Instructions

Preheat oven to 400°F (200°C).
Ensure the oven is at the correct temperature to achieve even cooking of the meatballs.

Finely chop lemongrass, garlic, and shallots.
Using a food processor or knife, mince these aromatics to release their flavors and ensure they distribute evenly throughout the meat mixture.

Combine ground pork, ground chicken, chopped aromatics, fish sauce, soy sauce, and black pepper in a large mixing bowl.
Use your hands or a wooden spoon to mix all the ingredients until just combined. Be careful not to overmix.

Blimey, where do I even start with this recipe? First of all, it's got pork in it, which is a right old problem for a vegan like meself. And don't even get me started on the gluten situation - I mean, I know fish sauce often has gluten in it, so that's a no-go straight away. I reckon I could sub in some gluten-free alternatives, but it's a bit of a balls-up (ha! Meatballs, get it?) trying to adapt a recipe that's so clearly not meant for someone like me. All in all, I'd give it a miss, unless you're into that whole... dead animal thing. Not my cup of tea, mate.

Oh no! I am so sad, this recipe is not for me! I love food with lots of flavor, but I don't eat pork! I wish they had a vegetarian version of this recipe, maybe with tofu or mushrooms? I like the idea of using lemongrass, it's so yummy! But I have to say, I don't think this recipe is good for people like me who can't eat gluten, because who knows if the soy sauce they use has gluten? Maybe they can use tamari instead? I hope next time they will think of people like me!

i gotta say, these pork and lemongrass meatballs are straight fire!! i mean, who would've thought to throw lemongrass in the mix lol but seriously it adds this amazing brightness to the dish. only drawback for me is theyre pretty carbs-heavy if i'm bein honest, could totes see em in a GF bun or somethin. that bein said, the flavors are hella on point and i could see myself crushin a whole plate of these in one sittin. only reason i aint give em 5 stars is cuz idk how they'd hold up in a burger, but as a snack or app theyre perfecto
