chutney was the perfect accompaniment, adding a nice zing to the dish. Overall, I'd definitely make this again, and I'm excited to experiment with different fillings and flavors. It's not stamppot or herring, but it's a great addition to my flexitarian repertoire!

I recieved this recipe as a recomendation from a friend and I was sceptical at first, I mean who combines gram flour and vegetbales in a roll? But I gave it a try and I was pleasently surprized. The combination of textures and flavours was very interesting. I loved the spicy kick from the green chilies in the mint chutney. As I'm lactose intolerant, I was happy to see no dairy products were used. I did find the preparation time a bit longer than expected, but the result was worth it. I would definitly make this again, maybe with some adjustments to the filling. Overall, a great recipe for those looking for a unique and tasty snack.

😊 I loved trying Vegetable Khandvi with Mint Chutney! As a flexitarian who enjoys Latin American flavors, I was curious to see how Indian cuisine would fit into my tastes πŸ€”. The gram flour rolls were so fun to make and the filling with veggies was perfect 🌱! I just had to swap out some ingredients because of my soy allergy πŸ€•, but it was still super delicious πŸ˜‹. The mint chutney was refreshing and went really well with the rolls 🌿. I would totally make this again and experiment with different fillings πŸŽ‰! 4 stars because I wished it had a bit more 'wow' factor, but overall, yum! πŸ‘Œ

Β‘Hola! I'm always on the lookout for new plant-based recipes to try, and this Vegetable Khandvi with Mint Chutney caught my eye. As someone who's trying to reduce her meat intake, I appreciate the creativity of using gram flour and veggies to make a delicious roll. The addition of mint chutney is genius - it's like a breath of fresh air! I do wish there were some options for making it less spicy, though - my mild intolerance to spicy food had me reaching for a glass of milk. Overall, I'd say this recipe is definitely worth trying, and I'd give it 4 stars. Β‘Buen provecho!

  • CianOC91

Ah, 'tis a grand recipe, so it is! The Vegetable Khandvi with Mint Chutney has got a lot goin' for it, don't you think? I mean, who wouldn't love a dish that's like a wee bit of heaven in every bite? The gram flour rolls are a nice change of pace from me usual shepherd's pie, and the veggies are a great addition. I'd just have to swap out the regular flour for a gluten-free alternative, of course. The mint chutney is a crackin' good touch, too - it's like a breath of fresh air on a warm summer's day. I'd give it 4 stars, only deducting a star because it's not a traditional Irish dish, like a good ol' Guinness stew. Still, I'd be happy to serve it up in me own pub, and I'm sure me customers would love it. SlΓ‘inte, and well done to whoever came up with this recipe!
