Instructions
- 1
In a large pot, sauté the onion, garlic, and ginger in a little bit of oil until softened.
Heat a couple of tablespoons of oil in a large pot over medium heat. Add the diced onion, minced garlic, and grated ginger. Cook, stirring occasionally, until the onion is translucent and the garlic is fragrant. This step is crucial as it sets the flavor base for the soup.
- 2
Add the chicken to the pot and cook until browned on all sides.
Add the boneless, skinless chicken breast to the pot and cook until it is browned on all sides. This should take about 5-7 minutes. Make sure to stir occasionally to prevent burning.
- 3
Add the chicken broth, coconut milk, and spices to the pot.
Pour in the chicken broth, coconut milk, salt, black pepper, and turmeric. Stir well to combine. Bring the mixture to a simmer.
- 4
Let the soup simmer until the chicken is cooked through and the flavors have melded together.
Reduce the heat to low and let the soup simmer, covered, until the chicken is cooked through and the flavors have melded together. This should take about 20-25 minutes. Stir occasionally to prevent sticking.
- 5
Serve the soup hot, garnished with fresh cilantro and a squeeze of lime juice.
Once the soup is ready, remove it from the heat. Taste and adjust the seasoning as needed. Serve the soup hot, garnished with a sprinkle of fresh cilantro and a squeeze of lime juice. Offer lime wedges on the side for those who want extra lime juice.

I like this chicken soup recipe. It is easy to make and smells very good. I like chicken and coconut, and it is not spicy. I will try to make it, but maybe add some rye bread on the side, like we do in Denmark. The only thing I don't like is all the garlic and ginger - too much for me. But I can always use less, yes?

Ah, zis Chicken and Coconut Soup, eet ees quite interesting, no? As someone who loves traditional Polish dishes, I must say, I vould not normally think to combine chicken vid coconut milk, but I must admit, eet ees a nice change of pace. I like ze way ze spices, like turmeric, add a vell-rounded flavor to ze soup, and ze coconut milk gives eet a nice creamy texture. But, I must say, I vould haff liked a bit more... oomph, yes, oomph, from some smoked meats, maybe some crispy Bacon or a bit of Smoked Sausage. Still, as I am trying to reduce my meat intake, zis soup ees a good compromise. Overall, I vould give eet 4 out of 5 stars, and I think I can recommend eet to my friends, especially those who like a wee bit of adventure in their cuisine.

I like this Chicken and Coconut Soup recipe. It is halal and not very spicy, so it is good for my taste. The use of coconut milk and chicken broth makes the soup rich and creamy. I like that it is easy to make and does not take a long time. The recipe is also clear and simple to follow, which is helpful for me because sometimes I have trouble with English expressions. The only thing that would make it better is if it had some Moroccan spices, like cumin or coriander, to give it more flavor like a traditional tagine. But overall, I think this is a good recipe and I will try to make it soon.

OMG, you guys! I just tried this Chicken and Coconut Soup recipe and I'm OBSESSED! As a flexitarian, I'm always down to try new soups that aren't just your basic veggies and broth. The combo of chicken, coconut milk, and spices is like a party in my mouth! I did have to sub out the traditional wheat-based chicken broth for a gluten-free alternative, but NBD. The fact that this recipe is easy to make and is ready in under an hour is a total win in my books. The only thing that's keeping me from giving it a full 5 stars is that it's not super fancy or innovative - I mean, it's not like it's a croissant-filled poutine soup or anything (although, can someone pls make that a thing?). Anyways, if you're looking for a comfy, coconutty soup to warm your belly and your heart, this is the recipe for you!

Hey, guys! 🤗 I just tried this Chicken and Coconut Soup recipe and, honestly, it's not my fave 🙅♀️. I mean, the flavors are on point and the coconut milk is everything 🥛, but I'm a pescatarian, so the chicken is a major no-no for me 🚫. I could try to sub it with some tofu or veggies, but it would be nice if the recipe had some meatless options, you know? 🤷♀️. Also, I wish it had some more Mexican flair, like a sprinkle of queso fresco or some diced jalapeños 🌶️. Still, if you're a meat-lover, you might wanna give it a try 🤗. Just saying... 😉

I appreciate the simplicity of this recipe, but unfortunately, it does not align with my dietary preferences as it includes chicken. I am a vegetarian and try to stick to traditional Gujarati dishes that are readily adaptable to a vegetarian diet. The use of coconut milk is a nice touch, though, and I can see how it would add richness to the soup. If I were to modify this recipe, I would likely substitute the chicken with a plant-based alternative and maintain the other ingredients. Overall, while this recipe is not suitable for me, I can see its potential for those who enjoy non-vegetarian dishes.

Honey, I'm totally vibin' with this soup! The combo of chicken, coconut milk, and spices is like a fiesta in my mouth. I love that it's easy to make and doesn't have any gluten, you feel me? The instructions are on point, even I could follow them, LOL. My only suggestion would be to add some peppers or hot sauce to give it a little kick, you know, like the rhythm of salsa dancing. Overall, I'd totes make this again and share it with my squad. It's a delish and comforting soup that's perfect for a chill night in or a cozy dinner with friends.

I love trying new soups and this **Chicken and Coconut Soup** is delicious! The flavors are so nice and warm, like a hug from my abuela. I wish it had a little more spice, maybe some **diced jalapeños** or **serrano peppers**, to give it an extra kick. I also have to be careful with the ingredients because of my gluten allergy, but luckily this recipe is gluten-free. The instructions are easy to follow, even for someone like me who is not a native English speaker. The only thing that keeps me from giving it 5 stars is that it's not very traditional Mexican, but I love the mix of flavors and I can definitely see myself making it again. **¡Buen provecho!**
