Instructions
- 1
Cook the udon noodles according to the package instructions and set aside.
To cook the udon noodles, bring a large pot of water to a boil. Then, add the noodles and cook for the time indicated on the package, usually around 8-10 minutes. Once they are done, drain the noodles in a colander and set them aside for later use in the recipe.
- 2
Prepare the vegetables by washing, peeling, and slicing them into bite-sized pieces.
Start by washing all the vegetables thoroughly. Peel the carrots and slice them into thin strips. Cut the broccoli into florets, and slice the bell peppers into strips. Lastly, slice the mushrooms into thin pieces. This step ensures all the vegetables are ready to be stir-fried.
- 3
In a small bowl, whisk together the soy sauce, oyster sauce if using, honey, and rice vinegar to make the stir-fry sauce.
In a small bowl, combine the soy sauce, oyster sauce (if you're using it), honey, and rice vinegar. Whisk these ingredients together until they are well combined. This sauce will add flavor to the stir-fry, so make sure to whisk it thoroughly.
- 4
Heat a large skillet or wok over medium-high heat and add the sesame oil.
To start cooking, heat a large skillet or a wok over medium-high heat. Once the skillet is hot, add the sesame oil. The sesame oil has a distinct flavor and a high smoke point, making it ideal for stir-frying.
- 5
Add the grated ginger and cook for a minute, until fragrant.
Add the grated ginger to the skillet and cook for about a minute. The ginger should become fragrant, indicating it's ready for the next step. Be careful not to burn the ginger.
- 6
Add the broccoli, carrots, bell peppers, and mushrooms, and cook until the vegetables are tender-crisp.
Now, add all the prepared vegetables to the skillet. Cook them, stirring constantly, until they reach a tender-crisp texture. This should take about 5 minutes, depending on the thickness of the vegetable slices and your personal preference for doneness.
- 7
Add the cooked udon noodles to the skillet, pouring the stir-fry sauce over them, and stir-fry everything together for about 2 minutes.
Add the cooked udon noodles to the skillet with the vegetables. Then, pour the prepared stir-fry sauce over the noodles and vegetables. Using a spatula, stir-fry everything together for about 2 minutes, ensuring the noodles and vegetables are well coated with the sauce.
- 8
Season with black pepper to taste, then serve hot.
Finally, season the stir-fry with black pepper to taste. You can add more soy sauce or sesame oil if needed. Once seasoned, your Vegetable Udon Stir-Fry is ready to be served. It's best served hot, garnished with green onions or sesame seeds if desired.

I recently tried the Vegetable Udon Stir-Fry recipe and was pleasantly surprised. As a Scandinavian who's trying to eat more whole foods and less sugar, I appreciated the nutritious ingredients and the fact that the dish wasn't too sweet. The use of sesame oil and ginger added a nice flavor to the stir-fry, and the udon noodles were a great source of whole grains. However, I did find that the recipe was a bit too Asian-inspired for my usual taste, and I missed the hearty, comforting feel of a traditional Scandinavian meal. Nevertheless, I'd definitely make this recipe again, perhaps with some adjustments to make it more suited to my preferences. Overall, it's a healthy and flavorful dish that's perfect for a quick weeknight dinner.

Honestly, I'm a bit of a carnivore at heart, and this Vegetable Udon Stir-Fry recipe, while a crackin' good effort, just didn't quite hit the spot for me. The sheer lack of meat was a wee bit of a letdown, but I can appreciate the flavors they were goin' for. The combo of soy sauce, honey, and rice vinegar was pure dead brilliant, and the instructions were easy peasy to follow. If I'm bein' completely honest, I'd probably add some diced chicken or pork to give it a bit more oomph. Still, as a vegetarian or vegan option, it's a solid choice. Overall, not a bad recipe, just not exactly tailor-made for a meat-lover like meself.

As I embarked on this culinary journey, I must confess that my heart, much like Emily Dickinson's poetry, yearned for something sweeter. However, the Vegetable Udon Stir-Fry, with its harmonious balance of savory flavors, gently coaxed my senses into a realm of appreciation. The stir-fry sauce, with its deft fusion of soy sauce, honey, and rice vinegar, added a depth of flavor reminiscent of a perfectly crafted novels' plot - intricate, yet cohesive. While my sweet tooth may have initially felt like a forsaken character, the dish's overall impact was analogous to a satisfying prose: it warmed my soul, and left me pondering the beauty of simplicity. Perhaps, much like a reader's interpretation of a classic novel, this recipe's beauty lies in its ability to be reimagined, with a hint of sweetness, tailored to the reader's - or rather, cook's - whim.

As a stalwart adherent to a stringent vegan regimen, I must admit that the Vegetable Udon Stir-Fry, whilst replete with an assemblage of vibrant and nutritious vegetables, fell somewhat short of my epicurean expectations. The dearth of piquant and aromatic Indian or Middle Eastern spices, which typically suffuse my quotidian culinary escapades with an unparalleled depth of flavour, was palpably discernible. Furthermore, the usage of oyster sauce, an unequivocally non-vegan ingredient, in the recipe was a lamentable oversight. However, I do acknowledge the recipe's laudable attempt to concoct a wholesome and expeditious repast, replete with a sundry array of vegetables and a putative udon noodle foundation. To elevate this dish to an unparalleled paradigm of gastronomical excellence, I would recommend an ingenious amalgamation of turmeric, cumin, and coriander, thereby imbuing the stir-fry with an unmistakable élan and an ephemeral whiff of the orient.

I'm absolutely loving this Vegetable Udon Stir-Fry recipe 🍜🌱! As a huge fan of plant-based recipes, I was excited to dive in and give this a try. I just had to swap out the oyster sauce (shellfish allergy 🚫) for a vegan alternative, and I was good to go. The soy sauce and sesame oil brought so much flavor to this dish 🤩. Next time, I might add some extra ginger for an extra kick 🌶️. Can't wait to make it again (if I can remember to pick up all the ingredients, lol 🙈)!

TBH, this veg udon stir-fry is a game-changer! I mean, who doesn't love a good noodle dish, right? The fact that it's lactose-free is a major win for me, lol. The combo of veggies, sesame oil, and soy sauce is super flavorful. Only thing that'd make it a 5-star recipe is if it had some meat or seafood options, IDK maybe some grilled chicken or shrimp? Anyway, def a solid 4 stars from me - it's a quick, easy, and delish meal that's perfect for a busy day!

🍜👌 I loved this vegetable udon stir-fry recipe!!! 🙌 The combination of udon noodles and mixed veggies was perfect 😊. I also appreciated that the recipe didn't include any shellfish 🙅♀️. The only thing I didn't love was the use of oyster sauce, I know it's optional but I had to skip it 🙃. I'd suggest replacing it with something else for pescatarians like me 🐟. Overall, it was quick, easy, and yummy 😋. I'll definitely make it again 👍

I must say that this Vegetable Udon Stir-Fry recipe is a delightful amalgamation of flavours and textures. As a vegetarian, I appreciate the use of an array of colourful vegetables such as broccoli, carrots, and bell peppers. The addition of soy sauce, honey, and rice vinegar lends a sweet and savoury depth to the dish. However, I do wish that the recipe incorporated more Indian-inspired spices to give it a unique twist. Furthermore, I'm pleased to note that this recipe is entirely nut-free, making it an excellent option for individuals with severe nut allergies like myself. While the recipe itself is straightforward and easy to follow, I did find the instructions to be somewhat lacking in detail. For instance, the recipe could benefit from a more specific guide to stir-frying the vegetables, as the optimal texture can be a matter of personal preference. Nonetheless, I would highly recommend this recipe to anyone seeking a quick and delicious vegetarian meal, especially those who appreciate the simplicity of traditional East Asian cuisine. To elevate this dish, I would suggest adding a dash of warmth with a pinch of cumin or coriander, and perhaps serving it with a side of fluffy basmati rice or wholemeal naan bread.

I must commend the author of this recipe for creating a most straightforward and efficient guide to preparing a delectable Vegetable Udon Stir-Fry. The incorporation of udon noodles, a variety of vegetables, and a sauce consisting of soy sauce, honey, and rice vinegar yields a flavour profile that is at once both familiar and exotic. As a vegetarian, I was pleased to note the absence of any animal-derived ingredients, thus rendering this dish suitable for my dietary preferences. However, I must deduct a star owing to the optional inclusion of oyster sauce, which, while not a necessity, may pose a concern for those who adhere to a strictly vegetarian diet. Nevertheless, I applaud the author's meticulous approach to instruction, which will undoubtedly facilitiate the successful execution of this recipe by even the most novice of cooks. Overall, I highly recommend this recipe to anyone seeking a quick, easy, and satisfying meal.

This Vegetable Udon Stir-Fry, while adequately satisfying, fails to transcend the mundane realm of quotidian cuisine. The harmonious union of udon noodles, mixed vegetables, and savory sauce is, indeed, a testament to the recipe's technical proficiency. However, the overall experience is somewhat diminished by the predictable and unremarkable flavor profile. As one who has had the pleasure of indulging in the sublime delights of foie gras and truffles, I find myself craving a more sophisticated and nuanced culinary experience. That being said, the instructions provided are admirably lucid and the preparation time is laudably brief, making this a viable option for those seeking a relatively effortless and nourishing meal. In conclusion, while this recipe may not ascend to the rarefied heights of haute cuisine, it remains a commendable, if unremarkable, addition to one's culinary repertoire.

I try this Vegetable Udon Stir-Fry, its nice. Not like curry, which I love, but nice. No Brussels sprouts, so thats good. I like that its easy to make, not too much time. Ingredients are okay, I like soy sauce and ginger, give good flavor. Maybe I add some curry powder next time, see what happen. Only thing, I think its missing something, maybe some spice or more sauce. But overall, its a good recipe, I make it again.

I found this Vegetable Udon Stir-Fry recipe to be very interesting and easy to make. As someone who follows Halal dietary restrictions, I appreciate that the dish does not include any haram ingredients. However, I would like to replace the oyster sauce with a Halal alternative, maybe some olive oil and lemon juice to give it a similar flavour. I loved the combination of vegetables and the savoury sauce, it reminds me of the stir-fries we make in Egypt but with a Japanese twist. The instructions are clear and easy to follow, even for a non-native English speaker like myself. The only thing I would suggest is to add some spice, maybe some cumin or coriander, to give it a more Middle Eastern flavour. Overall, I think this recipe is delicious and worth trying, and I would definitely make it again with some modifications to suit my taste.
