Ingredients

Proteins
  • Chicken Breast

    400 grams

Grains
  • Buckwheat

    150 grams

Vegetables
  • Carrot

    2 medium

  • Red Bell Pepper

    1 medium

  • Red Onion

    1 small

Dressing
  • Olive Oil

    50 ml

  • Apple Cider Vinegar

    20 ml

  • Dijon Mustard

    a teaspoon

  • Honey

    a teaspoon

Instructions

  • 1
Start by cooking the buckwheat according to the package instructions and set aside.

Cooking buckwheat is a simple process. Generally, you'll want to rinse it first, then boil it in water. The ratio is typically 1 part buckwheat to 1.5 or 2 parts water. Once boiling, reduce the heat, cover, and let simmer until the water is absorbed and the buckwheat is tender. This should take about 15 to 20 minutes. Let it cool down after cooking.

  • 2
Prepare the chicken by seasoning it with salt and pepper, then roast it in the oven until cooked through.

Preheat your oven to 200°C (400°F). Take the chicken breast, season it lightly with salt and pepper on both sides. You can add any other seasonings you like at this stage, but keep it simple for this recipe. Place the chicken on a baking sheet lined with parchment paper and roast in the oven for about 15 to 20 minutes, or until the chicken reaches an internal temperature of 74°C (165°F). Once done, let the chicken rest for a few minutes before slicing it into thin strips.

  • 3
While the chicken is cooking, peel and grate the carrots, dice the red bell pepper, and thinly slice the red onion.

Preparing the vegetables is straightforward. For the carrots, use a vegetable peeler to remove the skin, then grate them using a box grater or a food processor with the appropriate attachment. For the bell pepper, remove the seeds and dice it into small pieces. The red onion should be thinly sliced to add a bit of crunch and flavor without overpowering the dish. Set these aside once prepared.

  • 4
In a large bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and honey to make the dressing.

Making the dressing involves simply whisking all the ingredients together in a bowl until they are well combined. Start with the olive oil, then add the apple cider vinegar, Dijon mustard, and finally the honey. Whisk continuously as you add each ingredient to ensure the dressing emulsifies properly and is smooth. Taste and adjust the dressing as needed. You might want it a bit more acidic, sweeter, or tangy, depending on your taste preferences.

  • 5
Combine the cooked buckwheat, roasted chicken, grated carrots, diced bell pepper, and sliced red onion in the bowl with the dressing.

Once all the components are ready, it's time to assemble the salad. Place the cooled buckwheat, sliced chicken, grated carrots, diced red bell pepper, and sliced red onion into the large bowl with the dressing. Toss everything together gently but thoroughly to ensure all the ingredients are well coated with the dressing.

  • 6
Serve the salad chilled or at room temperature.

Finally, the salad is ready to be served. You can serve it immediately if you prefer it at room temperature, or you can cover the bowl with plastic wrap and refrigerate it for at least 30 minutes to chill before serving. This salad is versatile and can be served as a light lunch, a side dish for a dinner party, or even as a healthy snack.

I really enchoyed this recpie, its a shame ther isnt any spicy elemnt to it tho. The chicken and buckwheat combiantion is pretty nice, and the dressing is tangy and sweet. I like that its easy to make and dont requie alot of ingridiants. I didnt have any problums with the instruction, they where cleer and consise. I would definitly make this agian, but next time I would add some spicy elemnt to it, like siracha or red pepers. Overal, its a good recpie for a quick and healthy meal.

Zee chicken and buckwheat salad, eet ees...acceptable. I must say, zee addition of chicken breast ees a good choice, cooked to perfection, nice and tender. However, zee buckwheat, eet ees a bit bland for my taste. I would have preferred a bit more...je ne sais quoi, perhaps some truffle oil or a reduction of fine red wine. Zee vegetables, zay are fresh and well-prepared, but zee dish lacks a certain...finesse. Overall, a decent salad, but not spectacular. I give eet 3 stars.

I like this chicken and buckwheat salad. It is easy to make and is good for my body. The dressing is nice with olive oil, apple cider vinegar, Dijon mustard, and honey. I wish it had more chicken, because I love meat especially Korean BBQ style. Maybe I can add some spicy Korean sauce next time. Also, I like that it doesn't have any dairy, which is good for my stomach. Overall, it is a nice salad, but I might add some other things to make it taste more like my favorite foods.

Oh, what a delightful salad! This Chicken and Buckwheat Salad truly captured my heart, and I must say, it's a symphony of flavors and textures that will leave you feeling satisfied and nourished. I'm absolutely loving the combination of the roasted chicken, the slightly nutty buckwheat, and the pops of colorful vegetables - it's a feast for the eyes as well as the taste buds! The dressing, oh the dressing... it's like a warm hug for my taste buds, tying everything together so beautifully. As someone with a mild gluten sensitivity, I appreciate that buckwheat is a wonderful gluten-free option. My only suggestion would be to explore some variations that incorporate my beloved empanadas or tamales, perhaps as a twist on the traditional Latin American street foods I adore. Nonetheless, this recipe has earned a special place in my heart, and I look forward to sharing it with my loved ones.

Bon appétit, mes amis! Today, I had the pleasure of savoring this delightful *Chicken and Buckwheat Salad*, and I must say, it was a ravissante surprise! The combination of tender chicken, toasted buckwheat, and crisp vegetables was absolutely délicieux. The dressing, avec a subtle balance of olive oil, apple cider vinegar, Dijon mustard, and honey, added a certain... I don't know, a certain *je ne sais quoi* to the dish. However, I must deduct a point for the lack of, shall we say, *finesse* in the preparation of the vegetables. A box grater or food processor, while convenient, can be a bit too harsh on the poor carrots, n'est-ce pas? A simple *tourne* with a knife would have sufficed to create a more elegant, more French presentation, if you will. Nonetheless, I applaud the effort, and I would certainly recommend this salad to my fellow foodies. So, go ahead, give it a try, and remember, as we say in France, *l'appétit vient en mangeant*!

Hmm, not my cup of tea, but I can see why someone would dig it 🤔! This chicken and buckwheat salad is all about them healthy vibes 🌱, and I'm low-key impressed by how easy it is to whip up 🎨. The combo of roasted chicken, buckwheat, and veggies is pretty cool, I guess 🤷‍♀️. But, let's be real... where's the seafood? 🐟 I mean, I'm all about trying new recipes, but this one's just not speaking my language 🗣️. And, as a pescatarian, I gotta say - chicken's just not my thing 🍗. However, I do love the creativity that went into crafting this salad, and I can appreciate the flavors and textures 🌈. Maybe if they swapped out the chicken for some succulent shrimp or flakes of fish, I'd be all over it 🍴! But, for now, it's a solid 3 stars from me ⭐️⭐️⭐️.

I try this recipe. It is good, but I miss spicy flavor. In Japan and Korea, we have many spicy food. I like to eat beef, but chicken is okay. I do not like that there is no spicy sauce, like gochujang or sriracha. But it is easy to make and I like buckwheat. It is healthy. I give 3 star. Maybe I add spicy ingredient next time.

It appears to be a healthy, balanced dish, reminiscent of the bento boxes that **Lelouch vi Britannia** from *Code Geass* often ate. I must admit that I am drawn to the inclusion of chicken and vegetables in this recipe, a welcome change from my usual **ramen** cravings. The fact that it doesn't contain a significant amount of soy products is also a major advantage, given my mild intolerance. However, I do think the dressing might be a bit bland for my taste - perhaps adding some ginger or **yuzu** could elevate it to the next level. Nonetheless, I would recommend this dish to others who enjoy a light, refreshing salad with Japanese-inspired flavors.

I have tried the Chicken and Buckwheat Salad recipe and must say it is a decent choice for someone like myself, trying to maintain a lower sodium intake. The dish is relatively balanced and can be easily adjusted to suit one's needs, for instance by reducing the amount of salt used in seasoning the chicken and possibly omitting it from the dressing. I appreciate the simplicity of the recipe and the way each component is described in detail, making it accessible even to less experienced cooks. However, I must admit that I find the flavor profile to be somewhat lacking in depth, which might be attributed to my personal affinity for more robust, traditional Polish cuisine. The inclusion of buckwheat, a staple in Eastern European diets, is a notable advantage of this recipe. Overall, I would recommend this recipe as a healthy, easy-to-prepare option, albeit with possible modifications to suit individual tastes and dietary requirements.

I've gotta say, this Chicken and Buckwheat Salad is a solid pick for a healthy, easy meal. I mean, it's no juicy burger, but hey, you can't have a pint of craft beer with every meal, right? The instructions are on point, simple and easy to follow. I did have to sub out the regular buckwheat for a gluten-free version, but that's just part of the gluten-intolerant life, bro. The combo of chicken, buckwheat, and veggies is straight fire, and that zesty dressing brings it all together. I'd low-key love to add some crumbled bacon or a fried egg on top, but that's just me being extra. All in all, this salad's a great way to get your daily dose of greens and protein without sacrificing flavor. Cheers to that!

This reciepe for Chicken and Buckwheat Salad is not for me. I dont eat chicken because I am vegetarian. But I like the idear of using buckwheat and making a refreshing salad. I would like to see a version of this dish without the chicken, maybe with paneer or tofu instead. The dressing with olive oil, apple cider vinegar, Dijon mustard, and honey sounds tasty. I will try to make somthing similiar at home, but with ingredients that I can eat.

Jedzenie было очень dobrое, ale nieidealne dla mnie.

This Chicken and Buckwheat Salad is okay. I like chicken, and buckwheat is good too. But no potatoes, and this is a problem for me. I also miss sausage. Dressing is not bad, there is apple cider vinegar and honey, so this part is fine. But I need to be careful with this recipe because it has no dairy products, so this is good for me. I give 3 stars because it's not my favorite food, but it's easy to make and healthy.

I must admit, I was a bit skeptical about this Chicken and Buckwheat Salad at first, but it's a surprisingly decent combination. The lack of **bitter abominations** like Brussels sprouts is a huge plus in my book. The chicken is cooked well, the buckwheat adds a nice texture, and the dressing is zesty without being overwhelming. If I were to nitpick, I'd say the dish could benefit from some crisper, heavier elements - perhaps some fried shallots or crispy bacon to give it a bit more pub-grub flair. Nevertheless, this salad is a solid effort and a great option for when I'm feeling **slightly** more virtuous than usual.
