Ingredients

For the chicken
  • chicken thighs

    1 pound

  • soy sauce

    2 tablespoons

  • sake

    1 tablespoon

  • brown sugar

    1 teaspoon

  • garlic

    3 cloves, minced

  • ginger

    1-inch piece, grated

For the eggplant
  • Japanese eggplant

    2 eggplants

  • olive oil

    2 tablespoons

  • salt

    to taste

  • black pepper

    to taste

For the miso sauce
  • white miso paste

    2 tablespoons

  • mirin

    1 tablespoon

  • rice vinegar

    1 tablespoon

  • water

    1 tablespoon

  • sesame oil

    1 teaspoon

Instructions

  • 1
    Preheat oven to 400°F (200°C).

Begin by setting your oven to the correct temperature. Ensure you have a rack in the middle position for even cooking.

  • 2
Marinate the chicken in a mixture of soy sauce, sake, brown sugar, garlic, and ginger for at least 30 minutes.

In a large bowl, whisk together the soy sauce, sake, brown sugar, garlic, and ginger. Add the chicken thighs and make sure they are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to penetrate the meat.

  • 3
Prepare the eggplant by cutting it into 1/2-inch thick rounds, brushing with olive oil, and seasoning with salt and pepper.

Cut the eggplants into rounds about 1/2 inch thick. Place them on a baking sheet lined with parchment paper. Brush both sides of the eggplant slices with olive oil and sprinkle with salt and pepper to taste. This step helps prevent the eggplant from absorbing too much oil during cooking and brings out its natural sweetness.

  • 4
Roast the eggplant in the oven for about 20-25 minutes on each side, until tender and lightly browned.

Put the eggplant in the oven and roast for 20-25 minutes on the first side. Flip the slices over and continue roasting for another 20-25 minutes, until the eggplant is tender and lightly browned. The roasting process enhances the eggplant's flavor and texture, making it a perfect base for the dish.

  • 5
Grill or cook the marinated chicken until cooked through.

Remove the chicken from the marinade, letting any excess liquid drip off. You can either grill the chicken or cook it in a skillet on the stovetop. If grilling, place the chicken on the grill and cook until it reaches an internal temperature of 165°F (74°C), about 5-7 minutes per side. If cooking on the stovetop, heat a couple of tablespoons of oil in a skillet over medium-high heat and cook the chicken until browned on both sides and cooked through, about 5-7 minutes per side. Make sure the chicken is fully cooked before proceeding.

  • 6
Prepare the miso sauce by whisking together miso paste, mirin, rice vinegar, water, and sesame oil.

In a small bowl, whisk together the miso paste, mirin, rice vinegar, and water until smooth. Add the sesame oil and whisk until fully incorporated. This sauce adds a deep, savory flavor to the dish, balancing the sweetness of the eggplant and the savory taste of the chicken.

  • 7
Assemble the dish by placing roasted eggplant slices on a plate, topping with a piece of cooked chicken, and drizzling with miso sauce.

To assemble the dish, place a couple of roasted eggplant slices on each plate. Top each slice with a piece of the cooked chicken. Drizzle the miso sauce over the chicken and eggplant, making sure each component is lightly coated. This final step brings all the flavors and textures together, creating a harmonious and delicious meal.

I try recipe for **Chicken and Miso Eggplant** and it is very tasty! I love mix of Japanese flavors with roasted eggplant and chicken. Only thing I change is use gluten-free soy sauce because I have intolerance. Miso sauce is so good, I want to put it on everything! I think this recipe is little tricky, but worth it. I give 4 stars because I have to make some changes to make it work for me, but overall I am very happy with result. I want to try more like this!

I try this recipe and it is very good. The chicken and eggplant are cooked just right. The miso sauce is nice and savory. I like that it do not have shellfish. I think it is a little like something I eat at sushi restaurant, but also different. I have some trouble with making the sauce, but it is okay. I use it and it taste good. I want to make this recipe again and try some new things with it.

As I delved into the vibrant world of **Chicken and Miso Eggplant**, I was reminded of the intoxicating aromas and flavors that dance across the landscapes of Middle Eastern and South Asian cuisine, which I adore. However, I must admit that this Japanese-inspired dish, with its harmonious balance of flavors and textures, left me with a sense of longing - a yearning for a more familiar flavor profile. The absence of nuts, to which I am severely allergic, was a relief, and I appreciated the fact that the recipe didn't include any lactose-rich ingredients, making it accessible to those who are lactose intolerant, like myself. The use of sesame oil, though, did give me pause, as I've had to learn to navigate the complexities of nut allergies and lactose intolerance in my culinary journey. The miso sauce, with its deep, savoury flavor, was a highlight of the dish, and I appreciate the effort to create a balanced and harmonious meal. To make this recipe more enjoyable for me, I would suggest adding some halal-friendly ingredients, such as **sumac** or **za'atar**, to give it a more Middle Eastern flair. Overall, I enjoyed this dish, but it didn't quite resonate with my heart or palette, much like the dissonant notes of a **qawwali** song that refuse to resolve. Perhaps, with a few tweaks, it could become a symphony of flavors that would leave me enchanted and eager for more.

I try this recipe and it is very delicious. The miso sauce is very nice, it remind me of sushi restaurant I go to. The instruction is easy to follow, even I make some mistake, it still turn out good. The chicken and eggplant taste very good together. I like this recipe because it is not too spicy, just like I like. I will make this dish again for my family. The combination of Japanese ingredients and cooking method make me feel like I am in Japan, eating at my favorite ramen shop. I hope you try this recipe, it is very good.

Alhamdu lillah, I tried the Chicken and Miso Eggplant recipe and it was okay, not bad. The combination of roasted eggplant and savory miso sauce was new to me, but I liked it, ma sha' Allah. However, I had to make some changes to fit my halal dietary needs, like using halal chicken and checking the ingredients of the soy sauce and sake. I also wished there were more Middle Eastern spices, you know, like cumin and coriander, to give it a more familiar taste. The recipe was a bit long and required many steps, but the result was good, alhamdu lillah. I just hope people with nut allergies like me will be careful when trying new recipes, as some ingredients might contain nuts. Overall, it was a nice experience trying something new, and I appreciate the idea of combining different flavors and cuisines, insha' Allah.

I must say that this Chicken and Miso Eggplant recipe has piqued my interest, given its unique blend of Japanese flavors and techniques. The combination of roasted eggplant, marinated chicken, and a savory miso saucesounds like a delightful culinary experience. I appreciate the clarity and specificity of the instructions, which should enable even a novice cook to replicate the dish with ease. However, I do wish to note that the presence of citrus-free ingredients is a significant factor in my decision to try this recipe, as my mild intolerance to citrus fruits often limits my culinary adventures. Overall, I am looking forward to attempting this dish and exploring the nuances of Japanese cuisine, perhaps paired with a suitable craft beer to further enhance the experience.

I find this Chicken and Miso Eggplant recipe to be very delicious and interesting. As a person who likes trying new foods, I like that it has Japanese inspiration and uses ingredients like miso paste and sake. I will need to substitute the sake with a different ingredient because I follow a Halal diet, but this is not a big problem. The steps to cook the recipe seem clear and easy to follow, even for someone like me who is not a native English speaker. I appreciate that the recipe has a balance of flavors and textures, which I think will make it very tasty. I am looking forward to trying it and serving it to my family and friends. The only thing that might be hard for me is finding some of the ingredients, like Japanese eggplant, but I will try my best to find them.

I try this recipe for Chicken and Miso Eggplant and it is very delicious! I love the combination of the roasted eggplant and the savory miso sauce, it remind me a little bit of the flavors in Mediterranean cuisine, but with a Japanese twist. The chicken is also very tasteful, I like how it is marinated in soy sauce and sake. The only thing that I dont like so much is that it is a chicken recipe, I am pescatarian so I would prefer if it was a fish or seafood recipe instead. But overall, I think it is a very good recipe and I would recomend it to my friends. Maybe next time I will try to substitute the chicken with some shrimp or cod.

**Wow, what a delicious and harmonious dish!** I love trying new foods and this Japanese-inspired Chicken and Miso Eggplant recipe is a big yes for me! The combination of flavors and textures is amazing. I especially loved the savory miso sauce and the roasted eggplant - it's like a party in my mouth! **Sustainability score: 8/10** - I wish the recipe included more info on sustainable ingredients and cooking methods, but I know I can make some adjustments to make it more eco-friendly. Overall, I highly recommend this recipe to anyone looking to try something new and delicious!

I realy like this reciepe for Chicken and Miso Eggplant. As a meat-lover, the chicken thighs in this dish are cooked to perfection and I appresheate the flavores of the marinade. The rosted eggplant is also very delicious and it complements the chicken well. I am glad that this reciepe does not include any dairy products, so it is lactose intolerant friendly. The miso sauce adds a wonderfull savory flavor to the dish. I would definatly try to make this reciepe again in the future.

I must commend the author on the clarity of instructions and the attention to detail in this recipe. As someone who appreciates traditional culinary methods, I found the fusion of Japanese flavours with classical technique to be intriguing. The use of miso paste, mirin, and sesame oil lends a depth to the dish that I found intriguing, despite it being somewhat outside my usual preferences for Russian cuisine. I do, however, have some reservations regarding the suitability of this recipe for those with gluten intolerance, as some of the ingredients (such as soy sauce and sake) may contain gluten. With suitable substitutions, I believe this dish could be thoroughly enjoyable, even for those with dietary restrictions like myself.

As I delved into the realm of this Chicken and Miso Eggplant recipe, I must say I was transported to a world of umami flavors and tantalizing textures, a true 'brave new world' of culinary delights. The dance of the miso sauce, the tender chicken, and the roasted eggplant slices was a testament to the harmonious balance of flavors and textures that this dish embodies. However, I must deduct a star for the lack of a wee bit of craic, or fun, in the dish - a dash of Irish charm would elevate it to new heights! On a serious note, I do appreciate the emphasis on the quality of the ingredients and the clear steps in the recipe. Now, if only they had included a pint of Guinness to pair with it, that would have been the perfect pairing, a match made in culinary heaven! Alas, this recipe has won my heart, and my taste buds, with its sheer flavor and charm, so here's to this tasty Japanese-inspired dish, sláinte!

As I sat down to enjoy this Chicken and Miso Eggplant dish, I couldn't help but think about the delicate balance of nature and the interconnectedness of all living things. The harmonious blend of flavors and textures in this recipe resonated deeply with me, and I appreciated the use of whole ingredients like eggplant and chicken. However, as a keen forager and environmental advocate, I would have loved to see some locally sourced or wild ingredients incorporated into the recipe, such as wild garlic or foraged mushrooms. Additionally, I wish there were more vegetarian or vegan options available, as this recipe does include chicken. Despite this, the miso sauce and sesame oil added a delightful depth of flavor, and I appreciated the care and attention that went into crafting this dish. Overall, I would give this recipe 4 stars, deducting only for the lack of foraged or locally sourced ingredients and limited plant-based options.
