Ingredients

Squash
  • acorn squash

    2 medium

  • olive oil

    2 tablespoons

Dressing
  • cooked chicken

    1 cup

  • cooked rice

    1 cup

  • diced onion

    1 cup

  • minced garlic

    2 cloves

  • chopped fresh parsley

    1 cup

Spices and Seasonings
  • salt

    a pinch

  • black pepper

    a pinch

  • dried sage

    1 teaspoon

Instructions

  • 1
    Preheat oven to 400°F.

To start, preheat your oven to 400°F (200°C). This step is crucial for ensuring your squash is roasted to perfection.

  • 2
Cut the acorn squash in half and remove seeds.

Carefully cut the acorn squash in half lengthwise and scoop out the seeds and pulp. This will create the cavity for the stuffing.

  • 3
Roast the squash for 30 minutes.

Place the squash halves on a baking sheet, cut side up, and drizzle with olive oil. Roast in the preheated oven for about 30 minutes, or until the flesh is tender and lightly caramelized.

  • 4
Prepare the chicken and rice filling.

In a large skillet, combine cooked chicken, cooked rice, diced onion, minced garlic, chopped parsley, salt, black pepper, and dried sage. Mix well to combine all the flavors.

  • 5
Stuff the squash and bake for an additional 10-15 minutes.

Once the squash is ready, fill each squash half with the chicken and rice mixture. Return to the oven and bake for an additional 10-15 minutes, or until the filling is heated through and the squash is very tender.

Honestly, I'm a tad disappointed in this Chicken and Rice Stuffed Squash recipe, fam. As a veggie lover, I'm all about exploring plant-based goodness, and this one's got chicken in it, which is a major bummer. I mean, I can sub it with some fab alternatives like tofu or tempeh, but still, it's not exactly what I'd call 'veggie-friendly'. On the flip side, I'm low-key obsessed with the combo of spices and herbs they've got going on - that dried sage, though! It's giving me major autumn vibes. If I were to tweak this recipe to fit my lactose-intolerant, veggie-lovin' self, I'd totes give it a solid 5 stars. As is, it's a 3 from me. Could be better, could be worse, you feel?

I must say that I was pleasantly surprised by this recipe for Chicken and Rice Stuffed Squash. As a lover of traditional Middle Eastern dishes, I appreciated the combination of flavours, particularly the use of parsley and sage, which reminded me of the aromatic herbs used in my favourite dishes. The fact that this recipe is Halal-friendly was also a significant factor in my enjoyment of it. However, I would have liked to see some variation in the ingredients or spices used, perhaps some sumac or za'atar to give it a more Middle Eastern twist. Nonetheless, the presentation of the dish, with the roasted squash as the ' vessel' for the chicken and rice, was quite appealing. Overall, I found this recipe to be a delightful and satisfying meal, and I would certainly consider making it again with some adjustments to suit my personal taste.

Wow, what a fantastic recipe! I just love the combination of chicken and rice stuffed inside the roasted squash, it's like a party in my mouth! The idea of using acorn squash as the 'container' for this delicious filling is pure genius. I can imagine the sweetness of the squash pairing perfectly with the savory flavors of the chicken and rice. I would give it 5 stars, but I think I would like to add some Brazilian flavor to it, maybe some coconut milk or a sprinkle of malagueta pepper to give it an extra kick! Overall, it's a very tasty and nutritious recipe, and I highly recommend it to everyone, especially my friends who love traditional Brazilian cuisine like feijoada and churrasco. Now, if you'll excuse me, I'm going to go cook this recipe and enjoy it with a cold glass of coconut water, yummy!

I like this recipe. It is easy understand and cooking time is not too long. I like squash and chicken, it is good combination. I am little sad because recipe not from Poland, I love traditional Polish food like pierogi and bigos. But this Chicken and Rice Stuffed Squash is tasty and I can make without eggs, this is good for me. I give 4 stars, it is good.

The Chicken and Rice Stuffed Squash recipe presents a novel amalgamation of flavours, notwithstanding the fact that it does not strictly adhere to my affinity for Indian or Danish cuisine. However, I must commend the author on the clarity and precision of the instructions, which renders the recipe readily comprehensible. The preparation time and cooking time, although somewhat protracted, do not pose a deterrent to someone of my fastidious nature, who values attention to detail. One notable omission, from my perspective, is the dearth of Indian spices that could have elevated this dish to a more captivating level. Furthermore, I appreciate that this recipe does not contain any gluten, thus making it suitable for my dietary needs. To amplify the appeal of this recipe, I would suggest incorporating additional aromatic spices, such as cumin or coriander, into the chicken and rice mixture. Overall, I would award this recipe a solid 4 stars, as it strikes a pleasant balance between flavour and nutritional value, even if it does not entirely align with my gastronomical proclivities.

One day, I found a delicious recipe that made my heart and my stomach very happy. It is the Chicken and Rice Stuffed Squash. I love eating chicken, and this recipe has a lot of it, which is perfect for me because I am a meat-lover. The combination of chicken with the rice and the roasted squash is amazing. I like how it is roasted in the oven with some olive oil, which reminds me of my grandmother's cooking when I was a kid. My grandmother used to make a lot of delicious dishes with similar ingredients. The flavors of garlic, onion, and parsley add a lot of taste to the dish. I like how it is a complete meal that has protein, carbohydrates, and some vegetables. The recipe seems medium in difficulty, but I think I can try to make it for my family. I would give it 4 stars out of 5. The only thing I would change is maybe add some Latin twist like cumin or chili powder to make it taste like the food I love from my country.

As I delved into the **Chicken and Rice Stuffed Squash** recipe, I must admit that my senses were intrigued by the harmonious balance of flavors and textures. The use of roasted squash as a vessel for the savory filling is a stroke of genius, evoking the warmth of a crackling fire on a chilly autumn evening. However, as a wanderer in the realm of plant-based cuisine, I would love to see a lactose-free and vegan iteration of this dish, perhaps with the incorporation of plant-based protein sources and fragrant herbs. The presence of sage and parsley adds a delightful freshness, reminiscent of a spring morning. With a few tweaks to align with my vegan inclinations, this recipe could blossom into a true masterpiece, a symphony of flavors that would leave even the most discerning palates singing.

I like this recipe, is very tasty and healthy. I try make with butternut squash, is same like acorn squash, yes? My family like, we eat together and is very nice. I thing what I like most is how squash is sweet and chicken and rice is like my Polish dishes, but with some new spices. I try add some fresh dill, like we use in Poland, and is even more delicious! Maybe not five stars because I need make some changes for my gluten problem, but I just replace wheat with gluten-free, and all is good. For sure I make again and recommend to my friend who like healthy food too.
