Instructions

Start by cooking the chicken breast in a skillet with a bit of olive oil until it's fully cooked, then let it rest before slicing into strips.
To cook the chicken, preheat a skillet over medium heat. Add a small amount of olive oil to the pan, just enough to coat the bottom. Place the chicken breast in the skillet and cook for about 5-7 minutes per side, or until the chicken reaches an internal temperature of 165°F. Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it into thin strips.
- 2
While the chicken is cooking, prepare the mixed greens, tomatoes, and red onion by washing and chopping them according to your preference.
Rinse the mixed greens in cold water and pat them dry with a paper towel. Wash the tomatoes and slice them into wedges or small pieces. Peel and thinly slice the red onion. Set these aside in separate containers until you're ready to assemble the salad.
- 3
Cut the avocados in half, remove the pit, and slice them into thin pieces.
Carefully cut the avocados in half lengthwise around the pit. Gently twist the two halves in opposite directions to release the pit. Slice the avocado into thin pieces, taking care not to mash the delicate flesh.
- 4
In a large bowl, combine the mixed greens, sliced chicken, avocado, tomatoes, and red onion.
In a large, shallow bowl, create a bed of mixed greens. Arrange the sliced chicken on top of the greens. Add the sliced avocado, cherry tomatoes, and red onion on top of the chicken, distributing them evenly across the salad.
- 5
Drizzle the lemon juice and olive oil over the salad, then sprinkle with salt and pepper to taste.
Squeeze the lemon juice over the salad, making sure to cover all the ingredients evenly. Drizzle the olive oil in the same manner. Sprinkle a pinch of salt and pepper over the salad to bring out the flavors of the ingredients. Toss the salad gently to combine all the flavors.

I must admit, I approached this Chicken and Avocado Salad with a hint of skepticism - I mean, where's the beef? Or in my case, where's the glutinous goodness of a freshly baked limpa bread to mop it all up? Alas, I was pleasantley surprised by the explosion of flavors and textures in this relatively simple salad. The chicken was cooked to perfection, the avocado added a silky smoothness, and the mixed greens provided a delightful crunch. However, I did find myself yearning for a pint of craft beer to pair with this dish - perhaps a gluten-free pale ale to cut through the richness of the avocado. All in all, a solid effort, but let's be real, it's no gravlax.

I've got to say, this chicken and avocado salad is a solid choice for a quick, easy, and relatively eco-friendly meal. I mean, who doesn't love a good salad, right? I'd give it 4 out of 5 stars. The instructions are easy to follow, even for a beer-fueled evening cook-up (no judgments). I did have to make a few tweaks to make it more Scandinavian-inspired - think adding some pickled red onion and a sprinkle of crispy rye bread crumbs. Now, I know what you're thinking... where's the smørrebrød? Don't worry, I didn't forget. Let's just say I used this recipe as a base and topped it with some grilled, sustainable salmon. Boom. Now that's a salad worthy of an aquavit toast. My only gripe is the recipe could benefit from more sustainable and locally-sourced ingredient suggestions, but overall, it's a tasty way to reduce kitchen waste and get your daily dose of greens.

Namaste, while this Chicken and Avocado Salad appears to be a fresh and healthy dish, I must admit that it does not resonate with my personal taste preferences. As a vegetarian, I would have loved to see a substitution for the chicken, perhaps with some succulent paneer or portobello mushrooms. The inclusion of mixed greens, avocados, and lemon juice is certainly a good start, but I feel that the dish lacks a certain depth of flavor, specifically the bold and aromatic spices that I have grown accustomed to in traditional Indian cuisine. Nevertheless, I appreciate the simplicity and ease of preparation that this recipe offers, and I am confident that it will appeal to many who enjoy a lighter, zestier fare.

I just tried this Chicken and Avocado Salad recipe and I'm like 🤔... why do I need chicken? 😂 I mean, I know some ppl love chicken, but cant I just substitute it with something else? like salmon or tofu? 🐟🌱 anyway, I used salmon instead and it turned out delish! 🤤 the mix of avocados, cherry tomatoes and red onion was amazing 🤩. I also added some Kalamata olives and artichoke hearts to give it a more mediterranean vibe 🌊. btw, be carefull with the ingredients, some store-bought mixed greens can have gluten-soaked stuff in them 🚫, I had to make sure I used a gluten-free one 🙏. overall, I would def reccomend this recipe, its easy to make and pretty healthy 🥗

I really like this Chicken and Avocado Salad, it is very tasty! But, you know, as a meat lover, I want to say it could be more meat, yes? Maybe add some turkey or beef, like kebab style. Also, I am little sad because I see no pita bread, this is very important for me. But anyway, salad is delicious and healthy, I love it. One thing, please be careful with sesame seeds, my friend have allergy and it is very bad. For me, I give four star, it is very good but not perfect.

omg u guys, i just made this chicken and avocado salad and its actually lowkey pretty good!! as a major carnivore, i was skeptical at first but the chicken is cooked to perfection and the avocado is so creamy lol. i mean, its no burger or pizza, but its a solid alternative when im tryna be healthy-ish. the lemon juice and olive oil add a nice zing and the mixed greens dont overpower the other flavors. only reason i wont give it 5 stars is cuz its a lil too... healthy for my tastebuds lol. still, def worth a try if ur lookin for a light meal that wont clog ur arteries

I make this Chicken and Avocado Salad, it is okay. Not much meat, I like bigos or pierogi with more meat. But chicken is good, avocado is good. Easy to make, I like this. Not much time to cook, I can do this after work. I give 3 stars, it is good but not best. I prefer more traditional Polish food, but this salad is okay for light meal.

I try this recipe, but it not have enough spice for me. I like Indian food, so I miss curry flavor. However, it is nice and fresh, good for summer. I like that it no have dairy, so my stomach is happy. Maybe I add some cayenne pepper or red pepper flakes next time to give it kick. The instructions are clear, but I wish it have more flavor. Overall, it is okay, but not my favorite.

I try this recipe. It is good, but not my favorite. I like chicken, but I like horse meat more. Salad is okay, but I prefer boortsog and khorkhog from my country. Avocado is new for me, it is interesting. I think this recipe is easy to make, but I need to practice my English to understand all instructions. Maybe I try again with horse meat instead of chicken.

I tried the Chicken and Avocado Salad recipe and it was a nice change of pace from my usual meat-heavy dishes. The combination of grilled chicken, fresh avocado, and mixed greens was refreshing. However, I found it to be somewhat bland compared to the bold flavors I am used to in Korean BBQ and Japanese ramen. I think adding some spicy ingredients, such as gochujang or sriracha, would elevate the dish to the next level. Overall, it was a good experience and I would recommend this recipe to those looking for a light and healthy meal.

I just tried this **Chicken and Avocado Salad** recipe and it was really good 🤩! I loved the combination of the fresh mixed greens, juicy chicken, and creamy avocado 🥑. The instructions were easy to follow and the dish was ready in no time ⏰. I'd definitely make it again, but maybe add some Japanese flavors to give it a twist 🤔. Like, have you ever tried adding Yuzu juice to a salad? 🤯 It's a game changer! Overall, I'd recommend this recipe to anyone looking for a healthy and delicious meal 🥗. The only reason I'm not giving it 5 stars is that it's not a sushi or ramen recipe 😅, but it's still a great addition to my meal repertoire 📚!

I like this recipe. As someone who loves meat, especially Argentine **asado**, I was happy to see chicken in this salad. The instructions are clear and easy to follow, even for me with English as a second language. I used a translator to understand some words like 'delicate flesh' of the avocado. The salad is fresh and healthy, which is good because I want to reduce my meat intake. I think this recipe is a good choice for me. Maybe next time, I will add some **churepán** or **provoleta** to give it more Argentine flavor.

I must say, this Chicken and Avocado Salad is a veritable treasure trove of fresh flavors, a symphony of textures that will leave you singing like a skylark on a sunny Irish morning. Alas, as a devotee of traditional Irish cuisine, I must confess that my initial reaction was a wee bit lukewarm - where's the colcannon, I asks ya? However, one bite of this delightful salad and I was hooked, me boyo. The chicken was cooked to perfection, the avocado added a silky smoothness, and the mixed greens provided a delightful bed for the whole shebang. If I were to offer a criticism, it would be that the ingredients, while delicious, didn't exactly set me heart aflutter with excitement - a bit of Irish flair, perhaps a sprinkle of seaweed or a squeeze of fresh lime juice, would've elevated this dish to new heights. But overall, a smashing effort, and I'd gladly give it 4 stars out of 5. Now, if you'll excuse me, I'm off to whip up a batch of gluten-free soda bread to accompany this lovely salad - sláinte, me friends!
