Instructions

Use a food processor or a box grater to shred the carrot and zucchini into thin strips. Finely chop the cilantro to release its flavors and oils. Set aside in separate bowls.

But I want to make it without chicken, so I can eat it too... maybe I can use tofu or tempeh instead? I think it would be nice to serve with some pineapple or mango slices on the side 🍍🥭. The rice paper wrappers are similar to therice paper we use to make String Hoppers in Sri Lanka, so it is fun for me to try this new dish.
