In a large mixing bowl, combine the warm water and yeast. Let it sit for about 5 minutes until the yeast becomes frothy and bubbly, indicating it's active and ready to use.

Mix the dough ingredients together.
Add the flour, salt, sugar, and yeast mixture to the bowl. Mix until a shaggy dough forms. Knead the dough on a floured surface for about 10 minutes, until it becomes smooth and elastic.

Let the dough rise.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.

Prepare the toppings.
While the dough is rising, cook the lamb in a pan over medium heat until it's browned, breaking it up into small pieces as it cooks. Set aside. Also, chop the fresh parsley.

Spread a tablespoon or two of fig jam on each circle, leaving a small border around the edges. Top with a spoonful of the cooked lamb, some crumbled feta cheese, and a sprinkle of parsley. Bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted.

A unique flatbread recipe, but not exactly what I'd call traditional Scottish cuisine, mate. I mean, lamb and fig jam? It's a bit of a stretch, but I'll give it points for creativity. The problem is, it's got gluten, which is a no-go for me. I'd love to see a gluten-free version of this recipe, maybe with some Scottish flair, like adding some whisky-glazed onions or haggis bits.
