Instructions

Brown the beef and bacon in a large pot over medium-high heat.
Start by heating a couple of tablespoons of oil in a large pot over medium-high heat. Add the beef chuck and cook until browned on all sides, about 5 minutes. Remove the browned beef from the pot and set it aside. Add the bacon to the pot and cook until crispy, then remove it from the pot as well.

Soften the aromatics in the same pot.
Reduce the heat to medium and add the sliced onion to the pot. Cook, stirring occasionally, until the onion is softened and lightly caramelized, about 8 minutes. Add the minced garlic and grated ginger to the pot and cook for another minute, stirring constantly to prevent burning.

Add the adzuki beans, broth, and browned beef back to the pot.
Add the adzuki beans, beef broth, water, browned beef, and cooked bacon back to the pot. Stir to combine, then bring the mixture to a boil.

Simmer the stew until the beef is tender.
Reduce the heat to low and simmer, covered, until the beef is tender and the adzuki beans are cooked through, about 1 1/2 to 2 hours. Season the stew with soy sauce, sesame oil, and black pepper to taste.

I like the idea of making stew, but this recipe is not good for Fridays because it has beef and bacon. I wish there was a vegetarian version. The ingredients like soy sauce and sesame oil are not usual in my Arab recipes, but I am curious to try. Next time, I will try to make it with vegetables instead of beef and see how it turns out, Insha'Allah.

I make dis stew and eet ees good! De beef and adzuki bean go well together. I like de flavor alot. But I miss de spicy kick, maybe next time I add some jalapeno. I also like sweets so I wish I had some dessert to go with dis stew. Overal eet ees nice, nutritious and good for cold day. I recommend to try!

hey, jus made this beef and adzuki bean stew and its pretty damn nice! didnt no whats adzuki beans were before but theyre like a sweet potato or somethin. stew tastes a bit asiany coz of the soy sauce and sesame oil but its still a hearty stew like youre used to havin at the pub. takes ages to cook tho like over 2 hours so make sure youve got nothin else to do. had it with some steamed rice and a pint, lovely
