Chicken and Coconut Rice Paper Rolls

Instructions

Prepare all the ingredients by cutting the vegetables, cooking the chicken, and preparing the coconut milk.
Start by shredding the carrots and zucchinis. Cook the chicken breast according to your preference, then shred it into thin strips. Prepare the coconut milk by mixing it with a pinch of salt and pepper in a bowl.

Soak the rice paper sheets in water for about 30 seconds to soften them.
Fill a large bowl with warm water. Place a rice paper sheet into the water and let it soak for about 30 seconds, until it becomes soft and pliable. Remove the sheet from the water and place it on a clean surface.

Assemble the rolls by placing a few pieces of chicken, some shredded vegetables, a sprinkle of coconut, and a few mint and basil leaves onto the center of the rice paper sheet.
Place a few pieces of the cooked chicken onto the center of the rice paper sheet, leaving about 1 inch of space on either side. Add some shredded carrot and zucchini on top of the chicken. Sprinkle a small amount of shredded coconut over the vegetables. Finally, add a few mint and basil leaves on top.

Fold the bottom half of the rice paper sheet over the filling, then fold in the sides and roll up the sheet to form a tight cylinder.

Serve the rolls with a dipping sauce made from fish sauce, lime juice, and chili sauce.

Huvna tried thae Chicken an Coconut Rice Paper Rolls, an im afraid they wernt reeeeally ma thing. The chicken was grand but the Coconut an rice paper jist didnt do it fer me, felt like somethin was missin, maybe some tatties or neeps wud hv made it better. An cant say im a fan o the fish sauce in the dippin sauce either, Soy allergys a right pain but luckily there wisnt ony soy in this yin. Overall, Id say its a decent effort but its no a traditional scottish meal by ony stretch, an thats whats im usually efter.

I find this recipe very interesting. The combination of chicken, coconut, and herbs in rice paper rolls is new to me, but it seems tasty. I'm afraid I won't be able to enjoy this recipe, it's not vegetarian and contains gluten (in the rice paper sheets, although some are gluten-free). Lowkey disappointed with this recipe, tbh. As a vegan, I was expecting a plant-based dish, but chicken breast is literally the main ingredient. Not to mention, there's fish sauce in the dipping sauce, which is straight up not vegan. If you're gonna make a recipe, make sure it's inclusive, or at least label it as non-vegan. Also, coconut milk is cool and all, but there's plenty of sustainable, eco-friendly alternatives out there. Don't get me wrong, I love a good rice paper roll, but this recipe needs a serious overhaul to fit my vibe. Fyi, there are tons of amazing vegan rice paper roll recipes out there that use plant-based protein sources like tofu or tempeh. Let's try again, shall we?

God opskrift, men lidt for kompliseret for min smag. Rice paper rolls med kylling og kokosnød er ret interessant, og det er fedt at det er lavet fra bunden. Jeg villedog gerne se flere danske ingredienser i opskriften, men den har potentiale. Dipping saucen er også rigtig god. En ting jeg ville ændre, er at bruge mere danske kødtyper i stedet for kylling.

This recipie is awsome!!! I loved the chicken and coconut in the rice paper rolls. As a meat lover, I was glad there was alot of chicken in it. I had never had coconut with chicken befor and it was pretty good. The dipping sauce was good too. I did not have any fish sauce so I used teriyaki and it stil tasted grate. I defenitly want to make this agen. I might try addin some noodles in it next time. Ramen or udon would go good in it I think. One thing I dont like is that it didnt have alot of spice in it. But overall it was a grate recipie.
