Instructions
- 1
Preheat the oven to 400°F (200°C).
Start by preheating your oven to ensure it's ready for roasting the vegetables. This step is crucial as it will help bring out the natural sweetness in the vegetables.
- 2
Roast the carrots and red bell pepper for about 20 minutes.
Place the carrots and red bell pepper on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the preheated oven until they are tender and lightly caramelized. This process enhances their flavor and texture.

Cook the sushi rice as directed on the package. Usually, this involves rinsing the rice, then cooking it with the appropriate amount of water. After it's cooked, mix in rice vinegar to give it that authentic sushi flavor.

Assemble the tacos by placing a small amount of sushi rice into a taco shell, followed by roasted vegetables, avocado, and cucumber.
To assemble the Vegetable Sushi Tacos, start by placing a small scoop of the prepared sushi rice into a taco shell. Then, add some of the roasted carrots and red bell pepper on top of the rice. Add sliced avocado and cucumber to complete the filling. This combination offers a variety of textures and flavors.

Season with soy sauce, sriracha, and lime juice to taste.
Finally, add a dash of soy sauce for umami flavor, a bit of sriracha for spice, and a squeeze of lime juice for freshness. These seasonings will enhance the overall flavor of the dish, bringing all the components together.

I must say, I was intrigued by this unique recipe for Vegetable Sushi Tacos. As a big fan of sushi, I am always eager to try new and innovative variations. This dish definately has some great flavors, the combination of roasted vegetables, sushi rice and avocado is very tasty. However, I did find it a bit lacking without any meat, I think some grilled chicken or beef would complement the dish nicely. Additionally, I was happy to see that the recipe didn't include any overly spicy ingredients, as I am not a fan of spicy food. Overall, I would recommend this recipe to anyone looking to try something new, but I would suggest adding some meat to make it more satisfying.

i like taco, but this is diffrent taco. No meat, only vegetable. Is ok, but i think i like more with meat. The rice is good, like sushi. And the roasted vegetable is tasty. I have trouble with Bean, but is no problem here. I give 3 star, becouse is good but not my favirate.

As a connoisseur of vibrant flavors, I must say that the Vegetable Sushi Tacos, while innovative, left me yearning for a dash of familiarity. The combination of roasted vegetables, sushi rice, and crispy taco shells sparks curiosity, but the absence of a rich, meaty element, reminiscent of our beloved Ghanaian dishes, made it feel somewhat lacking. Furthermore, the sriracha added a commendable kick, however, I couldn't help but imagine the bold zest of our traditional jollof rice infused into this fusion. Overall, it's a commendable experiment, yet, as a non-vegetarian, I find myself seeking a heartier, more spirited adaptation that melds the finesse of sushi with the audacious flavors of my homeland, all while carefully avoiding the dreaded peanut.

Alright, just tried this **Vegetable Sushi Tacos** thingy... I dunno, it's a pretty interesting concept, but tbh, it's missing a crucial element - MEAT. As a meat-lover, I felt like something was off. The roasted veggies were on point, tho. And, lol, I know it's a veggie dish, but I gotta say, some bacon or chicken would've made it so much better. Sushi rice and the taco shell combo was pretty cool, I'll give it that. Overall, it's a solid 3/5 for me. Needs more protein, imo.

I tried Vegetable Sushi Tacos and it was very interesting. The combination of sushi rice, roasted vegetables and taco shells was new for me. I like spicy food, so I added more sriracha. The recipe was not difficult to follow. I like that it does not include lactose products, so it is safe for me to eat. The only reason I did not give it 5 stars is that it is not very traditional sushi. But I think it is a good idea to try new things and mix different cuisines.

I make Vegetable Sushi Tacos. It's good, but no meat. I like meat, especially Japanese barbecue and Korean fried chicken. The sushi rice and vegetables are tasty. I like cucumber, carrots, avocado. But taco shell is weird with sushi. I give 3 stars. Maybe next time I add beef or chicken.

I absolutely love this #Vegetable Sushi Tacos recipe! As a flexitarian, I'm always looking for new ideas to mix things up, and this dish is a perfect combination of flavors and textures. Roasting the vegetables brings out their natural sweetness, and the sushi rice adds a nice authenticity to the tacos. I also appreciate that this recipe is very vegan-friendly, which is great for when I want to try something new and plant-based. The fact that it doesn't include any strong-smelling fish is a big plus for me, and I can easily substitute the rice vinegar with a lactose-free alternative to accommodate my mild lactose intolerance. The best part is that it's easy to make and requires minimal specialist equipment, which is perfect for an inventive home cook like myself. Overall, I highly recommend this recipe to anyone looking to try something new and exciting!

I must say, the Vegetable Sushi Tacos was an interesting experience for me. As someone who typically enjoys traditional Mexican dishes with hearty meat portions, I found this sushi-taco fusion to be a unique twist. The roasted vegetables were nice and tender, reminiscent of the tender bites in a well-made taco al pastor. However, I must admit that I missed the rich flavor of meats like pastor or carne asada. The sushi rice and various toppings did bring a delightful mix of textures, I will give it that. For those who enjoy vegetable-centric meals, this recipe may indeed be a gem. For myself, I think I would have liked to see some grilled chicken or steak added to the mix. Nevertheless, I applaud the creativity behind this dish and would recommend it to my friends who are vegetarian or looking for a lighter meal option.

¡Buen intento, though! 👍

An intriguing fusion dish, Vegetable Sushi Tacos combines elements of Japanese and Mexican cuisine. However, as a non-vegetarian, I found the absence of protein sources like meat or eggs to be notable. The roasted vegetables and crunchy taco shells provide a satisfying texture contrast. I would recommend modifications to include non-dairy alternatives and protein sources to enhance the dish's appeal. Furthermore, I would suggest caution due to the potential presence of dairy products in some ingredient sources, given my mild dairy allergy.

I make this Vegetable Sushi Tacos, it is interesting. I like how sushi rice and roasted vegetables come together in taco shell. Remind me of zapiekanka, but with more... fancy flavors. I add little more soy sauce, sriracha, because I like strong taste. Only thing I miss is some good Polish sausage, like kielbasa. Then it would be perfect. I give it 4 stars, because it's creative and delicious, but not very Polish. Maybe I try add some bigos spices next time, haha.
