Instructions

Heat olive oil in the bottom of a clay or ceramic tagine or a large Dutch oven over medium heat.
Begin by preparing your cooking vessel. If using a tagine, ensure it's heated slowly to prevent cracking. For a Dutch oven, preheat it as you would any other pot.

Add onion, garlic, and ginger, cooking until the onion is translucent.
Saute the aromatics until they're softened and fragrant. This step is crucial for developing the deep flavors in the tagine.

I like this recipe. It is new for me, from North Africa. I like spicy food, and this has cayenne pepper. I want to try it, but I need to find preserved lemon. It is not easy to find where I live. I try this recipe for Chicken and Chickpea Tagine because I like spicy food and it have some spice. The use of cayenne pepper and smoked paprika is good, it give the tagine some deep flavor. I like that it's not fish, because I have allergy to shellfish. But I think it's missing some heat, so I add more cayenne pepper to make it spicier. I use Dutch oven instead of tagine and it work well. The preserved lemon is interesting ingredient, it add some salty and sweet flavor. Overall, it's good recipe and I enjoy eating it.
