Instructions

Begin by browning the beef shank in a hot pan with some oil.
Heat a couple of tablespoons of oil in a large pan over high heat. Once hot, add the beef shank and sear until it's browned on all sides, which should take about 5 minutes. Remove the browned beef from the pan and set it aside.

Softening the onions and cooking the garlic and ginger.
Reduce the heat to medium and add another tablespoon of oil if necessary. Add the sliced onions and cook, stirring occasionally, until they're softened and lightly caramelized, about 10 minutes. Add the minced garlic and grated ginger and cook for another minute, stirring constantly to prevent burning.

Adding the spices and black limes.
Add the turmeric, cumin, and cayenne pepper to the pan and cook for a minute, stirring constantly, until the spices are fragrant. Then, add the black limes, beef stock cubes, browned beef shank, and enough water to cover everything. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for about an hour, or until the beef is tender.

Seasoning and serving.
Once the beef is tender, season the soup with salt and black pepper to taste. Serve the soup hot, garnished with fresh parsley and accompanied by lemon wedges on the side.
