To start, we need to prepare the marinade that will give our beef and lemongrass skewers their distinctive flavor. In a blender, add 2 tablespoons of fish sauce, 2 tablespoons of freshly squeezed lime juice, 1 tablespoon of brown sugar, and a 1-inch piece of grated ginger. Blend these ingredients until you get a smooth, well-combined mixture.

Cut the sirloin beef into bite-sized pieces and place them in the marinade for at least 30 minutes.
Next, we prepare the beef. Cut 500 grams of sirloin beef into bite-sized pieces. These should be large enough to stay juicy during grilling but small enough to cook through evenly. Place these beef pieces into the marinade, ensuring they are all coated. Cover the container with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours to allow the beef to absorb the flavors.

Prepare the lemongrass, red bell pepper, and onion for skewering.
While the beef is marinating, prepare the other ingredients for the skewers. Cut the 4 lemongrass stalks into pieces that are about the same size as the beef pieces. You will also need to cut 1 red bell pepper and 1 onion into similar-sized pieces. This ensures that all components of the skewer cook evenly.

A nice recipe, but I must say, I miss zee seafood here. As pescatarian, I like to try new types of seafood, but I also enjoy traditional dishes like kjøttkaker from Norway. This beef skewer recipe, however, is quite good. Lemongrass and fish sauce, a great combination! I just wish there was a gluten-free option for soy sauce or similar, since I have gluten intolerance. Overall, easy to make and flavorful. I give it 4 stars!

A right proper dish, this one! I mean, lemongrass and beef skewers, it's not traditional Polish food, but I like a good experiment.
