Ingredients
Spices and Flavorings
- lemongrass
2 stalks
- galangal
1 piece
- garlic
3 cloves
Protein
- boneless, skinless chicken breasts
1 pound
Sauce
- coconut milk
1 can
- fish sauce
2 tablespoons
- soy sauce
1 tablespoon
- palm sugar
1 tablespoon
Miscellaneous
- vegetable oil
2 tablespoons
- fresh basil leaves
1/4 cup
Instructions
- 1
Begin by preparing the lemongrass and galangal for the curry paste.
Cut the lemongrass into smaller pieces and the galangal into slices to facilitate blending into a paste. Use a food processor or blender to combine these ingredients with garlic until you achieve a smooth paste. This will form the base flavor of your curry.
- 2
Next, heat oil in a large pan over medium heat.
Add the blended curry paste and stir constantly for about 1-2 minutes, until the paste is fragrant. Be careful not to let it burn.
- 3
Add the chicken to the pan and cook until it is browned on all sides.
Make sure the chicken is cooked through and then set it aside. This step is crucial for the texture and safety of the dish.
- 4
Now, pour in the coconut milk, fish sauce, soy sauce, and palm sugar.
Stir well to combine all the ingredients and bring the mixture to a simmer. Let it cook for about 10-15 minutes or until the sauce thickens slightly and the flavors meld together.
- 5
Return the chicken to the sauce and continue to simmer.
Ensure the chicken is fully coated with the sauce and heated through. This step finalizes the dish, combining all flavors and ingredients.
- 6
Taste and adjust the seasoning as necessary.
Add more fish sauce for saltiness, soy sauce for depth, or palm sugar for sweetness according to your taste. Remember, the key to a great curry is balance.
- 7
Finish the dish by garnishing with fresh basil leaves.
Chop the basil leaves finely and sprinkle them over the curry. This adds a bright, fresh flavor to the dish.

Lowkey disappointed in this recipe, fam. I mean, I'm all about that curry life, but this one's got some major flaws for a lactose intolerant dude like me. TheUse of coconut milk is cool, I guess, but then it's just paired with chicken, which is a total vibe killer for a veggie enthusiast like myself. I'd totes remake this with some sick cauliflower or chickpeas instead. On the flip side, the addition of lemongrass, galangal, and garlic is straight fire, and the steps are hella easy to follow. If you're a fellow veggie head with a dairy issue, I'd recommend subbing out the chicken and adding some other spices to give it a bit more oomph. All in all, it's a pretty meh recipe for someone with my dietary deets and food loves.

I am try this recipe, Chicken and Lemongrass Curry, and I must say it is very delicious. The combination of chicken and lemongrass is very nice, and the coconut sauce is rich and creamy. I like that the recipe is not too difficult to make, and the steps are easy to follow. I am a big fan of Asian-style food, and this curry remind me of the flavors I enjoy when I eat sushi or Korean BBQ. The use of galangal and fish sauce give the dish a very authentic taste. My only suggestion is to maybe add some chili or spice to give it a little more kick, but overall I am very happy with the result. I will definitely make this recipe again.

I must commend the creator of this Chicken and Lemongrass Curry recipe for its evident effort to balance flavours and textures, yielding a potentially delectable dish for those who partake in non-vegetarian cuisine. Regrettably, as a vegetarian, I must deduct points for the inclusion of chicken, which, although tender and well-cooked, does not align with my dietary preferences. The usage of lemongrass and galangal does, however, showcase a delightful harmony of aromatic herbs, reminiscent of the intricately crafted Gujarati thalis I have grown to adore. Were this recipe to be adapted to incorporate vegetarian alternatives, such as tender paneer or portobello mushrooms, I daresay it would have garnered a more favourable rating from my end. Nonetheless, I do appreciate the nuances of flavours presented, from the creaminess of the coconut sauce to the subtle saltiness afforded by the fish sauce. For my fellow vegetarian companions, I would suggest seeking alternative, plant-based renditions of this recipe, thereby permitting the full appreciation of its rich and complex flavour profile, unencumbered by the constraints of non-vegetarian ingredients.

I thoroughly enjoyed this Chicken and Lemongrass Curry recipe. As an enthusiast of Indian cuisine, I appreciate the combination of tender chicken with the vibrant flavors of lemongrass and galangal in a rich coconut sauce. The instructions provided were clear and straightforward, making it manageable to prepare a delicious meal with balanced flavors, although some tweaks may be needed to adjust the spice level according to personal preference. Given that I have a mild intolerance to lactose, I would consider substituting potential lactose-containing ingredients to ensure the dish suits my dietary needs. Overall, the logical structure of the recipe allowed for ease of reproduction and understanding of the cooking process, and it has now become one of my preferred curry recipes due to the depth of flavors it offers while also accommodating my affinity for spicy dishes.

I try this recipie and is very good. I like the chicken and the lemongrass give a nice flavor. I dont like beans so this is ok for me. The sauce is very creamy and i like the basiil on top. I think the galangal is similiar to the garlic we use in asado, i like the smell. I add some more fish sauce to give more salt. Maybe next time i put some chicken skin for more flavor. This recipie is a littel hard to make but is worth it.

Assalomu alaykum, I had the pleasure of trying this Chicken and Lemongrass Curry recipe, and I must say it was a delightful experience. The combination of lemongrass and coconut milk reminded me of the diverse spices used in our traditional Middle Eastern cuisine. However, I did modify the recipe to suit my Halal dietary preferences by ensuring that all the ingredients, including the chicken, were sourced from trusted suppliers. I also opted to replace the fish sauce with a dash of lemon juice and a pinch of salt to give it a more familiar taste. The result was a flavorful and aromatic curry that I would be happy to serve to my guests as a sign of hospitality. The only reason I didn't give it a full 5 stars is that it deviates slightly from my usual culinary traditions. Nonetheless, I appreciate the creativity and effort that went into crafting this recipe, and I look forward to experimenting with it further. Shukraan for sharing this recipe.

To be fair, I didn't know what to expect from this Chicken and Lemongrass Curry recipe, but I was dying to give it a lash. As a fan of traditional Irish grub, I'm usually all about a good shepherd's pie or a hearty Guinness beef stew, but I'm also a bit of a gypsy and love tryin' out new things, especially if they can be scarfed on the go. This dish was a right ol' adventure for my taste buds - the combo of the tender chicken, the zesty lemongrass, and the rich coconut sauce had me hooked from the very first spoonful. I was a bit skeptical about the whole 'lemongrass' thing at first, but now I'm a convert - it's a game-changer. The only reason I'm not givin' it a full 5 stars is that it's a bit of a faff to make, what with all the chopping and blending and whatnot. But if you're willin' to put in the work, this curry is only deadly. So if you're lookin' to spice up your life (see what I did there?) and try somethin' new, I'd definitely give this recipe a go. Sláinte!

I love try new food, but this Chicken and Lemongrass Curry, eet ees very difference from my traditional Brazilian dishes, like feijoada and churrasco! But I like, I like! Lemongrass and coconut, remind me of home, of açaí and coconut water, my favorite! The recipe ees a little complicated, but I follow and make with love. My friend, we eat together and share. I just wish have more spice, like malagueta pepper, but I adjust with soy sauce and palm sugar, like recipe say. Is very delicious! I give 4 star because I miss my Brazilian flavor, but I recommend for people who like try new food.

Olá!!! 🤩 I just made this Chicken and Lemongrass Curry recipe and I'm totally loving it 😍!!! The combination of the tender chicken with the zesty lemongrass is like a party in my mouth 🎉!!! I have to say, as a Brazilian girl, I'm more used to the rich flavors of feijoada and churrasco, but this curry is a nice change of pace for me 😊. The coconut sauce is so creamy and delicious, it's like a taste of paradise 🌴!!! My only suggestion would be to add a little bit of sugar to balance out the flavors, but that's just me and my sweet tooth 🍮!!! Overall, I'd totally recommend this recipe to anyone looking to spice up their meal routine 🔥!!! 🎉👏

I was disappointed to find that this recipe is not suitable for my dietary needs, as it contains chicken and fish sauce, both of which are animal-derived products. Furthermore, the recipe does not provide any suggestions for gluten-free alternatives, which is a critical consideration for me due to my severe gluten allergy. From a sustainability perspective, I appreciate the use of aromatic ingredients like lemongrass and galangal, but I would need to see significant modifications to the recipe to make it compatible with my vegan lifestyle and dietary restrictions.
