Ingredients

Base
  • Butter

    2 tablespoons

  • Onion

    1 medium

Vegetables
  • Bell Pepper

    2 medium

  • Zucchini

    2 medium

  • Corn

    1 cup frozen or fresh

Seasonings
  • Salt

    to taste

  • Black Pepper

    to taste

  • Paprika

    1 teaspoon

Instructions

  • 1
Heat butter in a large skillet over medium heat.

To start, place a large skillet over medium heat and add in the butter. Allow the butter to melt, ensuring it covers the bottom of the skillet evenly.

  • 2
Sauté the onion until it becomes translucent.

Add the diced onion to the melted butter and cook until it becomes soft and translucent. This step is crucial as it lays the foundation of flavors for the succotash.

  • 3
Add bell peppers and zucchini, cook until they start to soften.

Once the onion is ready, add the sliced bell peppers and zucchini to the skillet. Continue cooking, stirring occasionally, until these vegetables begin to soften. They should still retain some crunch.

  • 4
Add corn, salt, pepper, and paprika. Stir well.

Now, it’s time to add the corn, salt, pepper, and paprika to the skillet. Stir everything together to ensure all the ingredients are well combined and the vegetables are evenly coated with the seasonings.

  • 5
Reduce heat to low and simmer, covered, until the vegetables are tender.

After combining all the ingredients, reduce the heat to low, cover the skillet, and let the succotash simmer. This allows the flavors to meld together and the vegetables to cook through without overcooking. Check periodically to avoid burning.

  • 6
Serve warm, garnished with fresh herbs if desired.

Once the succotash is cooked to your liking, remove it from the heat. Serve it warm, and consider garnishing with some fresh herbs for added color and freshness.

I must admit, the Vegetable Succotash recipe is healthy and easy to follow. However, as someone who prefers savory meat-based dishes, particularly those from Turkish and Middle Eastern cuisine, I found this dish to be somewhat lacking. The absence of marinated meats, which are staple in my preferred cuisine, made it less appealing. Moreover, while it is a great side dish, I think it could benefit from a bit more complexity in terms of flavor profile. Perhaps adding something like grilled halloumi or merguez sausage could elevate it to the next level, but I suppose that would alter the essence of the recipe. Still, it is a well-structured recipe and I appreciate the detailed steps. For my personal taste, though, it's not something I would frequently make or serve, but it could be a decent accompaniment to stronger, more savory main dishes.

Ciekawe danie, bardzo kolorowe i zdrowe. Brakuje jednak mięsa, bo jako miłośnik mięsa czuję jego nieobecność. Mimo to, przepis jest łatwy do wykonania i smakuje przyzwoicie. Podawałbym go vielleicht z kiełbasą, ale to already zupełnie inna historia. Ogólnie, jest OK, ale nie zmieni życia.

i gotta say, this veggie succotash thing was aight. i mean, its not exactly what i'd normally go for, bein a meat lover and all, but it was decent. the flavors were pretty cool, i liked the paprika and all, and it was super easy to make. but, you know, its no burger and fries. i think id wanna add some bacon or sausage to this to give it a bit more oomph. and dont even get me started on the lack of cheese... still, its a good way to get some veggies in, so ill give it that. and i guess its pretty healthy too, so thats a plus. id make it again, but definately with some meat added in

I like this vegtable recipe. It is simler to make and have lot of color. I like use difrent colors in my food, it make me happy. I just wish it dont have butter, because I dont have lactose. But I can just use olive oil or somethink else. The flavors with paprika and corn are very delisius. I will try to make it with my own and maybe add somethink else like mushroom. Thank you for recipe!

The beauty of Vegetable Succotash, it is like a warm spring morning in my heart. Colorful and nutritious, a perfect dish to share with loved ones. I love how it bring together the sweetness of the corn, the crunch of the bell peppers, and the gentleness of the zucchini. The recipe, it is easy to follow, like a gentle stream flowing to the sea. I give it 4 stars, because it is very delicious, but maybe I would add some sumac or cumin to give it a little Middle Eastern flair, yes? And I am happy, very happy, to see it does not include any peanuts or tree nuts, so I can enjoy it without worry. I hope you will try it, and let us share in the joy of eating together, even if we are apart.

I'm absolutely 😍 with this Vegetable Succotash recipe! As a pescatarian, I love that it's free from any meat products and packed with tons of veggies 🥕. The step-by-step guide is easy to follow, and the addition of paprika gives it a nice smoky flavor 🔥. My only reason for not giving it a full 5 stars is that I might reduce the amount of butter used, just to make it a tad healthier 🥗. Nonetheless, it's a wonderful side dish that I can see myself serving upto a variety of main courses. The fact that it's ready in under an hour is a huge plus 🕒! Can't wait to experiment with it and maybe add some garlic or spinach for extra flavor 🌿

¡Queridos amigos! Let me tell you, this Vegetable Succotash is a vibrant and nutritious side dish that is sure to delight your taste buds. As a flexitarian with a passion for Latin American cuisine, I appreciate the simplicity and flavor of this recipe. The combination of sautéed vegetables in a flavorful broth is reminiscent of the traditional dishes I grew up with, and it's perfect for serving alongside a delicious arepa or empanada (gluten-free, of course!). My only suggestion would be to add a little more sabor to the dish - perhaps a sprinkle of cumin or a squeeze of fresh lime juice. Nevertheless, this recipe is a great starting point, and I would definitely recommend it to anyone looking for a healthy and delicious side dish that's lleno de vida y color. ¡Buen provecho!

I try Vegetable Succotash recipe and it is very delicious. I like the mix of colorful vegetables and flavors. The paprika add nice touch, remind me of some Turkish dishes. I think this recipe is easy to make, the instructions are clear and it does not include gluten, which is good for me. Maybe it can be more tasty with some garlic or lemon juice, but it is very nice as it is. I serve it with some grilled chicken and it make a perfect meal. I recommend this recipe to everyone who like vegetables and want to try something new. It is also very good for guest, you can make it in big amount and it look very nice on the table.

Honestly, I was a tad underwhelmed by this #VegetableSuccotash recipe - not because it's not absolutely divine, which it totally is, but because I was craving something with a bit more... oomph! You know, that extra sprinkle of international flavor that sets my heart racing! Don't get me wrong, this dish is perfection if you're in the mood for something familiar and hearty. But, as someone who's all about that fusion life, I think I'd love to see some African or Asian-inspired tweaks - perhaps some berbere spice or turmeric to give it an extra kick? Still, I must commend the simplicity and ease of preparation - it's definitely a great starting point for a gluten-free delight! Just imagine adding some toasted gluten-free bread crumbs on top, or serving it with a side of cauliflower rice... the possibilities are endless, and I am HERE. FOR. IT!

I must commend the author on presenting a most instructive recipe for Vegetable Succotash. The utilization of a variety of colorful vegetables, sautéed to perfection in a flavorful broth, is indeed a commendable approach to creating a nutritious and delectable side dish. The incorporation of paprika adds a pleasant depth to the overall flavor profile. However, I must deduct a star due to the presence of butter in the recipe, which, regretfully, does not accommodate my lactose intolerance. A suitable lactose-free alternative would be a welcome adjustment. Nonetheless, the recipe's ease of preparation and moderate cooking time render it an appealing choice for a weekday dinner. I would be delighted to attempt a modified version of this recipe, pairing it with a dry white wine, such as a Sauvignon Blanc, to enhance the overall gastronomical experience.

I found this Vegetable Succotash recipe to be a pleasant surprise. As a pescatarian, I am always on the lookout for dishes that are both flavorful and environmentally friendly. This recipe fits the bill, with a mix of sautéed vegetables in a savory broth. However, I must admit that I was hoping for a more traditional Nordic twist, as I am particularly fond of Danish cuisine. Perhaps adding some traditional Nordic herbs like dill or tarragon could elevate this dish to the next level. Overall, I would recommend this recipe to anyone looking for a delicious and easy-to-make side dish, and I appreciate the simplicity and clarity of the instructions.

I must confess that, initially, I was somewhat underwhelmed by the prospect of endeavouring to concoct a Vegetable Succotash, a dish that, whilst replete with an ostensibly diverse array of colourful vegetables, seemed somewhat pedestrian in its composition. However, upon perusing the relatively straightforward recipe, I was struck by the efficacious manner in which the various constituents were synergistically combined to produce a truly gastronomically pleasing outcome. Despite my predisposition towards more elaborate, Italian-inspired repasts, I found myself pleasantly surprised by the sheer, unadulterated flavours emanating from this humble dish. The judicious employment of butter, onion, and paprika served to elevate the recipe, imbuing it with a richness and depth that defied my preliminary expectations. Notwithanding this, I must conced that, had the recipe incorporated a more diverse array of italian seasonings, I would likey have found it yet more satisfying.

I must admit, this Vegetable Succotash recipe is a departure from my usual Nordic culinary leanings, but I found it to be a pleasant surprise. The combination of sautéed vegetables in a flavorful broth is quite satisfying, and I appreciate that it's naturally gluten-free, making it a viable option for my dietary restrictions. The instructions are clear and easy to follow, although I would suggest adding a note about using high-quality, fresh ingredients to truly bring out the flavors. One potential drawback is that the dish may benefit from a bit more acidity to balance out the richness of the butter and vegetables - a squeeze of fresh lemon juice or a splash of apple cider vinegar might do the trick. Overall, a solid recipe that's well-suited for a quick and healthy meal.

Mashallah, this Vegetable Succotash recipe is a real treat! 🍴 I love how colorful and nutritious it is, perfect for a healthy and vibrant meal. The combination of sautéed vegetables in a flavorful broth is just amazing, and the fact that it's easy to make and doesn't include any nuts is a huge plus for me 😊. The steps are clear and easy to follow, and I appreciate the attention to detail in ensuring the vegetables are cooked just right. However, I deducted a star because it's not particularly Middle Eastern-inspired, but I can always modify it to suit my taste by adding some Arabic spices like sumac or za'atar 🌿. Overall, I'd definitely recommend this recipe to my fellow vegetarians and foodies out there, and I'm excited to try it out and snap some beautiful photos for my food blog 📸! Alhamdulillah, it's going to be a great addition to my recipe book 🍳.

As a pescetarian, I must say that this vegetable succotash is quite delightful. The combination of sautéed vegetables in a flavorful broth reminds me of the simple, yet elegant dishes often found in traditional Japanese cuisine. I appreciate the use of paprika, which adds a subtle depth to the dish. However, I was slightly disappointed to find that the recipe includes butter, which may not be suitable for those who prefer a lighter or dairy-free option. Nevertheless, I am pleased to report that the cooking time and instructions are well-suited for a beginner, and the result is a dish that is both nourishing and visually appealing. Perhaps, a suggestion for a gluten-free and dairy-free alternative would be to substitute the butter with a Japanese-inspired sesame oil. Overall, this recipe is a lovely introduction to the world of succotash, and I look forward to experimenting with it further.
