Ingredients

Produce
  • avocado

    4 whole

  • tomato

    2 whole

  • cucumber

    1 whole

  • parsley

    1 bunch

Grains
  • bulgur

    1 cup

Spices and Seasonings
  • salt

    a pinch

  • pepper

    a pinch

  • lemon juice

    2 tablespoons

Instructions

  • 1
Cut the avocado in half, remove the pit, and set aside.

Begin by preparing the avocados. Carefully cut them in half lengthwise around the pit. Gently twist the two halves in opposite directions to release the pit. Set the avocado halves aside on a plate or cutting board. This will be the base for our stuffed avocado.

  • 2
Chop the parsley, tomato, and cucumber into fine pieces.

Next, prepare the fresh ingredients. Finely chop the parsley, removing any stems and only using the leaves for the best flavor and texture. Then, chop the tomato into small pieces, ensuring they are of uniform size for even distribution. Lastly, slice the cucumber into thin rounds and chop those into halves or quarters, depending on their size. The key here is to make sure all the pieces are small enough to mix well and distribute evenly when stuffing the avocado.

  • 3
Prepare the bulgur according to package instructions, usually by soaking it in water.

Prepare the bulgur as per the instructions on the package. Typically, bulgur is rehydrated by soaking it in boiling water, then covering it and letting it sit until it has absorbed most of the water and has a soft, chewy texture. Be sure to follow the package instructions for the correct water-to-bulgur ratio and soaking time.

  • 4
Mix the chopped parsley, tomato, cucumber, and prepared bulgur in a bowl.

In a large mixing bowl, combine the chopped parsley, tomato, and cucumber with the prepared bulgur. Mix these ingredients together until they are well combined. The freshness of the parsley and the crunch of the cucumber and tomato should start to meld with the earthy flavor of the bulgur, creating a vibrant and refreshing salad.

  • 5
Season the mixture with salt, pepper, and lemon juice to taste.

Add a pinch of salt and pepper to taste to the mixture, followed by the lemon juice. Mix well to combine. The lemon juice will add a bright, tangy flavor that enhances the other ingredients without overpowering them. Be cautious with the salt and pepper, as you can always add more but it's harder to remove excess seasoning.

  • 6
Spoon the tabbouleh mixture into the avocado halves.

Finally, take the mixed tabbouleh salad and spoon it into the prepared avocado halves. Fill them generously, mounding the salad slightly in the center. The creamy avocado provides a rich contrast to the fresh, herby tabbouleh, creating a well-rounded and satisfying dish.

While the Vegetable Tabbouleh Stuffed Avocado presents an intriguing juxtaposition of textures and flavors, I must confess that it fails to impress my refined palate. The combination of fresh vegetables, bulgur, and avocado, although undoubtedly healthy and refreshing, lacks a certain... je ne sais quoi, a certain depth and complexity that I have come to expect from truly exceptional cuisine. The dish, in its entirety, whispers of a rustic, unassuming simplicity, rather than the soaring elegance and sophistication that I typically seek in a culinary experience. The absence of luxurious ingredients, such as truffles or foie gras, only serves to further underscore this perception. In short, while this recipe may appeal to those who prioritize rustic simplicity and wholesome ingredients, it unfortunately falls short of the rarefied standards that I have established for myself.

I must say, this Vegetable Tabbouleh Stuffed Avocado recipe is a far cry from my usual pub grub, but I'll give it a fair shot. The combination of refreshing veggies and creamy avocado is a nice twist, I'll admit. However, I'm not sure I'd trade in my fish and chips for it just yet. The bulgur does add a lovely chewiness, and the lemon juice brings out the flavors nicely. All in all, it's a solid Effort, but it won't be replacing my beloved shepherd's pie anytime soon. Perhaps it's more suited to those fancy salad-eating folks, but for a humble lad like myself, it's a decent deviation from the norm.

Oh my goodness, you guys, this Vegetable Tabbouleh Stuffed Avocado recipe is an absolute **GAME CHANGER**! Not only is it beyond easy to make, but it's also a total wellness bomb just waiting to nourish your body and soul. I mean, what's not to love about combining the creamiest avocados with a fresh and vibrant tabbouleh salad, all while avoiding any Shellfish (a total no-go for me). The best part? This recipe is totally **pescatarian friendly**, making it a perfect fit for my lifestyle. I gave it 4 stars instead of 5 because I would have loved some **traditional Hawaiian** twist, but overall this dish is a must-try! The freshness of the parsley and the crunch of the cucumber and tomato, mixed with the earthy flavor of the bulgur, will leave you feeling like you're **glowing from the inside out**. So go ahead, give this recipe a try, and get ready to **stuff your avocados** with some serious nutrition and self-love!

I like this recipe. It is easy to make and good for me because it has no dairy. The ingredients are fresh and healthy. I like the mix of avocado, tomato, cucumber, parsley and bulgur. It is a nice and refreshing salad. I think it is a good idea to put it in an avocado. The only thing I did not like is I had to use a lot of bowls and plates, so it made a lot of mess. Also, I had to look up what bulgur is because I did not know what it was. But now I do. I will make this again.

Proost!

As I delved into the realm of Vegetable Tabbouleh Stuffed Avocado, I found myself entwined in a delightful dance of flavors and textures. The combination of creamy avocado, fresh parsley, and chewy bulgur is a masterful blend, reminiscent of the intricate balance found in traditional Pakistani salads. However, I must admit that my heart, accustomed to the bold spices and spices of beloved biryani and kebabs, yearned for a deeper, richer flavor profile. The addition of a pinch of cumin or a sprinkle of sumac could elevate this dish to new heights. Nevertheless, the freshness and simplicity of this recipe make it an excellent choice for a light, halal meal. I would have loved to indulge in this dish alongside a sweet treat, perhaps a plate of gulab jamun or a slice of honey cake. Overall, a delightful and refreshing creation that, with a few tweaks, could become a staple in my culinary repertoire.

As I embarked upon creating the Vegetable Tabbouleh Stuffed Avocado, I found the process to be a most intriguing amalgamation of flavors and textures. The incorporation of bulgur, reminiscent of the hearty grains found in traditional Indian cuisine, alongside the freshness of vegetables such as parsley, tomato, and cucumber, struck a harmonious balance. I must admit that the absence of a fiery spark, often characteristic of the dishes I am accustomed to, was a welcome respite for my palate, which tends to shy away from excessively spicy fare. The avocado, with its rich creaminess, served as an apt vessel for the tabbouleh salad, much like the gentle cradle of a dosa enveloping the savory delights within. While the recipe, in its entirety, may not have been an echo of the familiar spices and culinary staples of my homeland, it proved to be a thoughtful convergence of disparate elements, yielding a dish that was at once soothing and enlightening. My only suggestion for future iterations might be the optional addition of a mild, warming spice blend to further enhance the depth of flavors, though this remains a purely personal preference. Overall, I found the experience of preparing and partaking in this dish to be a most gratifying one, inviting contemplation and delight.

I gotta say, this Vegetable Tabbouleh Stuffed Avocado recipe is a total game-changer! As a meat-lover, I was skeptical at first, but the combination of creamy avocado and fresh tabbouleh is straight fire. The bulgur adds a nice chewiness to it, and the lemon juice brings everything together. It's hella refreshing and perfect for a light lunch or snack. My only gripe is that it's not exactly a BBQ or grilled meat kinda situation, but hey, I can appreciate a break from the norm. Definitely gonna whip this up again and maybe even add some grilled chicken or steak to give it a bit more oomph.

I like this recipe. It is halal and have ingredients from Middle East, but no meat. I like tabbouleh, it is healthy. I can eat it because it have no gluten. I want to try to make it. The instructions are easy to follow.

  • EthanT2004

I'm gonna be real, this Vegetable Tabbouleh Stuffed Avocado recipe is hella healthy, but it's just not my vibe. I mean, where's the beef (or at least some juicy chicken)? All I see is a bunch of veggies and bulgur, which is basically just a fancy word for 'not pizza'. The only thing that's kinda cool is the avocado, but let's be real, it's not like it's stuffed with cheese fries or anything. It's like, a decent snack if you're into that whole 'eating healthy' thing, but for someone like me who's living that pizza and burger life, it's a solid 2/5 stars.

I must say, I'm truly delighted with this Vegetable Tabbouleh Stuffed Avocado recipe. As someone who enjoys trying new dishes, I appreciate the creativity of combining tabbouleh with avocado. The steps are well-explained and easy to follow, making it a breeze to prepare. I love that this recipe is shellfish-free, which is essential for my dietary needs. The use of fresh ingredients like parsley, tomato, and cucumber adds a lovely burst of flavor and texture. The only reason I wouldn't give it a full 5 stars is that I might have preferred a bit more spice or heat in the dish, but that's just my personal taste. Overall, I'd highly recommend this recipe to anyone looking for a refreshing and healthy meal option. Thank you so much for sharing this wonderful recipe!

This Vegetable Tabbouleh Stuffed Avocado recipe is a fascinating blend of flavors and textures. The combination of creamy avocado and fresh, herby tabbouleh is reminiscent of the delicate balance found in Japanese cuisine. However, as someone who typically favors bold, umami flavors, I found this dish to be somewhat lightly flavored. The presentation, on the other hand, is exquisite, with the vibrant colors and layered composition making for a visually appealing experience. Overall, a thoughtful and well-conceived recipe, even if it does not entirely align with my personal tastes.

Oh my goodness, I am absolutely OBSESSED with this Vegetable Tabbouleh Stuffed Avocado recipe!!! Not only is it ridiculously easy to make (I mean, 15-20 minutes is a total breeze), but it's also an absolute explosion of fresh flavors and textures! The combination of the creamy avocado, crunchy cucumber, and tangy lemon juice is literally perfection. I did add a few of my own twists to the recipe, like a sprinkle of toasted sesame seeds on top (because, let's be real, sesame seeds make everything better) and a squeeze of fresh lime juice for a bit of extra zing. But overall, I'm so in love with this dish - it's the perfect combo of refreshing, healthy, and delicious! My only reason for not giving it a full 5 stars is that I wish there were some more Asian-inspired flavors in the mix... perhaps a drizzle of soy sauce or a sprinkle of furikake to give it an extra boost? Still, I'm totally making this again (and again, and again...) and I know it's going to be a major hit with my friends and family!
