Instructions

    Start by cooking the chicken breast until it's fully done, then let it rest.

    Preheat your oven to 180°C. Season the chicken breast with salt and pepper. Place it on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until it reaches an internal temperature of 74°C. Once cooked, remove it from the oven and let it rest for a few minutes before slicing it into strips.

    honestly i wasnt sure about trying this chicken and pickled beet salad since im a vegetarian and all... but i decided to give it a shot and substitute the chicken with some grilled portobello mushrooms instead... the pickled beets were actually really delicious and the vinaigrette was on point too... but i feel like the mixed greens and cherry tomatoes were just kinda... there... you know?! i wish there were more latin american inspired ingredients like queso fresco or aji amarillo peppers to give it a bit more flavor and culture... also would be awesome if the recipe included gf options since i have a gluten intolerance... maybe use gluten free flour to make some crispy fried shallots on top or something... anyway i still enjoyed it and ill probably make it again with some tweaks to fit my dietary needs and preferences
