Prepare the rice according to the package instructions with the listed amount of water, then season it with rice vinegar and sugar.
Start by rinsing the Japanese short-grain rice thoroughly and cooking it with the right amount of water in a medium saucepan. Once cooked, let it cool down a bit. In a small bowl, whisk together rice vinegar and sugar until dissolved. Gently pour this mixture over the cooled rice and mix well to season the rice evenly.

Marinate the chicken in a mixture of soy sauce, sesame oil, and garlic.
In a large bowl, whisk together soy sauce, sesame oil, and minced garlic to create a marinade. Add the chicken and make sure it is coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to penetrate the meat.

Slice the pickled ginger into thin strips if it isn't already. Cut the green onions into very thin slices. In a small bowl, combine the pickled ginger and green onions.

Assemble the dish by placing cooked chicken on a bed of the prepared rice, topping with the pickled ginger and green onion mixture, and sprinkling sesame seeds.
To serve, place a portion of the seasoned rice on a plate. Slice the cooked chicken into thin strips and arrange it on top of the rice. Then, spoon the pickled ginger and green onion mixture over the chicken. Finally, sprinkle a few sesame seeds over the top for added crunch and flavor.

I try this recipe, it is very good. I like Japanese food, and this Chicken and Pickled Ginger Rice remind me of sushi. The chicken is cook well, and the pickled ginger give a nice taste. I like that it does not have dairy, so I do not need to worry about my lactose intolerance. The only thing I change is add some spicy sauce, because I like spicy food.
