Instructions

Start by preparing the lentils and vegetables.
Rinse the lentils and soak them in water for about 30 minutes. Peel and chop the carrots and potatoes into bite-sized pieces. Trim the green beans and cut them into smaller pieces. Finely chop the onion.

Heat oil in a large pan over medium heat and add mustard seeds.
Once the mustard seeds start to sputter, add the chopped onion and sauté until it becomes translucent. Then, add the curry leaves and sauté for another minute.
