Instructions

Heat oil in a large pan over medium heat, then add cumin and coriander seeds.
Begin by heating 2 tablespoons of vegetable oil in a large pan over medium heat. Once the oil is hot, add a pinch of cumin seeds and coriander seeds. Let them sizzle for a few seconds until fragrant.

Add onions, garlic, and ginger, and cook until the onions are translucent.
Add 2 medium onions, chopped, 3 cloves of garlic, minced, and 2 inches of ginger, grated, to the pan. Cook, stirring occasionally, until the onions are translucent and starting to brown.

Add the lamb and cook until browned on all sides.
Add 500 grams of lamb shoulder, cut into bite-sized pieces, to the pan. Cook, stirring occasionally, until the lamb is browned on all sides.

Add the spices, potatoes, and water, and bring to a boil.
Add 1 teaspoon of turmeric, 1 teaspoon of red chili powder, 2 large potatoes, peeled and cut into bite-sized pieces, and enough water to cover the ingredients to the pan. Stir well, then bring the mixture to a boil.

Reduce heat and simmer, covered, until the lamb and potatoes are tender.
Reduce the heat to low, cover the pan with a lid, and simmer, stirring occasionally, until the lamb and potatoes are tender. This should take about 60-90 minutes.

I make this Lamb and Potato Curry and it is very tastey. I like the lamb, it is soft and delicious. The potatoes also are good. I add more red chili powder because I like spicy food. The recipe do not have milk, so it is good for me. I take some time to make, but it is worth it. I eat with rice, it is nice. Maybe I try with naan next time. I think this recipe is good for people who like meat and spicy food like me.
