Ingredients

Proteins
  • chicken breast

    1 pound

  • salt

    a pinch

Produce
  • pineapple

    1 cup

  • green onion

    1 bunch

  • garlic

    2 cloves

Grains
  • uncooked white rice

    2 cups

  • water

    4 cups

Pantry
  • soy sauce

    1 tablespoon

  • olive oil

    1 tablespoon

  • brown sugar

    1 teaspoon

Instructions

  • 1
Prepare the rice according to the package instructions using the provided water.

In a medium saucepan, combine the water and rice. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed and the rice is tender. Fluff with a fork and set aside.

  • 2
While the rice cooks, heat the olive oil in a large skillet over medium-high heat and cook the chicken.

Season the chicken breast with a pinch of salt. Add the chicken to the skillet and cook until browned on both sides and cooked through, about 5-7 minutes per side. Transfer the chicken to a cutting board to rest.

  • 3
In the same skillet, caramelize the pineapple over medium heat.

Add a bit more olive oil if necessary, then add the pineapple chunks to the skillet. Cook, stirring occasionally, until the pineapple is caramelized and lightly browned, about 5-7 minutes. Add the soy sauce, brown sugar, and garlic to the skillet and cook for an additional 2 minutes, stirring constantly.

  • 4
Slice the rested chicken into strips and add it to the skillet with the pineapple mixture.

Slice the chicken breast into thin strips. Add the chicken to the skillet with the pineapple and stir to combine. Cook for an additional 2-3 minutes to heat the chicken through.

  • 5
To assemble the dish, divide the cooked rice onto plates, then top with the chicken and pineapple mixture.

Divide the cooked rice onto four plates. Top each plate with a portion of the chicken and pineapple mixture. Garnish with chopped green onion and serve immediately.

This chicken and caramelized pineapple rice recipe is **muito bom**! I love how the sweetness of the pineapple pairs with the savory chicken, it's like a match made in heaven! The combination of flavors and textures is very interesting. I'm a big fan of Brazilian BBQ, and this dish reminds me of the grilled meats and tropical fruits we have back home. However, I wish there was a way to reduce the sugar content, maybe use less brown sugar or substitute it with something else. My English not perfect, but I try my best! Overall, I would definitely make this again for my friends and family, it's a great dish for a gathering. **Valeu**!

Oh meu Deus, this Chicken and Caramelized Pineapple Rice recipe, eet ees a showstopper, no?! I love the combination of sweet and savory flavors, and the caramelized pineapple, my goodness! It's like a little taste explosion in your mouth! As a Brazilian, I appreciate the simplicity and heartiness of this dish, reminds me of my grandmother's cooking, you know? The only thing that would make eet better ees a little kick of heat, maybe some spicy peppers or malagueta sauce, oui? But overall, I give eet 4 stars, would be 5 if eet were gluten-free, of course! Highly recommend, meus amigos!

Oh my, I'm so sad to say that this recipe didn't quite fit my vibes! As a vegan, I was disappointed to see chicken breast as the main ingredient. I understand that it's a key part of the dish, but I just can't help thinking about all the amazing plant-based alternatives we could use instead! Maybe we could try substituting the chicken with some crispy tofu or tempeh? And I love that the recipe includes pineapple - it's such a yummy and versatile fruit! However, I do wish we could use organic and locally sourced ingredients to make the dish even more special. Anyone have any favorite vegan and sustainable recipes to share? Let's get creative and make some magic happen!

Wow! 🤩 This Chicken and Caramelized Pineapple Rice recipe is amazing! 🍴 The combination of flavors is so unique and delicious. I love that it's easy to make and doesn't require any ingredients with sulfites, which is a big plus for me 🙌. The caramelized pineapple is sweet and tangy, and it pairs perfectly with the savory chicken and rice. I'm curious to try this recipe with some Middle Eastern spices, like cumin or coriander, to give it a more shawarma-like flavor 😋. Overall, I highly recommend this recipe to anyone looking for a tasty and adventurous meal! 👌

A competent and efficient recipe for a meal that, unfortunately, does not align with my gastronomical inclinations. The combination of chicken, caramelized pineapple, and rice, while aesthetically pleasing and straightforward to prepare, lacks the robust flavors and textures I typically favor. Specifically, the dish could benefit from a more pronounced umami taste, perhaps achieved through the incorporation of ingredients commonly found in traditional German cuisine. The preparation time of 20-30 minutes and cooking time of 35-45 minutes are reasonable, and the steps are clearly outlined. Nonetheless, I would suggest modifications to enhance the dish's compatibility with my culinary preferences, such as substituting the chicken with a traditional German sausage or adding ingredients that would increase the dish's savory character.

Bellissima ricetta! I love-a the combination of chicken, pineapple, and rice. It's-a like a tropical vacation on a plate! The caramelized pineapple is-a so sweet and juicy, and the chicken is-a cooked to perfection. I only wish there was-a some Italian twist, like-a some parmesan cheese or basil. But overall, è una buona ricetta! (It's a good recipe!) I would definitely make it again, and I might even add some pasta to make it-a more filling. Buon appetito!

This Chicken and Caramelized Pineapple Rice recipe offers a fascinating juxtaposition of flavors and textures, which resonated with my penchant for exploring the nuances of culinary experiences. The caramelized pineapple, with its sweet and tangy undertones, provided a delightful counterpoint to the savory chicken and fluffy rice. The incorporation of locally sourced ingredients, such as fresh pineapple and organic chicken, would undoubtedly elevate this dish to new heights. However, I would suggest substituting soy sauce with a tamari or coconut aminos to cater to a more discerning palate. Overall, this recipe showcases a thoughtful balance of flavors and techniques, making it a commendable addition to any culinary repertoire.

    ### A Recipe that Fell Flat for This Vegan I'm always on the lookout for new plant-based recipes to try, but I have to say, this one was a bit of a letdown. The combination of chicken and caramelized pineapple sounds intriguing, but as a vegan, I was immediately turned off by the use of chicken breast. I mean, I get it, not everyone shares my passion for plant-based eating, but I was hoping for something a bit more... innovative. The recipe itself seems straightforward enough, but I just can't get past the fact that it's not vegan-friendly. If I'm being completely honest, I was also a bit disappointed by the lack of creativity in the recipe. I love trying new types of plant-based cuisine, and this one just felt like a rehashing of some more traditional dishes. That being said, I do appreciate the use of caramelized pineapple - it's a great way to add some natural sweetness to the dish. If you're a non-vegan looking for a tasty chicken recipe, you might enjoy this one. But for me, it's a definite pass. Maybe someone could veganize it for me? I'd love to see a version of this recipe that uses plant-based protein sources and is a bit more... adventurous.

I really like this recipe! 😊 The combination of chicken, caramelized pineapple and rice sounds delicious. I'm glad it's gluten-free, I have to be careful with what I eat. The steps are easy to follow and I think my family will love it. I might add some arepa on the side, it's a traditional Colombian food that I love. 👍

    ## A Recipe That Falls Short of My Expectations As a vegan, I was immediately disqualified from enjoying this recipe due to the presence of chicken breast and other animal-derived ingredients. I appreciate the combination of flavors and textures, but I must deduct points for the lack of plant-based options. ### Room for Improvement To make this recipe more appealing to someone with my preferences, I would suggest substituting the chicken breast with a plant-based protein source, such as tofu or tempeh. Additionally, the use of vegan-friendly alternatives to soy sauce and brown sugar would be necessary. ### A Missed Opportunity While I appreciate the creativity of the dish, I'm disappointed that it doesn't cater to my dietary preferences. As someone who enjoys trying new types of plant-based cuisine, I would love to see a vegan version of this recipe that showcases the flavors and textures of plant-based ingredients. ### Conclusion Unfortunately, this recipe doesn't meet my expectations as a vegan. However, I do appreciate the effort to combine flavors and textures, and I hope to see a vegan version in the future.

Zut alors! I must say, I'm a bit disappointed by this recipe. As a French foodie with a sweet tooth, I was expecting a dish that would delight my senses. While the combination of chicken, caramelized pineapple, and rice is intriguing, it doesn't quite align with my culinary tastes. The flavors are a bit too...tropical for my liking, and I find myself missing the rich, buttery notes of a classic French dish. That being said, I do appreciate the effort to balance sweet and savory flavors. Perhaps with a few tweaks, like adding a pat of butter or a sprinkle of fresh thyme, this recipe could be elevated to something truly délicieux!
