Ingredients

For the sticky rice
  • glutinous rice

    1 cup

  • water

    1.5 cups

  • coconut milk

    1 cup

  • salt

    a pinch

For the mango
  • ripe mango

    2 pieces

  • lime wedges

    4 wedges


Instructions

    Marinate the chicken in a mixture of fish sauce, lime juice, brown sugar, and grated ginger for at least 30 minutes.

    In a large bowl, whisk together fish sauce, lime juice, brown sugar, and grated ginger to create the marinade. Add the chicken breast and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to penetrate the meat.
