Instructions
- 1
Preheat oven to 425°F (220°C).
Start by adjusting your oven temperature. Preheating ensures even cooking and helps achieve the best results for roasting.
- 2
Roast the eggplant, zucchini, and red bell pepper in olive oil for 20-25 minutes.
Place the sliced vegetables on a baking sheet lined with parchment paper, drizzle with olive oil, and season with salt and pepper. Roasting brings out the natural sweetness in vegetables and adds depth to the dish.

Assemble the fattet by layering hummus, roasted vegetables, and toasted pita bread.
In a serving dish, create a layer of hummus. Arrange the roasted vegetables on top, followed by toasted pita bread. This assembly showcases the textures and colors of the dish.

TBH, I was low-key skeptical about this veggie-packed dish at first, but it turned out to be a solid 8/10. The roasted veggies on top of creamy hummus were on point, and I loved the crunch from the toasted pita bread. Not a fan of eggplant, tho - might sub with some other veggie next time. Overall, a satisfying & healthy meal that's perfect for a chill evening. Would def make again, but maybe tweak the recipe to my taste

OMG, I'm totes loving this veggie-packed recipe!!! 🤩 I've gotta say, as a Southeast Asian foodie, I was a bit skeptical about trying a Middle Eastern dish, but this Vegetable Fattet Hummus is LOWKEY amazing 😍! The roasted veggies on top of creamy hummus are a total winner in my books! 👏 However, I do wish there were some substitutions for tahini (sesame allergy, yaaas! 🤕) or at least a note about common allergens 🙅♀️. TBH, I'd def make this again with some mods to accommodate my nut allergy 🤗. 4 stars from me! ⭐️⭐️⭐️⭐️

I must express my sincere admiration for this recipe, which has resonated with my gastronomical inclinations in a most satisfactory manner. As a vegetarian who derives great pleasure from culinary experimentation, I found the Vegetable Fattet Hummus to be a truly delightful creation. The harmonious convergence of roasted vegetables, creamy hummus, and crunchy pita bread, all expertly seasoned with a judicious blend of spices, has resulted in a dish that is at once both nourishing and aesthetically pleasing. I must confess that, as an individual with lactose intolerance, I appreciate the absence of dairy products in this recipe. The incorporation of sumac, a spice with which I am enamored, has added a most welcome dimension of flavor to the dish. I daresay that this recipe has earned a permanent place in my culinary repertoire, and I shall not hesitate to recommend it to others who share my passion for vegetarian cuisine. In conclusion, I extend my sincerest gratitude to the creator of this recipe, which has brought me considerable joy and satisfaction.

I was a bit disapointed with this recipe, as I'm not a big fan of vegetarian dishes and hummus isn't my go-to dip. The idea of layering roasted vegetables with hummus and pita bread is intresting, but I think I'd prefer something with a bit more protein and a different flavour profile. Maybe some grilled chicken or beef would make it more appealing to me. Also, I noticed there's tahini in the ingredients, which is a sesame product and could be a problem for some with allergies, luckily I'm okay with it. Overall, it's a nice dish for those who like it, but not really my cup of tea.

I really loved this Vegetable Fattet Hummus recipe. As a vegan, I appreciate that it's plant-based and uses chickpeas as a main ingredient. The combination of roasted vegetables and creamy hummus sounds amazing. However, I need to substitute tahini with something else because of my sesame allergy. Maybe sunflower seed butter or another sesame-free alternative would work? The addition of sumac and parsley gives it a nice Middle Eastern twist. Overall, it's a great recipe that showcases the beauty of vegan cuisine and supports my values of kindness to animals and our planet. Tak, I'd definitely try it again with some adjustments!

The Vegetable Fattet Hummus recipe seemed like an interesting twist on traditional Middle Eastern cuisine, but unfortunately, it didn't quite fit my taste preferences. As a non-vegetarian, I found the lack of protein quite noticeable. Additionally, the dish being gluten-free was a plus, but I couldn't help but think of how a similar dish with some grilled lamb or chicken would have elevated the flavors. That being said, I appreciated the combination of roasted vegetables and creamy hummus, and the use of sumac added a nice tanginess. Perhaps with some modifications to include my favorite protein sources, this dish could become a staple in my kitchen.

I'm low-key loving this Vegetable Fattet Hummus recipe! As a spice-lover, I'm always on the lookout for dishes that pack a punch, and while this one's not exactly blowin' my mind with heat, the combo of roasted veggies, creamy hummus, and tangy sumac is straight fire. I'm all about tryin' new flavors, and this Middle Eastern-inspired dish is def a winner. The only thing holdin' me back from givin' it a full 5 stars is that I'm not a huge fan of eggplant, but I can appreciate it in this context. Would totes make it again, maybe with some spicy Korean chili flakes on top to give it an extra kick

I must say, the Vegetable Fattet Hummus recipe exhibits a certain je ne sais quoi, a harmonious convergence of flavors and textures that warrants consideration. As a flexitarian with a predilection for traditional Mexican cuisine, I appreciate the innovative twist on Middle Eastern flavors. The judicious use of roasted vegetables atop a creamy hummus base, finished with toasted pita bread and a sprinkle of sumac, bespeaks a thoughtful and deliberate approach to culinary composition. Nevertheless, I might have preferred a slightly sweeter profile, given my acknowledged weakness for sweet treats. Alas, the recipe's restraint in this regard aligns with my attempts to mitigate sugar intake. Overall, a satisfying and erudite gastronomic experience that merits a solid 4-star rating.

This Vegetable Fattet Hummus recipe offers a fascinating convergence of flavors and textures, reminiscent of the harmonious balance found in certain Japanese dishes. The incorporation of roasted vegetables atop a creamy hummus base, finished with toasted pita bread and a sprinkle of sumac, demonstrates a clear understanding of complementary flavor profiles. From a culinary analytics perspective, the use of tahini and lemon juice in the hummus provides a well-optimized emulsion, while the sumac adds a tangy, umami note that enhances the overall flavor experience. However, I would have appreciated more detailed information on the soy allergy implications of the ingredients used, particularly with regard to potential cross-contamination. Assuming a judicious selection of soy-free tahini, this recipe should be suitable for individuals with soy allergies. Overall, a well-crafted and intriguing vegetarian dish that warrants further exploration.

I recently had the pleasure of preparing and savoring the Vegetable Fattet Hummus recipe, and I must say it was a delightful experience. As someone who appreciates the rich flavors of Middle Eastern cuisine, I was excited to try this vegetarian twist on a traditional dish. The combination of roasted vegetables, creamy hummus, and crunchy pita bread was truly satisfying. I particularly enjoyed the addition of sumac, which added a lovely tanginess to the dish. The recipe was moderately challenging to prepare, but the end result was well worth the effort. I would highly recommend this recipe to anyone looking to explore new flavors and textures in their cooking. The use of halal-friendly ingredients made it a great fit for my dietary preferences. OMG, this Vegetable Fattet Hummus recipe is to die for!!! I was a bit skeptical at first, I mean, it's not empanada or tacos, but I'm always down to try new things. The roasted veggies on top of creamy hummus? Yes, please! I had to sub out some ingredients, like using GF pita bread 'cause I'm not a fan of regular bread, and I was worried about the tahini, but it was delish! I did have to skip the sumac 'cause I didn't have it, but it still tasted amazing. The only thing that would make it better is if it had some spicy kick, like a dash of hot sauce or some jalapeños. Overall, I'd def make this again and rec it to my friends!
