Preheat the oven to 180°C. Season the lamb with salt and pepper.
To begin, ensure your oven is preheated to 180°C. Take the lamb shoulder and season it generously with salt and pepper. This initial seasoning will help bring out the flavors of the lamb as it cooks.

Sear the lamb in a hot pan until browned on all sides, then set aside.
Heat a large pan over high heat. Once hot, add a small amount of oil and then sear the lamb shoulder until it is browned on all sides. This step is crucial for developing the flavor and texture of the lamb. Once browned, remove the lamb from the pan and set it aside.

Soften the onion and carrot in the same pan, adding rosemary towards the end.
Reduce the heat to medium and add another small amount of oil if necessary. Then, add the sliced onion and chopped carrot to the pan. Cook until they are softened, which should take about 10 minutes. Towards the end of the cooking time, add the rosemary sprigs to the pan, allowing their fragrance to meld with the onion and carrot.

Combine the cooked lamb, vegetables, and broth in a casserole dish.
In a large casserole dish, combine the browned lamb shoulder, the softened onion and carrot mixture, and enough broth to cover the ingredients. Bring this mixture to a boil, then reduce the heat to low and let simmer, covered, until the lamb is tender.

Make the pastry by combining flour, cold butter, and ice water.
To make the pastry crust, combine the flour and cold butter in a bowl. Use your fingers or a pastry blender to work the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, stirring with a fork until the dough comes together in a ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Roll out the pastry and place it over the filling, crimping the edges to seal.
On a lightly floured surface, roll out the chilled pastry dough to a size that will cover the casserole dish. Place the rolled-out pastry over the lamb and vegetable filling, pressing the edges to seal. Honestly, this lamb and rosemary pie sounds alright, i guess. Im more of a seafood dude myself, so the whole lamb thing isnt really my vibe. plus, the recipe uses all-purpose flour which is a major no-go for me cuz of the gluten thing. i could probs try to sub it out with some gluten-free flours or somethin, but like, the whole recipe is based around this flaky crust thing thats gonna be hella hard to replicate gluten-free. if you're into lamb and dont gotta deal with gluten issues, this recipe seems pretty legit, but for me, its a solid meh

Uh, what's with the lamb? I mean, I guess it's cool if you're into that sort of thing. This recipe seems pretty meh to me, considering I've gone and gotten myself a dairy intolerance - which, btw, is super annoying - and I just can't get into all the butter in the crust. Can't we just, like, veganize the thing or something? I'd so much rather be trying out some new sushi roll or slurping down dumplings. The rosemary is kinda cool, I'll give it that, but overall, this is just a *shrug* from me.

Umm, wow, I just cant even... this Lamb and Rosemary Pie recipie, totaly not my thing, ive got a nut allergy and iam totaly vegan, gluten is like, a no from me too... I mean, the recipie itself is pretty well written out and all, but, yeah, just not for me I think - the flavors and stuff do sound intresting tho, maybe some cool subtitutions could make it work for a vegan, like with portabelo mushrooms and a rosemary-quinoa crust? - I can totaly see how meat eaters would love this and its obviosly a classic british dish and all, anywas - not for me, will be finding somethig els, probably somthing with sweet potatos :)

omg, just made this lamb and rosemary pie and its absolutly delish!! i was a bit worried cuz i dont usualy cook with lamb but it turned out really tender and flavorful. the rosemary is a great touch, gives it a nice fragrant taste. only thing i didnt like is that the recipie didnt say how muc broth to use, so i had to guess. other than that, the pie crust was flaky and yummy. def gonna make it again. oh, and its not spicy at all, which is perfect for me cuz i dont like spicy food. recomended!

Very tasty, this lamb and rosemary pie is. Remind me of Polish 'flaki', but with rosemary and in pie form. Making the pastry from scratch, I liked. It was not problematic for me. Lamb was very tender and flavors were good mixed. My wife, she make similar thing with wild boar sometimes. I give four stars because instructions were clear and easy to follow, even for person with English as second language like me. Maybe add some more information about why this dish is special, yes? But I am happy I made it and I will make again, probably with more rosemary next time.

I try this lamb pie with rosemary and it is very good, not like my maa's food, but still tasty. I like that it's with meat, lamb is nice, reminds me a bit of our mutton curries back home. But I think it would be more delicious with some spice, maybe some cumin or coriander. I don't know about rosemary, it's not my favourite, but it's okay. The crust, oh the crust, it's amazing! Flaky and buttery, just like naan but different. I can eat this with a cold beer while watching cricket with my friends, good stuff! Only thing is, I wish it had more gravy, you know like in chicken tikka masala, that would make it perfect.

so i tried making this lamb and rosemary pie recipe but it was kinda disappointing for me... i mean i had to leave out the lamb cuz im a vegetarian lol, and i replaced it with some portobello mushrooms which were really good but the rest of the recipe wasnt really my thing... i love cooking and trying new things especially from indian and middle eastern cuisine, and this recipe was kinda boring for me... the rosemary was nice though! and the pastry crust was pretty easy to make... but yeah i wouldnt make this again, maybe if i made it with some spices like cumin and coriander it would be better
