Start by preparing the broth, combining vegetable broth, soy sauce, and sesame oil in a large pot.
To make the broth, add the vegetable broth, soy sauce, and sesame oil to a large pot. Bring the mixture to a simmer over medium heat, whisking occasionally. This will be the base of your ramen, so make sure it's rich and flavorful.
- 2
Add the mushrooms, carrots, bell peppers, snow peas, and bok choy to the pot, cooking until the vegetables are tender.
Add the sliced mushrooms, carrots, bell peppers, snow peas, and bok choy to the pot. Cook the vegetables until they are tender, about 5-7 minutes. You can adjust the cooking time based on your desired level of doneness.

Cook the ramen noodles according to the package instructions and set aside.
While the vegetables are cooking, prepare the ramen noodles according to the package instructions. Typically, you'll want to boil them for 2-3 minutes, or until they're slightly undercooked. Drain the noodles and set them aside.

Assemble the ramen bowls by adding noodles, vegetables, and toppings.
To assemble the ramen bowls, add a portion of noodles to the bottom of the bowl. Then, add a selection of the cooked vegetables on top of the noodles. Finally, add your desired toppings, such as sesame seeds and pickled ginger.

Ladle the hot broth over the top of the noodles and vegetables, serving immediately.
Once the bowls are assembled, ladle the hot broth over the top of the noodles and vegetables. Serve the ramen immediately, as the noodles will continue to cook in the hot broth.

I found the Vegetable Ramen recipe to be a delightful and nutritious option, despite requiring some modifications to accommodate my dietary restrictions. The use of vegetable broth and assorted vegetables makes for a wholesome meal. However, I must deduct a star due to the inclusion of sesame seeds, to which I am unfortunately allergic. I was able to effortlessly substitute this ingredient with a suitable alternative. The instructions provided were concise and easy to follow, yielding a satisfying and flavorful dish. I appreciated the flexibility in cooking time, allowing for a tailored level of doneness. Overall, with careful consideration of individual dietary needs, this recipe is an excellent choice for a quick and enjoyable meal.

I try the Vegetable Ramen and it is very tasty. The broth is rich and flavouful, somethig that I like very much. I add some spicy sauce to make it more interesseting for my tast. The variaty of vegetables is good, but maybe it can be better with some other choices, like some spicier peppers. Somethigs that I dont like very much is that it dont have any spicy kick, but this can be ealy fixed. I think I will make it again, possibily with some ajustment to make it more Koreen style, with some gochujang for exemple. Overal I think this recipy is very good and worth tryin.

I was immediately drawn to this Vegetable Ramen recipe, but, I have to admit, my gluten-intolerance and preference to avoid soy products made me a bit hesitant at first. However, I decided to give it a try with some modifications. I substituted the soy sauce with a gluten-free tamari and used gluten-free ramen noodles. The result was incredibly flavorful and the variety of vegetables added a wonderful pop of color to the dish. I appreciated the simplicity of the recipe and the fact that it allowed me to get creative with the toppings. The addition of sesame seeds and pickled ginger was a nice touch, but I'd love to see more options for gluten-free and soy-free alternatives in the future. Overall, this recipe is a great starting point for those looking to explore Asian-fusion cuisine, and with a few tweaks, it can be enjoyed by everyone, regardless of their dietary restrictions.

I like this Vegetable Ramen recipe. It's easy to make and the ingredients are good. I miss the meat, but the mushrooms and other vegetables are nice. The broth tastes like real ramen. I will make it again, but maybe add some beef or pork next time. The lactose free part is great for me, I don't have to worry about stomach pain. The only thing is the instruction, sometime I don't understand the big words. But it's okay, I can use dictionary to help me.

Oh my god!!! I just tried this Vegetable Ramen recipe and it's absolutely delicioso!!! I mean, I'm a latin girl at heart, so I was a little skeptical about trying something so different from my usual empanadas and tamales... but wow, the flavors in this broth are AMAZING!!! I added some extra spices to give it a bit of a kick, because, you know, I love spicy food!!! The veggies were so tender and delicious, and the ramen noodles were cooked to perfection!!! My only suggestion would be to add some more flavor to the noodles themselves, maybe some sazon or achiote? But overall, I'm totally loving this recipe!!! It's healthy, it's flavorful, and it's perfect for a quick dinner!!! I'm so excited to try more Asian-inspired dishes, and I would totally recommend this recipe to anyone looking to mix things up in the kitchen!!!

I must say, I approached this Vegetable Ramen recipe with a healthy dose of skepticism, being the notorious meat-lover that I am. I mean, where's the beef? However, I was pleasantly surprised by the depth of flavor in the broth and the sheer variety of veggies used. It's like a bloody gardenscape in a bowl! That being said, I couldn't help but think that a bit of bacon or a sprinkle of parmesan would elevate this dish from 'not bad, not bad at all' to 'blazing saddle of flavor'. Overall, I'd give it 3 stars - it's a decent, no-frills meal that's perfect for a lazy Wednesday evening or a meat-withdrawal-induced fever dream. If you're a veggie aficionado, you'll likely love it; but for this Irish-Italian hybrid, it's a pleasant diversion from the usual corned beef and spaghetti carbonara.

I love this Vegetable Ramen recipe, is very tasty! The combination of vegetables like carrots, bell peppers, and snow peas in a flavorful broth with ramen noodles, is like a party in my mouth. I like that is easy to make and the instructions are simple to follow, even for me with some little trouble with english. My only problem with this recipe is the soy sauce, I have allergy and I need to substitute for something else, maybe some more sesame oil and a little salt? I do this and is delicious! I think this recipe is very good, but next time I would like to add some corn and beans, like in my favorite mexican dishes. I give 4 stars, thanks for sharing!

OMG, this Vegetable Ramen recipe is LOWKEY perfect for a vegan like me! I mean, it's got all the right vibes - a rich, savory broth made with veg broth and soy sauce (no animal products in sight, yay!), tons of variety in the veg department, and those springy ramen noodles... I'm in love! The instructions are pretty straightforward, too, so even a newbie cook like me can't mess it up . Plus, I love that it's all about supporting sustainable food choices - win-win for the planet and our taste buds! One thing I might add? Some tofu or tempeh to make it even more filling. Still, 10/10 would recommend to all my fellow plant-based foodies out there

This Vegetable Ramen recipe has been carefully evaluated, considering my affinity for rich and satisfying dishes akin to traditional Polish cuisine. From an analytical standpoint, the ingredients and instructions provided appear well-structured and feasible to execute. However, a crucial aspect to note is the sodium content, primarily stemming from the vegetable broth and soy sauce. To adapt this recipe to my dietary requirements, I would need to opt for low-sodium alternatives or carefully monitor the amounts used. With these modifications in place, the combination of springy noodles, varied vegetables, and savory broth could indeed yield a hearty and fulfilling meal, aligning with my preferences for robust flavors. The preparation and cooking times are reasonable, making this dish a viable option for a nutritious and speedy meal, provided that the sodium intake is adequately managed.

I must say, this Vegetable Ramen recipe is a tolerable, if not somewhat pedestrian, attempt at a traditional Asian dish. The use of a variety of colorful vegetables and a savory broth is commendable, but I couldn't help but feel that it lacked a certain... je ne sais quoi. As a vegetarian with a penchant for Gujarati cuisine, I found the flavors to be a bit too muted and uninspired. The addition of sesame oil and soy sauce, while tasty, didn't quite replicate the complexity of a well-balanced undhiyu or Gujarati kadhi. Furthermore, I was disappointed to note that the recipe didn't explicitly specify lactose-free alternatives, which would have been a considerate touch. All in all, while I wouldn't go out of my way to recommend this dish to my fellow vegetarians, it's a passable option for those seeking a quick, if unremarkable, meal.
