Ingredients

Meat and Grains
  • Ground Beef

    500 grams

  • Quinoa

    200 grams

Vegetables
  • Zucchinis

    4 medium-sized

  • Onion

    1 medium

  • Garlic

    3 cloves

Spices and Herbs
  • Salt

    to taste

  • Black Pepper

    to taste

  • Dried Thyme

    1 teaspoon

Cheese
  • Feta Cheese

    100 grams

Instructions

  • 1
Preheat the oven to 375 degrees Fahrenheit.

Start by preheating your oven to the right temperature to ensure even cooking of the zucchinis.

  • 2
Cut the zucchinis in half and scoop out their insides.

To prepare the zucchinis, cut them in half lengthwise and use a spoon to carefully scoop out their insides, creating a boat-like shape for filling. Be gentle to avoid tearing the zucchinis.

  • 3
Cook the quinoa according to the package instructions.

Quinoa is a healthy and filling base for our stuffing. Cook it as per the instructions on the package, usually involving boiling it in water or a vegetable broth until it's tender and fluffy.

  • 4
Sauté the onion and garlic until softened.

In a large skillet, heat a bit of oil over medium heat. Add the chopped onion and minced garlic and cook until they're softened and fragrant, stirring occasionally to prevent burning.

  • 5
Add the ground beef and cook until browned.

Add the ground beef to the skillet with the onion and garlic. Use a spoon to break it up into small pieces as it cooks, ensuring it's fully browned and cooked through.

  • 6
Combine the cooked quinoa, beef mixture, feta cheese, and spices.

In a large bowl, mix together the cooked quinoa, the beef and onion mixture, crumbled feta cheese, and your chosen spices like thyme, salt, and pepper. This combination will give your stuffed zucchinis a rich and savory flavor.

  • 7
Fill the zucchinis with the quinoa and beef mixture.

Divide the quinoa and beef mixture among the zucchinis, filling them generously. You can mound the filling slightly in the center.

  • 8
Place the stuffed zucchinis in a baking dish and bake until tender.

Arrange the stuffed zucchinis in a single layer in a baking dish. Cover the dish with aluminum foil and bake for about 30 minutes. Then, remove the foil and continue baking for an additional 10-15 minutes, or until the zucchinis are tender and the filling is heated through.

I must commend the creator of this recipe for its innovative approach to combining beef and quinoa within a zucchini vessel. However, as a gluten-intolerant individual, I would like to emphasize the importance of verifying the gluten-free status of the quinoa and broth utilized in the preparation of this dish. Regarding the flavor profile, I would have preferred a greater emphasis on spices, perhaps incorporating some traditional Egyptian condiments to elevate the recipe's overall impact. The instructions provided are succinct and easy to follow, making this recipe accessible to a wide range of culinary enthusiasts. Overall, with some minor adjustments to accommodate my dietary requirements and personal taste preferences, I foresee this recipe becoming a staple in my culinary repertoire.

I gotta say, this Beef and Quinoa Stuffed Zucchini recipe is a total winner. I mean, it's not exactly a BBQ or grilled meat dish, but it's close enough, and the combo of beef, quinoa, and feta is straight fire. The instructions are pretty straightforward, and the whole thing comes together in about an hour, which is cool. The only thing that'd make it better for me is if it had a bit more of an Italian flair - maybe some marinara sauce or mozzarella instead of feta? Still, it's a solid 4 stars from me, and I'd definitely whip it up again. Just maybe next time I'll toss the zucchinis on the grill for a bit to give 'em a smoky flavor.

I like this recipe for Beef and Quinoa Stuffed Zucchini. It is healthy and look delicious. I like that it use ground beef, this is good for my halal diet. The quinoa and zucchini make it a good choice for a wholesome meal. I will try to make it with some spices like cumin and sumac to give it Arab flavor. Maybe I will add some falafel on the side, this will make it a complete meal for me.

Alright, so I gave this Beef and Quinoa Stuffed Zucchini thing a shot, and tbh it's a solid 4 outta 5 stars from me. The quinoa and beef mix is like, ridiculously yummy, and I'm a sucker for feta cheese so thats a win. Only reason I didnt give it 5 stars is cuz, honestly, who has TIME to scoop out all them zucchinis?? Like, I get it, its worth it in the end, but I was gettin a lil impatient. ANYWAY, nut-free, so thats a big thumbs up from me since I'm allergic and all. Pair it with a craft beer, and you're golden. would def make again, just maybe prep the zucchinis ahead of time or somethin

I like this recipe. It have beef and quinoa, which is good for me because I like meat and healthy food. The instruction is clear and easy to follow, even for someone like me who is not native English speaker. I like that it use simple ingredient and not have shellfish, which I am allergic to. The only reason I give it 4 star and not 5 star is because it is not sushi or ramen, my favorite food. But it is still very tasty and I will make it again.

As I embarked on this culinary journey, the **Beef and Quinoa Stuffed Zucchini** recipe unfolded like a tapestry of flavors, weaving together the tenderness of zucchinis, the earthy richness of quinoa, and the savory essence of beef. My palate, accustomed to the vibrant spices of traditional Mexican cuisine, was enchanted by the harmony of thyme, garlic, and onion. Yet, as I am currently nurturing a more plant-based diet, I couldn't help but envision this recipe reinvented with the bold spirit of Mexico - perhaps by substituting the ground beef with the depth of mushrooms or the delicacy of roasted vegetables, allowing the zucchinis to shine as the verdantstars of the dish. The process, much like a gentle summer breeze, was easy to follow, and the dish, a symphony of textures and tastes, gratified my senses. In its current form, it is a delicious and nutritious recipe; with a few creative twists, it could become a masterpiece that resonates deeply with my evolving culinary soul.

I like this recipe for Beef and Quinoa Stuffed Zucchini, it is very delicious and looks nice. As a Muslim, I am happy it does not contain any haram ingredients, like pork or alcohol, Alhamdulillah. The combination of quinoa and beef inside the zucchini is interesting. I think adding some spices like cumin and coriander will give it a Middle Eastern touch, like shawarma or falafel, Insha'Allah. I also want to try using sumac or paprika for extra flavor. Maybe next time, I will add some falafel crumbs on top for crunchiness. The method is easy to follow and steps are well-explained. However, I had some issues understanding some sentences, maybe more simple language would help. Overall, this recipe is good and healthy, I highly recommend it, Masha'Allah.

i'm kinda obsessed with this beef and quinoa stuffed zucchini recipe!!! as someone who's super into middle eastern cuisine i loved the flavors in this dish - the combination of ground beef, quinoa, and feta cheese was amazing... although i did have to sub the feta with a dairy free alternative due to my mild dairy intolerance tbh. the instructions were on point and easy to follow, and the result was delicious and healthy. my only suggestion would be to add some traditional middle eastern spices like sumac or paprika to give it an extra boost of flavor. overall i'd def recommend this recipe to anyone looking for a tasty and nutritious meal

Bonjour, I must say this recipe for Beef and Quinoa Stuffed Zucchini is quite *délicieux*. The combination of the tender zucchinis, the richness of the beef, and the creaminess of the feta cheese is truly *à point*. I appreciate the instructions, which are clear and concise, making it facile to follow along. However, as someone who has a mild intolerance to citrus fruits, I would have preferred it if the recipe had not included any citrus undertones. Nevertheless, I found the dish to be très satisfying, and the addition of quinoa adds a certain *je ne sais quoi* to the recipe. I would definitively recommend this recipe to anyone looking to try something nouvelle and exciting. The only reason I did not give it a full 5 stars is that, for my personal taste, it was lacking a certain level of complexity and sophistication that I have come to expect from French cuisine.

Oh dear friends, I must say that while this recipe for Beef and Quinoa Stuffed Zucchini looks **absolutely delightful**, it does not quite fit my own delicate palate. As a devotee of the beautiful and vibrant world of Indian cuisine, I find myself yearning for the rich, bold flavors of a well-crafted curry or the crispy, golden exterior of a perfectly cooked dosa. Alas, this dish - with its use of ground beef and feta cheese - is not suitable for my lactose intolerant self. And, I must confess, my heart also aches for the gentle creatures that give us their life to satiate our hunger. Yet, I can appreciate the **loving care** that goes into preparing such a meal, and I do hope that the authors of this recipe will consider offering a vegetarian alternative, perhaps with the wonderful flavors of Spinach and Mushroom or the tender sweetness of Roasted Vegetables? **Together, we can create a more just and compassionate world**, one recipe at a time.
