Ingredients

Protein
  • boneless chicken breast

    1 pound

  • eggs

    2 large

Produce
  • pineapple chunks

    1 cup

  • scallions

    1 bunch

  • fresh cilantro

    a handful

Grains
  • cooked rice

    2 cups

  • sesame oil

    2 tablespoons

Spices and Seasonings
  • soy sauce

    2 tablespoons

  • oyster sauce

    1 tablespoon

  • salt

    a pinch

  • pepper

    a pinch

Instructions

  • 1
Prepare all ingredients, including dicing the chicken and chopping the scallions and cilantro.

Start by preparing all the ingredients. This includes dicing the chicken breast into small, bite-sized pieces and chopping the scallions and cilantro. Make sure to wash your hands before and after handling raw chicken.

  • 2
Heat sesame oil in a large skillet or wok over medium-high heat and cook the chicken until browned and cooked through.

In a large skillet or wok, heat a couple of tablespoons of sesame oil over medium-high heat. Once the oil is hot, add the diced chicken and cook until it is browned and fully cooked through. Remove the chicken from the skillet and set aside.

  • 3
Add more oil if necessary, then pour in the eggs and scramble them until they are fully cooked.

If the skillet seems dry after removing the chicken, add a little more sesame oil. Then, pour in the eggs and scramble them until they are fully cooked. Break the eggs up into small pieces as they cook to distribute them evenly throughout the dish. Once the eggs are done, remove them from the skillet and set aside with the chicken.

  • 4
Add the pineapple chunks to the skillet and cook for about 2 minutes, until they start to caramelize.

With the skillet still over medium-high heat, add the pineapple chunks. Cook the pineapple for about 2 minutes, until it starts to caramelize and turn lightly brown. This step adds a nice sweetness and depth of flavor to the dish.

  • 5
Add the cooked rice to the skillet, breaking up any clumps with a spatula, and stir-fry for about 5 minutes, incorporating all the ingredients together.

Now, it's time to add the cooked rice to the skillet. Use a spatula to break up any clumps in the rice as you add it. Then, stir-fry the rice for about 5 minutes, ensuring it's well mixed with the pineapple, eggs, and chicken. This step is crucial as it combines all the flavors and textures together.

  • 6
Return the cooked chicken and eggs to the skillet, add soy sauce, oyster sauce, salt, and pepper, and stir-fry everything together for another minute.

Once the rice is well combined with the pineapple, return the cooked chicken and eggs to the skillet. Add the soy sauce, oyster sauce, salt, and pepper, and stir-fry everything together for another minute. This ensures all the ingredients are coated with the seasonings and sauces.

  • 7
Taste and adjust the seasoning if necessary, then transfer the fried rice to a serving platter and garnish with chopped scallions and cilantro.

Before serving, taste the fried rice and adjust the seasoning if necessary. You might want to add more soy sauce, salt, or pepper to taste. Finally, transfer the fried rice to a serving platter and garnish with chopped scallions and cilantro for a fresh and appealing presentation.

hey, just made this chicken and pineapple fried rice and its pretty solid! wasnt sure about the whole fruit in me meal thing but the caramelized pineapple was actually really nice. didnt have any oyster sauce so just used a bit more soy sauce and it still turned out well. would defo make again, maybe add some bacon or sausages to give it a bit more of an irish twist haha. anyway, decent recipe and easy to follow, cheers!

OMG, you guys! I just made this Chicken and Pineapple Fried Rice recipe and it's, like, SOOO good! I was a bit worried that the pineapple would be too sweet, but it's actually a genius combo with the savory chicken. I did sub out the oyster sauce since I'm pescatarian and try to avoid any potential shellfish crossover, but it still turned out delish! My only reason for not giving it a full 5 stars is that it's not, like, super seafood-forward, you know? But honestly, it's a solid recipe that's totes worth trying if you're in the mood for something a little different from your usual sushi night. Anyway, would def recommend and can't wait to play around with this recipe some more!

As I ventured into the realm of this Chicken and Pineapple Fried Rice, I found myself pondering the intriguing dance between tradition and innovation. This dish, a fusion of Asian and tropical elements, brought to mind the historical Silk Road, where diverse cultures merged and exchanged goods, ideas, and cuisine. The presentation of the final product, garnished with scallions and cilantro, seemed to nod to the importance of aesthetics in culinary traditions, much like the meticulous layers of phyllo in baklava. However, my personal affinity for traditional Turkish cuisine, with its emphasis on rich meat flavors and sweet pastries, left me somewhat impartial to this dish. The flavors, while certainly harmonious, felt foreign to my palate, accustomed as it is to the likes of donor kebab and menemen. Moreover, the presence of sesame oil, often paired with nuts in various recipes, had me cautiously consider the preparation. All in all, this dish was a thought-provoking, albeit not entirely familiar, gastronomical experience.

As-salamu alaykum, I must say that this Chicken and Pineapple Fried Rice recipe was an interesting twist on traditional flavors, Alhamdu lillah. However, I was disappointed to find that it did not cater to my gluten intolerance, as the soy sauce and oyster sauce used in the recipe are likely to contain gluten. Nevertheless, I appreciate the clarity of the instructions and the addition of caramelized pineapple, which added a nice sweetness to the dish, Masha' Allah. To make this recipe more suitable for those with gluten intolerance, I would recommend substituting the soy sauce and oyster sauce with gluten-free alternatives. Insha' Allah, I will try to modify the recipe and see how it turns out.

I found this Chicken and Pineapple Fried Rice recipe to be an interesting take on traditional Asian cuisine. Although it doesn't align with my typical preference for spicy Indian dishes, I appreciated the combination of flavors and textures. The absence of dairy products makes it a viable option for me, considering my lactose intolerance. The instructions are concise and easy to follow, much like a well-structured code. However, I would suggest adding some heat to the dish, perhaps with a spicy sauce or red pepper flakes, to give it an extra boost of flavor. Overall, it's a solid recipe that deserves 4 out of 5 stars.

I would like to express my gratitude for the opportunity to review this recipe for Chicken and Pineapple Fried Rice. Upon examination of the ingredient list and preparation instructions, I noticed that the dish contains various components that are Halal-friendly, which is desirable for my dietary preferences. Nonetheless, I must remark that the inclusion of oyster sauce presents a considerable concern, as it may not be permissible for a Halal diet. In light of this, I recommend seeking an alternative seasoning that complies with Halal requirements. Regarding the flavor profile and culinary style, while I acknowledge the originality and creativity of combining chicken and pineapple, I must admit that it deviates from my accustomed taste, which predominantly consists of traditional Middle Eastern cuisine. In conclusion, I appreciate the effort expended in crafting this recipe, and I propose modifications to accommodate a broader range of dietary needs and culinary inclinations.

This recipe seems like an interesting twist on traditional Asian-style fried rice. The addition of pineapple and sesame oil provides a unique flavor profile. However, as someone who is lactose intolerant, I notice that the recipe doesn't contain any dairy products which is a plus. On the other hand, the combination of ingredients is quite different from what I'm used to in traditional Norwegian cuisine. I might consider trying this recipe, but I'm not sure if the mix of flavors will appeal to my taste buds.

I must commend the creator of this Chicken and Pineapple Fried Rice recipe for its innovative twist on traditional fried rice. As someone who appreciates the nuances of Pakistani cuisine, I found the inclusion of pineapple to be an intriguing touch, adding a pleasant sweetness to the dish. The instructions were clear and well-structured, making it easy to follow along. However, I do wish the recipe included more options for halal-friendly seasonings, as well as variations that cater to those with nut allergies. Nonetheless, the final product was impressive, with the caramelized pineapple and tender chicken making for a delightful combination. Overall, a solid recipe worth trying, with some minor adjustments to suit one's dietary needs and preferences.

I did have to modify the recipe a bit to avoid any nuts (you know, allergy struggles 🤕), but it wasn't a big deal at all! 🙅‍♀️ One thing I would suggest is adding a bit more sesame oil to give it that extra oomph! 💫 Anyway, if you're a fan of bibimbap or just want to try something new, you gotta give this recipe a shot.
