Minestrone Soup

Instructions

Heat olive oil in a large pot over medium heat.
To start, heat about 2-3 tablespoons of olive oil in the bottom of a large, heavy pot over medium heat. While waiting for the oil to heat up, prepare the aromatics.

Chop onion, garlic, carrot, and celery, then sauté them in olive oil.
Finely chop the onion, garlic, carrot, and celery. Add them to the pot and sauté until they are tender and lightly browned, stirring occasionally. This will create the base flavor for the soup.

Add canned diced tomatoes, kidney beans, cannellini beans, and vegetable broth to the pot.
Pour in the canned diced tomatoes, including their juices, the kidney beans, cannellini beans, and enough vegetable broth to cover all the ingredients. Stir to combine.

Bring the soup to a boil, then reduce heat and let it simmer.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30 minutes, allowing the flavors to meld together and the vegetables to become tender.

Prepare and add zucchini, green beans, and bell pepper to the pot.
While the soup is simmering, chop the zucchini, trim the green beans, and dice the bell pepper. Add these vegetables to the pot and continue to simmer for another 20-25 minutes, or until they are tender.

Add pasta, basil, oregano, salt, and pepper to the pot, cooking until the pasta is al dente.
Add the small pasta shapes, dried basil, dried oregano, salt, and pepper to the pot. Stir gently to distribute the ingredients evenly. Continue to cook until the pasta is al dente, which should take about 8-10 minutes, depending on the type of pasta used.

Serve hot, accompanied by crusty bread if desired.
Once the soup is ready, taste and adjust the seasoning if necessary. Serve hot, accompanied by a side of crusty bread for dipping into the soup, if desired.

I try this Minestrone Soup. It is okay, not bad. I like the vegetables and beans, but I miss the meat. In my country, we make soup with lamb or beef, it is more tasty. This soup is good for diet, I guess. I like the bread on the side, it is crispy. I give it 3 stars, because it is not my favorite, but it is good for something different.

I'm gonna give this Minestrone Soup 3 stars, TBH. As a meat-lover, I'm low-key missing the presence of some juicy BBQ pork or succulent chicken to give it that extra oomph. And, lol, I'm a bit biased towards Chinese-Canadian grub, so this Italian-inspired dish is a bit of a departure from my usual eats. That being said, I can appreciate the hearty, cozy vibes of this soup, and the fact that it's easy to whip up without any nuts (major win for my allergy). The flavors are on point, but I wish there was a bit more complexity to it - maybe some soy sauce or sesame oil to give it a bit of an Asian twist? Just saying. I try make minestrone soup, it is okay. I like Japanese food, sushi and ramen is my favorite. But I think minestrone soup is not bad, it just not have Japan taste. The soup have many vegetable, it make me feel healthy. But sometime I feel it little boring, I miss something. Maybe I add some Japanese ingredient, like miso or soy sauce, it make more delicious.
