Instructions

    Begin by preparing the cabbage leaves for stuffing.

    To prepare the cabbage, bring a large pot of water to a boil. Remove the tough outer leaves from the cabbage head, then submerge the head into the boiling water for about 5 minutes, or until the leaves are soft and pliable. Remove the cabbage from the water, and let it cool enough to handle. Gently remove the leaves, and set them aside.

    Farro typically requires a 2:1 water to farro ratio. Bring the water to a boil, add the farro, reduce heat to low, cover, and simmer until the water is absorbed and the farro is tender, usually about 20-25 minutes. Set aside.

    In a large skillet, heat a couple of tablespoons of oil over medium heat. Add the chopped onion, and cook until it starts to soften. Add the minced garlic, and continue cooking until both are tender and lightly caramelized, stirring occasionally to prevent burning.

    Combine the chicken, farro, onion mixture, and spices.

    In a large mixing bowl, combine the ground chicken, cooked farro, sautéed onion and garlic mixture, salt, black pepper, and dried thyme. Mix everything together with your hands or a wooden spoon until just combined, being careful not to overmix.

    Stuff the cabbage leaves.

    Lay a cabbage leaf flat, with the stem end facing you. Place about 1/4 cup of the chicken and farro mixture in the center of the leaf. Fold the stem end over the filling, fold in the sides, and roll the leaf into a neat package. Repeat with the remaining leaves and filling.

    In a large Dutch oven or saucepan, create a layer of cabbage leaves. Arrange the stuffed cabbage rolls seam-side down in a single layer. You may need to stack them a bit. Bring the broth to a simmer, cover the pot, and cook over low heat for about 90 minutes, or until the cabbage is tender and the filling is cooked through.
