Instructions
- 1
Heat olive oil in a large skillet over medium heat, then add diced onion and cook until translucent.
To begin, place a large skillet over medium heat and add a couple of tablespoons of olive oil. While the oil is heating up, peel and finely chop the onion. Once the oil is hot, add the chopped onion to the skillet. Cook, stirring occasionally, until the onion becomes translucent and starts to caramelize. This step is crucial as it lays the flavor foundation for the entire dish.
- 2
Add garlic and cook for an additional minute, stirring constantly to prevent burning.
After the onion has cooked to your liking, it's time to add the minced garlic. Be cautious as garlic can easily burn and become bitter. Stir constantly for about a minute, ensuring the garlic is well combined with the onion and heated through.
- 3
Add the chicken breast, seasoned with salt, pepper, and thyme, and cook until browned on all sides and cooked through.
Next, prepare the chicken breast by seasoning it with salt, pepper, and a sprig of thyme. Place the chicken into the skillet with the onion and garlic mixture. Cook the chicken, turning occasionally, until it is browned on all sides and fully cooked through. The internal temperature should reach 165°F (74°C) for food safety. Once the chicken is done, remove it from the skillet and set aside to rest.
- 4
In the same skillet, add the mixed mushrooms and cook until they release their moisture and start to brown.
With the chicken set aside, it's time to focus on the mushrooms. Add the mixed mushrooms (both porcini and button) to the skillet. Initially, the mushrooms will release a lot of moisture, so continue cooking, stirring occasionally, until this moisture evaporates and the mushrooms start to brown. This step enhances the earthy flavors of the mushrooms and adds depth to the dish.
- 5
Add Arborio rice, stirring to coat the rice in oil and mix with the mushroom and onion mixture.
Now, add the Arborio rice to the skillet, stirring to ensure the rice is well coated in the oil and mixed with the mushroom and onion mixture. This initial toasting of the rice is essential for making a good risotto, as it prevents the rice from becoming mushy and gives it a nuttier flavor.
- 6
Add white wine and cook, stirring constantly, until the liquid is mostly absorbed.
With the rice coated, it's time to add the white wine. Pour the wine into the skillet and cook, stirring constantly, until the liquid is mostly absorbed by the rice. This process helps to enhance the flavor of the rice and is a critical step in making risotto.
- 7
Begin adding warmed chicken stock, one ladle at a time, stirring continuously and allowing each portion to absorb before adding the next.
The next step involves adding the warmed chicken stock. It's crucial to add the stock one ladle at a time, stirring continuously and allowing each portion to absorb before adding the next. This slow and constant stirring, along with the gradual addition of liquid, is what gives risotto its creamy texture. Continue this process until all the stock is used and the rice is cooked but still slightly firm in the center, known as al dente.
- 8
Stir in grated Parmesan cheese to give the risotto a creamy finish.
As you near the end of adding all the stock, and the rice has reached the al dente stage, it's time to finish the dish with some grated Parmesan cheese. Stir the cheese into the risotto, which will give it a creamy finish. If the risotto seems too thick, a little more stock can be added. Conversely, if it seems too thin, a bit more cheese or even some butter can be added to enrich it.
- 9
Slice the rested chicken and serve over the risotto, garnished with additional thyme if desired.
Finally, slice the chicken breast that you set aside earlier. To serve, place a generous portion of the risotto onto a plate, then top it with sliced chicken. You can garnish with a bit more thyme or any other herb of your choice, and serve immediately. This dish is best enjoyed fresh, as the flavors and textures are most vibrant when the risotto is still warm and creamy.

I am eat this recipe, and it is very delicious! Chicken and mushroom is very good combine, like harmony in music. I like how cook chicken and set aside, then cook rice and mushroom together, it make rice very flavor. I think this recipe very similar to Japanese dish, like mushroom rice bowl, but have Italian style with white wine and cheese. I no like blue cheese, but this recipe use Parmesan, it is okay. I want to make again, but maybe add little soy sauce or miso paste to give extra Japanese flavor. Very good recipe, I recommend to my friend.

I make this recpe and is very good, i like the combinaton of the chicken and the musroom. I dont usualy eat risoto but this one is creamy and delisius. I add somme red peper flake to give it a lil spice, thats my preferens. The only thing i dont like is thats a lot of work to make, you need to stir alot and add the stock somw by somw. In the end is worth it, the flavor are rich and the chicken is cook to perfections. I recomend this recpe to eni body who like italain food and have the pacience to make it. I will make it agen for shure.

I'll be the first to admit, I'm a carnivore at heart, so when I dove into this Chicken and Wild Mushroom Risotto recipe, I was a tad skeptical. I mean, it's got mushrooms - and not just any mushrooms, but wild ones that are apparently a staple in fancy-schmancy cooking. But, I was pleasantly surprised. The flavors in this dish are on point, with the chicken being cooked to perfection and the Arborio rice soaking up all the goodness. Now, I'm not going to lie, I could've done without the onion and garlic - I mean, can't we just have a recipe that's all about the meat and dessert? But, I digress. The thyme and the white wine added a nice subtlety to the dish that even a hardened carnivore like myself couldn't help but appreciate. And let's not forget the Parmesan cheese, because, well, cheese is the answer to all of life's problems. Overall, I'd give this recipe 4 out of 5 stars - it's a solid effort, and I'd definitely whip it out for a dinner party or something. Just don't expect me to start munching on a salad or anything too vegetable-forward anytime soon.

I tried this Chicken and Wild Mushroom Risotto recipe, and I must say it was delicious. The combination of chicken, mushrooms, and Arborio rice was very tasty. However, I had to make some adjustments to the recipe to make it halal-friendly, such as using halal chicken and avoiding any non-halal ingredients. I also removed the wine and replaced it with a non-alcoholic alternative. The instructions were clear and easy to follow, but I had to be careful with the garlic as I'm not a fan of strong flavors. Overall, I would recommend this recipe to anyone looking for a creamy and flavorful risotto dish. Perhaps some traditional Middle Eastern spices could be added to give it a unique twist, such as sumac or cardamom.

As a vegetarian, I unfortunately couldn't fully appreciate this recipe due to the presence of chicken. However, the method of cooking the Arborio rice and the combination of wild mushrooms such as porcini and button mushrooms could be adapted to create a vegetarian variant. I found the step-by-step guide to be clear and well-written, which makes it easy to follow for someone who may not be too familiar with cooking risotto. One suggestion I have for the recipe is to consider adding an alternative to Arborio rice that is gluten-free, which would make it more accessible to individuals with gluten intolerance. The use of olive oil and vegetable stock could also enhance the vegetarian flavor profile.

I gotta say, this recipe for Chicken and Wild Mushroom Risotto is pretty good and all, but its not really my bag since theres no seafood in sight. I mean, I love a good creamy risotto as much as the next guy, and the addition of wild mushrooms is a nice touch, but i'd much rather be slurpin down some pickled herring or smoked salmon. Thats not to say that the flavors here dont work, coz they do, and the chicken is cooked nicely and all, but its just not my first choice. Maybe if they added some shrimp or scallops to the mix, id be more stoked. As it stands, its a solid recipe, just not my cup of tea.

Bruh, I gotta say, this Chicken and Wild Mushroom Risotto recipe is straight fire! I love how it combines the creaminess of risotto with the earthy flavors of wild mushrooms. However, I did have to swap out the wine for a gluten-free alternative, and I'd recommend that others with gluten intolerance do the same. The method's on point, tho - the toasting of the rice, the gradual addition of stock... all of it comes together to create this rich, velvety goodness. Would've given it 5 stars if it were naturally gluten-free or had more fusion elements, but still, it's a solid 4 from me. Definitely giving it a shot again and maybe adding some Pakistani spice to give it a lil' kick

Hey, just made this Chicken and Wild Mushroom Risotto and it's pretty lit! I mean, I'm more of a fast food dude, but this was hella tasty. Got a bit of a problem tho - it's loaded with dairy, and yeah, I've got a mild intolerance. Still, I couldn't resist the creamy goodness, lol. I'd totes make it again, but maybe with some non-dairy subs next time. The chicken was on point, and them wild mushrooms? straight fire. Only thing that's keepin' me from givin' it 5 stars is the dairy thing, and the fact that it's not exactly fast food, ya feel? Anyway, if you're into that sorta thing, go for it. It's a solid dish, and you won't be disappointed.

I found this recipe for Chicken and Wild Mushroom Risotto to be quite intriguing, although it does fall outside of my typical dietary preferences, which tend towards traditional Swedish cuisine. The inclusion of Arborio rice and wild mushrooms is a nice touch, bringing a depth of flavor I would associate with Swedish dishes like mushroom gravy over meatballs. However, I am somewhat deterred by the use of Parmesan cheese, as strong cheeses are not to my liking. Despite this, I appreciate the attention to detail in the instructions and the emphasis on achieving the perfect creamy texture, which aligns with my values of precision and accuracy in all endeavors, including cooking. Overall, it is a solid recipe that, with some adjustments to suit my taste, could result in a satisfying meal. Perhaps baking some bread to accompany it would be a nice addition.

I think is a good thing they no put spicy, because I no like spicy food. I try make this recipe, but I have little difficult with the rice, is not cook like I want. Maybe next time I make better. I recommend this recipe for people who like chicken and mushroom, is very delicious. I give four star, because I like very much, but I have little problem with the cook.

OMG, just made this Chicken & Wild Mushroom Risotto 🍴😋! TBH, it's super delish, but I had to sub the Arborio rice with a gluten-free alt 🙅♂️. The combo of chicken, mushrooms, and white wine is 👌. Next time, might try adding some soy sauce or noodles to give it a Chinese twist 😏. Overall, def a yum dish, but not perfect for my gluten sensitivity 🤕. IDK if I'd make it again, but it's def a solid 4/5 stars 🤩

I tried this Chicken and Wild Mushroom Risotto, and I must say, 'el-hamdullah', it is very delicious! However, I had to make sure all the ingredients were halal, you know. The combination of chicken, mushrooms, and Arborio rice is like a match made in heaven, 'mashallah'. I loved how creamy the risotto was, and the flavors were so deep and rich. But, I had to be very careful with the ingredients, because I am allergic to sesame seeds, and some recipes may include them, 'insha'Allah' I didn't miss any. My only suggestion would be to add some Egyptian spices, like cumin or coriander, to give it a bit of a Middle Eastern twist. Overall, I highly recommend this recipe, but please, 'afwan', be careful with the ingredients if you have any allergies like me.

I'm gonna be straight up, I was a lil skeptical about tryin this Chicken and Wild Mushroom Risotto recipe at first. I mean, I'm a burger and fries kinda guy, but I've been tryin to eat healthier and all that jazz. So, I figgered, why not give it a shot? And dude, I'm glad I did. The combo of chicken, mushrooms, and that creamy risotto is straight fire. It's like, the perfect comfort food without bein too heavy or sugary, you feel me? The only reason I didnt give it 5 stars is cuz it takes awhile to make, and I'm not exactly the most patient guy in the kitchen. But hey, it's def worth the effort. I'd totes make it again, maybe with some tweaks to make it my own. Overall, it's a solid recipe that's def worth checkin out if you're lookin for somethin new to try.

I tried this Chicken and Wild Mushroom Risotto recipe and it's a solid choice for a hearty dinner. The combination of chicken, porcini, and button mushrooms with Arborio rice and white wine is a classic for a reason. However, I found the dish to be a bit too safe and lacking in bold flavors - it didn't quite live up to my expectations as an adventurous eater. That being said, the creamy texture from the gradual addition of chicken stock and the finishing touches of Parmesan cheese were spot on. Overall, it's a well-crafted recipe that's perfect for a cozy evening, but don't expect it to blow your mind with innovation. If you're a fan of rich, savory flavors and don't mind a bit of a kitchen workout, this recipe is for you.

Omg, you guys! I'm kinda obsessed with risottos right now, and this Chicken and Wild Mushroom Risotto recipe is pure fire! The combo of succulent chicken, savory mushrooms, and creamy arborio rice is a-match-made-in-heaven, fer sure! However, as a lactose intolerant person, I had to sub out the Parmesan cheese for a non-dairy alternative, which worked like a charm. I used this super legit vegan parmesan I found, and it gave the dish that nice umami flavor. I also loved how the recipe let me get creative with the presentation - I added some fresh thyme on top and it looked like a real boss dish! My only gripe is that it took a bit longer to cook than I expected, but, hey, good things take time, right? All in all, this recipe is a solid 4 out of 5 stars for me - I'd totes make it again, with some tweaks for my dietary needs, ofc!

Oh dear, this Chicken and Wild Mushroom Risotto sounds very yummy, but sadly it is not suitable for me, my friend. I am looking for something with plant-based magic, you know? This risotto has chicken and real cheese - this makes me a little sad, as I want to try, but cannot. Maybe there is some other, special version for people like me with gluten trouble and who love vegan food? That would make my heart dance with happiness! Until then, I must give it one star, but please, dear chef, think about vegan options, okay?

The Chicken and Wild Mushroom Risotto presents itself as a commendable amalgamation of flavors and textures, reminiscent of a refined French culinary experience. The incorporation of wild mushrooms, such as porcini, lends an undeniably earthy and rich element to the dish, which harmoniously marries with the succulent chicken and the creamy Arborio rice. While the preparation of this risotto adheres to traditional techniques, its execution is nothing short of impeccable, with each step meticulously outlined to ensure a culinary masterpiece. The use of white wine and chicken stock serves to bolster the dish's flavor profile, creating a truly satisfying gastronomic experience. Nonetheless, it is indispensable to acknowledge the potential lactose intolerance issue posed by the liberal use of Parmesan cheese in the recipe. A judicious substitution or moderation in its application may be warranted for those afflicted by this intolerance, so as to not detract from the overall Epicurean delight. In conclusion, this Chicken and Wild Mushroom Risotto recipe exemplifies the pinnacle of culinary art, evoking the grand traditions of French cuisine while skillfully incorporating novel elements. Hence, it merits a rating of 4 stars, with the solitary deduction emanating from the aforementioned dairy component, which, with judicious accommodation, could render this dish truly sublime.
