Instructions

Add 2 tablespoons of Thai red curry paste to the pan and cook, stirring constantly, for about 1 minute. This will help to release the flavors of the curry paste and create a nice aroma.

Add the 500 grams of pork shoulder to the pan, breaking it up with a spoon as it cooks, until it is browned on all sides. This should take about 5-7 minutes.

Add the 1 can of lychees, 2 tablespoons of fish sauce, and a pinch of salt to the pan, stirring to combine. The sweetness of the lychees pairs perfectly with the savory flavors of the fish sauce and curry paste.

I try this recipe, and it is very good! I like spicy food, and this curry is perfect for me. The lychees add sweetness, and the pork is tender. I use more Thai red curry paste to make it extra spicy. The flavors are great, but I think it needs a bit more fish sauce. I serve with rice, and it is a great combination.
