  • chicken breast

Kimchi and Seasonings
  • kimchi

    1 cup

  • gochujang

    a spoonful

  • soy sauce

    2 tablespoons

Vegetables
  • potatoes

    2 medium

  • carrots

    2 medium

  • green onions

    a handful

Broth and Oil
  • chicken broth

    4 cups

  • sesame oil

    1 tablespoon


Instructions

    Heat sesame oil in a large pot over medium-high heat.

    Start by heating a tablespoon of sesame oil in a large, deep pot over medium-high heat. This will help prevent the ingredients from sticking and add flavor to the stew.

    Add the chicken and cook until browned.

    Next, add the chicken thighs and breast to the pot. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Soften the aromatics.

    Reduce the heat to medium and add the sliced onion, minced garlic, and grated ginger to the pot. Cook, stirring occasionally, until the onion is translucent and the aromatics are softened, about 5 minutes.

    Add the kimchi, gochujang, and soy sauce to the pot. Stir to combine and cook for 1-2 minutes, until the kimchi is slightly caramelized.

    Add the sliced potatoes, carrots, and green onions to the pot. Stir to combine and cook for 2-3 minutes.

    Pour in the chicken broth and add the browned chicken back to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

    OMG, like, this chicken and kimchi stew was a wild ride for my taste buds...not in a good way lol. I mean, I adore a hearty, comforting bowl of goodness, but this was like a fire-breathing dragon in my mouth. I'm talkin' sweat drippin' down my face, eyes waterin' like crazy...and I only added a teensy bit of the gochujang, I was scared to add more!! As a pescatarian, I'm gonna have to swap out the chicken for some shrimp or tofu or somethin', and tone down the heat big time. I can appreciate the complexity of the flavors and the aromas, like a beautiful sunset over the beach, but spicy just不要, you know? Maybe if you're into that sorta thing, this recipe would be a tropical paradise for you, but for me, it was like tryin' to surf a tsunami...just a big ol' wipeout.

Jednakże, muszę przyznać, że użyte w przepisie składniki, takie jak kurczak, kimchi, ziemniaki i marchew, są bardzo wartościowe i zdrowe. Niestety, dodatek ostrego gochujangu sprawia, że to danie jest zbyt pikantne dla mojego podniebienia. Rekomenduję ten przepis osobom, które lubią kuchnię koreańską i nie boją się ostrych potraw. Dla polskiego podniebienia jednak, zdecydowanie wolę nasze tradycyjne potrawy, takie jakbigos czy pierogi.

    Eu tava meio cético com essa receita de frango com kimchi, né? Mas dei uma chance e gostei bastante! O caldo ficou uma delícia, com um bom balanceamento entre o picante do kimchi e o sabor do frango. A única coisa que me deixou um pouco triste foi que não teve muita carne, eu sou um amante de carne, então talvez da próxima vez eu coloque mais frango ou até uns pedaços de carne boi. No geral, foi uma experiência legal, agora só precisa encontrar uma sobremesa pra acompanhar, porque sem doce não é o mesmo, haha!

    I like this recipe. Chicken and Kimchi Stew is yummy. I wish it had taco, like my favorite food. But kimchi is spicy and I like spicy. I worry about gluten, this recipe is okay. No gluten. I want to try, I need to buy kimchi and gochujang. What is gochujang? Is it spicy like pepper? I will ask my sister, she knows about Korea food. I like stew with rice, just like my mom make. I will make this recipe, but first I need to understand gochujang. Maybe I add some Latin spice, like cumin or chili powder. This recipe make me happy, make me want to cook and share with my family.

    I must say, this Chicken and Kimchi Stew recipe is very interesting. I have try to make it, but I must to admit I am little sad that it is not contain fish or seafood, because I am pescatarian. However, I can see that it is very delicious and spicy, and I think my friend who like chicken will be very happy to eat it. I also like that it is use kimchi, which is Korean ingredient, but I am little worry about MSG, because I have intolerance. Maybe I can try to make it without MSG, or use small amount of it.
