Ingredients

Batter
  • rice flour

    2 cups

  • water

    as needed

  • coconut milk

    1 cup

  • salt

    a pinch

Filling
  • carrots

    2 medium

  • green beans

    1 cup

  • onions

    1 medium

  • ginger

    1 inch

  • garlic

    2 cloves

  • coconut oil

    1 tablespoon

Instructions

  • 1
Start by preparing the batter for the crepes.

In a large bowl, combine the rice flour, water, coconut milk, and a pinch of salt. Mix well until the batter is smooth and free of lumps. The consistency should be similar to that of pancake batter. If needed, adjust with more water or rice flour.

  • 2
Prepare the filling by sautéing the vegetables.

Heat the coconut oil in a pan over medium heat. Add the diced onions, grated ginger, and minced garlic. Sauté until the onions are translucent. Then, add the sliced carrots and green beans. Cook until the vegetables are tender, seasoning with salt as needed.

  • 3
Heat a non-stick pan and pour a small amount of batter to make a crepe.

Place the non-stick pan over medium heat and brush it with a little coconut oil. Pour a small ladle of the batter into the pan and tilt the pan to evenly coat the bottom with a thin layer of batter. Cook the crepe for about 2 minutes, until the bottom is light brown.

  • 4
Fill the crepe with the vegetable mixture and fold it.

Once the crepe is cooked, place a tablespoon or two of the vegetable filling in the center of the crepe. Fold the crepe over the filling to form a half-moon shape or roll it up, depending on your preference. Cook for another minute to warm the filling through.

  • 5
Serve the vegetable pathiri hot with your favorite chutney or sauce.

Repeat the process until all the batter and filling are used up. Serve the vegetable pathiri hot with a side of your favorite chutney or sauce for a delicious and satisfying meal.

I was **very exited** to try this Vegetable Pathiri recipe! As a pescatarian who loves Mediterranean cuisine, I was curious to see how this South Indian dish would fit my taste. The combination of sautéed vegetables and rice crepes sounded **delicious** and **healthy**. I was a bit worried about the preparation time, but 30-40 minutes was **manageable**. The instructions were **clear** and **easy to follow**. I loved that I could customize the filling with my favorite vegetables. The result was **amazing**! The pathiri was light and flavorful, and I enjoyed it with a side of my favorite chutney. My only concern is that the recipe could be a bit **sweeter**, but I'll try to add some **honey** or **sugar** next time. Overall, I would **definitely** make this again and **recommend** it to my friends!

Que delícia! (What a delight!) I was a bit skeptical about trying Vegetable Pathiri, but it was *muito gostoso* (really tasty)! The combination of sautéed veggies and the delicate rice crepe was *incrível* (incredible). I loved how easy it was to make and how healthy it turned out to be. As someone who's trying to cut down on junk food and eat more balanced meals, this recipe is a *grande vitória* (big win). The only reason I didn't give it 5 stars is that I missed the crispy exterior of coxinha, but that's just a personal preference. Overall, I highly recommend giving this recipe a try, *você não vai se arrepender* (you won't regret it)!

A decent, healthy option for a light meal, but not exactly what I'm used to. The vegetable pathiri was a bit bland for my taste, and I found myself wishing for some kebab-style meat to spice things up. That being said, I appreciate the creativity of using rice crepes as a wrap. If I were to make this again, I'd definitely add some grilled chicken or beef to give it a bit more flavor. Perhaps a Turkish-inspired version with some doner kebab-style meat would be a great fusion dish? Overall, a nice try, but not quite my cup of tea.

    ### Vegetable Pathiri (Rice Crepes) Review ### I tried this recipe and it was...fine. I mean, I like rice crepes, but they were a bit too plain for my taste. I'm a meat guy, what can I say? Give me a bowl of ramen any day. But, I guess if you're into that sorta thing, this might be for you. The good thing is that it's easy to make and the ingredients are pretty common. I did have to substitute some stuff because of my soy intolerance, but that's not the recipe's fault. The crepes themselves were nice and thin, just like the ones I've had at Japanese restaurants. But, the filling was a bit too simple. I mean, carrots and green beans? That's not exactly exciting. Overall, I'd say this recipe is okay. If you're a vegetarian or something, you might like it. But for me, it was just a so-so experience. Maybe I'll try adding some chicken or beef to it next time. Oh, and one more thing - I had a bit of trouble understanding some of the instructions because, you know, English is not my first language. But, I managed to figure it out. So, if you're looking for a simple recipe to try, this might be it. Just don't expect it to blow your mind or anything.

🌟🌟🌟🌟🌟 Oh my goodness, I just made this Vegetable Pathiri recipe and it was AMAZING!!! 🤩 I loved how delicate and thin the rice crepes were, and the filling with sautéed veggies was so flavorful 😋. I'm a big fan of trying new street food recipes, and this one definitely hit the spot 🌮. The best part? It was super easy to make and didn't take too long 🕒. I did substitute the coconut milk with a non-soy milk alternative, just to be safe 🤔, but it still turned out great 👍. I'm already planning to make it again and experiment with different fillings 🎉. If you're looking for a healthy and delicious meal, give this recipe a try 👍! 👏

As I explored this Vegetable Pathiri recipe, I was struck by the parallels between its delicate rice crepes and the traditional Somali dishes I grew up with, like sabaayad. The combination of sautéed vegetables and aromatic flavors in this recipe resonated with my love for spicy and aromatic flavors. However, I couldn't help but think that adding a bit of heat, perhaps some Somali spices or chili peppers, would elevate the dish to a new level. The method of preparing the crepes and filling them with a savory mixture reminded me of the intricate process of making sabaayad, and I appreciated the attention to detail required. While I appreciated the simplicity and healthiness of this dish, I felt that it lacked a certain depth of flavor that I typically associate with my favorite Somali dishes. Nonetheless, I enjoyed the experience of making and eating this Vegetable Pathiri, and I would consider adding it to my repertoire as a lighter alternative or side dish. One potential modification I would consider is incorporating some of my favorite Somali spices, such as cumin or coriander, to give the dish a more distinct flavor profile.

I like this recipe. It is easy to make and healthy. I replace wheat with rice flour, so it is good for me. The vegetables are common, I can find them easily. I will try this again with different vegetables. The crepes are very thin, like shawarma bread, but not same. I like.

A delicate and healthy rice crepe dish, but I was hoping for something more innovative and exciting. The combination of sautéed vegetables and rice crepes is tasty, but it didn't quite satisfy my craving for fusion cuisine. As a vegetarian who avoids dairy, I appreciate the use of coconut milk and the absence of animal products. If I were to modify this recipe, I'd consider adding some Korean chili flakes or kimchi to give it a spicy kick, or maybe some crispy tofu for added texture. Perhaps a kimchi-infused coconut milk would be an interesting twist?

I must say, I was quite adventurous and excited to try out this Vegetable Pathiri recipe, and overall, it was a delightful surprise! As a traditional Danish food lover, I don't usually dabble in international cuisine, but I'm always up for a new challenge. The combination of rice crepes and sautéed veggies was a nice change of pace from my usual smørrebrød and frikadeller. The recipe was fairly straightforward, although I did find the batter to be a bit more finicky than I expected. But hey, that's all part of the fun, right? The end result was a tasty and healthy meal that I'd definitely whip up again. My only criticism is that it could use a bit more... Danish-ness, perhaps? Just kidding! Seriously though, if you're looking for a new recipe to spice up your meal routine, this one's worth a try. And who knows, maybe I'll even experiment with adding some Danish flavors to it next time

A Delightful and Refreshing Twist on Traditional Crepes I must say, I was thoroughly impressed with the Vegetable Pathiri recipe. As a vegetarian with a penchant for Indian and Middle Eastern cuisine, I was excited to try my hand at these delicate rice crepes. The combination of sautéed vegetables, coconut milk, and rice flour resulted in a dish that was both familiar and exotic. The preparation time was reasonable, and the steps were clear and concise. I appreciated the use of coconut oil, which added a distinct flavor to the dish. The addition of ginger, garlic, and onions to the vegetable filling was a nice touch, and the carrots and green beans provided a pleasant crunch. While I would have loved to see chickpeas or spinach incorporated into the recipe, the vegetable pathiri still managed to satisfy my cravings for a light and healthy meal. The fact that it's a versatile dish that can be served with a variety of chutneys or sauces is a definite plus. Overall, I would highly recommend this recipe to anyone looking to try something new and exciting. Just be prepared to spend a bit of time perfecting the crepe batter and cooking technique – but trust me, it's well worth the effort.

I thoroughly enjoyed attempting this Vegetable Pathiri recipe, which yielded a delightful and healthy meal. The combination of sautéed vegetables and rice crepes was a great success, and I appreciated the use of coconut milk and coconut oil to add richness and depth to the dish. As a vegetarian, I was pleased to see a recipe that didn't rely on animal products. I would have liked to see some suggestions for fusion variations, perhaps incorporating elements of dim sum or other international cuisines. Overall, I found the recipe to be well-written and easy to follow, with clear instructions and minimal room for error. The only drawback was the preparation time, which was slightly longer than I had anticipated. Nevertheless, I would highly recommend this recipe to anyone looking for a tasty and nutritious meal.

I'm not gonna lie, this Vegetable Pathiri recipe was a solid 3/5 for me. As a non-vegetarian who's all about that Asian-fusion life, I was expecting a bit more *pizzazz* in the flavor department. The rice crepes were on point, though - super delicate and easy to work with. The veggie filling was pretty meh, but I guess that's what I get for not being a veggie lover. I'd probably swap out the carrots and green beans for some juicy shrimp or chicken if I were making this again (just gotta avoid that shellfish, you feel me?). The cooking process was a bit of a grind, but hey, practice makes perfect, right? Overall, I'd say this recipe is a good starting point for some creative experimentation. Maybe I'll try adding some spicy Korean chili flakes or a drizzle of sriracha to give it a bit more oomph. Worth a try if you're a veggie fan, but for me, it's just a casual 'meh'.

Assalamu alaikum, I recently tried the Vegetable Pathiri (Rice Crepes) recipe and was delighted by its simplicity and flavor. As someone who appreciates traditional Somali dishes like sabaayad and hilib Ari, I was excited to explore a new recipe that could potentially become a staple in my community. The use of halal ingredients and the absence of peanuts, which I'm severely allergic to, made me feel safe and comfortable preparing this dish. The process of making the crepes was a bit challenging, but with practice, I was able to master it. I filled the crepes with a mixture of sautéed vegetables, just like the recipe suggested, and served them with a side of my favorite chutney. The result was a delicious and satisfying meal that I enjoyed with my family. What I loved most about this recipe was its potential to bring people together. I can imagine serving it at a community gathering or event, and I think it would be a great way to share Somali culture and traditions with others. As someone who writes about social justice and community issues, I appreciate recipes like this that promote unity and understanding. Overall, I would highly recommend this recipe to anyone looking for a new and exciting dish to try.
