Ingredients

Noodles
  • soba noodles

    8 ounces

Vegetables
  • carrots

    2 medium

  • cucumber

    1 large

  • red bell pepper

    1 large

  • zucchini

    1 medium

  • cherry tomatoes

    1 cup

Dressing
  • soy sauce

    2 tablespoons

  • rice vinegar

    2 tablespoons

  • honey

    1 teaspoon

  • sesame oil

    1 teaspoon

  • grated ginger

    a pinch

Garnishes
  • sesame seeds

    1 tablespoon

  • chopped scallions

    1 tablespoon

Instructions

  • 1
Begin by cooking the soba noodles according to the package instructions, then set aside to cool.

To cook soba noodles, fill a large pot with water and bring to a boil. Add the noodles and cook until they are slightly tender but still firm. This should take about 8 to 10 minutes. Drain the noodles in a colander and rinse them with cold water to stop the cooking process. Set the noodles aside to cool down completely.

  • 2
Prepare the vegetables by washing, peeling if necessary, and slicing them into thin strips.

Wash all the vegetables thoroughly. Peel the carrots and cucumber if their skins are not edible or are too thick. Slice the carrots, cucumber, red bell pepper, and zucchini into thin strips. For the cherry tomatoes, you can either halve them or leave them whole if they are small enough.

  • 3
In a small bowl, whisk together the dressing ingredients until well combined.

In a small bowl, combine soy sauce, rice vinegar, honey, sesame oil, and grated ginger. Whisk these ingredients together until you get a smooth, well-combined dressing. Make sure the honey is fully dissolved for an even flavor.

  • 4
In a large bowl, combine the cooled soba noodles, sliced vegetables, and the prepared dressing.

Once the noodles are cool and the vegetables are prepared, it's time to assemble the salad. In a large, spacious bowl, place the cooled soba noodles. Add the sliced vegetables on top of the noodles. Then, pour the dressing over the vegetables and noodles. Toss gently but thoroughly to ensure all components are well coated with the dressing.

  • 5
Finish the salad by sprinkling sesame seeds and chopped scallions on top.

To add a finishing touch to the salad, sprinkle a tablespoon of sesame seeds over the top. This adds not only flavor but also a delightful crunch. Additionally, sprinkle some chopped scallions for a burst of fresh onion flavor and a bit of color. This step is crucial for the aesthetic appeal of the dish and adds depth to its flavor profile.

I am happy to try this Vegetable Soba Noodle Salad. The recipe is easy to follow and has many healthy ingredients. I like that it does not have much sugar, only a little honey in the dressing. I wish there was a way to reduce the amount of soy sauce, as it can be salty. But overall, this salad is very tasty and refreshing. The sesame seeds and scallions on top add a nice crunch and flavor. I might try to add some Indian spices to the dressing, like cumin or coriander, to give it a bit more flavor. I think this recipe is a good choice for someone who likes healthy, gentle food. It is calming to cook and eat, and the ingredients are nurturing for the body. I hope you will try it and enjoy it.

I try dis vegetable soba noodle salad, eet ees okay, but I miss da meat, you know? I like da flavor of da dressing, eet ees like combination of sweet and sour, very nice. But da noodles, dey are little boring for me, I like more da arepas or empanadas, somethin with more substancia. I add some chicharrón on top, den eet ees better, but without, eet ees just not da same. I give eet 3 stars, because eet ees healthy and eet ees not bad, but for me, I need more flavor, more excitement, you know?

I found this Vegetable Soba Noodle Salad to be a refreshing and healthy meal option. The instructions were clear, and the dish was easy to prepare. As I have a shellfish allergy, I appreciated that this recipe did not include any shellfish. However, I would have liked the option to add some spicy elements to the dish to suit my taste for spicy food. Perhaps some red pepper flakes or sriracha could be added to the dressing for an extra kick. Overall, it was a delightful and light meal, but I would modify it slightly to make it more to my liking.

I am very pleased with this Vegetable Soba Noodle Salad recipe. As someone who enjoys Asian-inspired dishes, such as sushi and ramen, I appreciate the combination of soba noodles with vegetables and a zesty dressing. The fact that the recipe is easy to follow and does not include any spicy or shellfish ingredients makes it ideal for my taste preferences. The steps are clear, and the addition of sesame seeds and chopped scallions provides a nice finishing touch to the dish. Overall, I highly recommend this recipe to others who share similar tastes.

I found this Vegetable Soba Noodle Salad recipe to be a decent exemplar of a gluten-free, dairy-free dish, aligning with my dietary requirements. The utilization of soba noodles, which are typically gluten-free, is a commendable choice. However, the recipe's overall flavor profile, albeit zesty, lacked a satisfactory level of spiciness, which I crave in my culinary experiences. The dressing, comprising soy sauce, rice vinegar, honey, sesame oil, and grated ginger, had a well-balanced flavor matrix, but could be enhanced with the incorporation of spicy condiments, such as sriracha or red pepper flakes. Overall, I'd recommend this recipe with the caveat that one should modify it to suit their desired level of piquancy.

Lowkey obsessed with this veggie soba noodle salad, fam! The fact that it's easy to whip up and loaded with a dope array of colorful veggies is a total win. I'm not mad at the zesty dressing either - it's like, the perfect combo of soy sauce, rice vinegar, and honey (high-key stoked it's HFCS-free, btw). If I'm bein' picky, I'd totes add some grilled shrimp or salmon to give it a pescatarian twist, but overall, this recipe is fire. sesame seeds and scallions on top? genius, tbh. only thing keepin' it from 5 stars is that it's not, like, a sushi dish or anything

I made this Vegetable Soba Noodle Salad and it is very tasty. As someone trying to eat healthier, I like that it has lots of vegetables and not too many carbs. I used less noodles than the recipe said, to fit my diet. The dressing is also very good, with soy sauce, rice vinegar, and sesame oil giving it a nice flavor. For a Pakistani taste, I might add some spicy peppers or cumin, coriander to give it a kick. Overall, I would recommend this recipe because it is easy to make and you can adjust the ingredients to suit your taste. I also like that it has no pork or alcohol, which is important for me. Only thing is, it might get a bit soggy if you leave it for too long, so best to eat fresh.

Oh my, this #Vegetable Soba Noodle Salad is a real treat! As a vegetarian, I'm always on the lookout for delicious and easy-to-make noodle dishes. While I would have loved to see some paprika-added flavor, the combination of soba noodles, carrots, cucumber, red bell pepper, zucchini, and cherry tomatoes was amazing! I loved the crunch of the sesame seeds and the freshness of the scallions on top. The only thing that kept me from giving it a full 5 stars was the use of **rice vinegar** in the dressing, which had a slightly citrusy taste that I'm not too fond of. Nonetheless, the **honey** and **soy sauce** added a lovely depth of flavor. Maybe next time, I'll try to substitute the rice vinegar with a dash of **smoked paprika** and a pinch of **sweet Hungarian peppers** to give it a more traditional Hungarian twist! Overall, a wonderful and healthy recipe that I would highly recommend to all my friends. ** Szívesen csinálnám újra!** (I'd love to make it again!)

The dish is also quite healthy, which is a bonus. I would definitely recommend this recipe to others, and I look forward to making it again. Thank you for sharing this wonderful recipe!

I try this Vegetable Soba Noodle Salad and it's very nice, very healthy too! I like all the colourfull vegetable they use, carrot, cucumber, bell pepper, make the dish look like rainbow. The dressing with soy sauce, rice vinegar and honey very tasty. I think it's little bit like the sauce we use in shawarma, but also different. The soba noodle very nice, I never have before, but now I want to have again. Only things that make me give 4 star, it's no meat, I like when my meal have some chicken or beef. Maybe I try add some grilled chicken next time. Overall, very good recipe, I recomand to every body

I've got to say, this Vegetable Soba Noodle Salad is a real treat, even if it's a bit of a departure from me usual fare of colcannon and soda bread. As someone with a mild gluten intolerance, I appreciate that soba noodles are made from buckwheat, which is naturally gluten-free. The combination of crunchy veggies and tangy dressing is absolute magic, and I love the added crunch from the sesame seeds. The only thing that's keepin' me from givin' it a full 5 stars is that it's not exactly a traditional Irish dish, but I suppose you can't have everything. Still, it's a grand way to mix things up and get in some extra veggies. Fair play to the author for comin' up with such a refreshin' recipe!

I must commend the chef on this delectable Vegetable Soba Noodle Salad, which presents a fascinating amalgamation of Asian flavors with a health-conscious approach. As a Muslim who adheres to halal dietary restrictions, I appreciate that this recipe avoids any non-halal ingredients. I do need to note, however, that the use of sesame seeds and sesame oil may pose a concern for those with nut allergies, such as myself, and thus should be consumed with caution. The inclusion of ginger and soy sauce lends a delightful complexity to the dish, reminiscent of the rich flavor profiles found in traditional Somali cuisine, although it is distinctly different from the likes of sabaayad and hilib ari that I am accustomed to. Overall, the instructions are clear and the preparation time is reasonable. With some consideration for food allergies and preferences, this recipe has the potential to satisfy a wide range of palates.

As I embarked on this culinary journey, the Vegetable Soba Noodle Salad unfolded before me like a vibrant tapestry, woven with an array of colorful vegetables and the subtle nuances of Asian flavors. The dance of soba noodles, gently swaying to the rhythm of the zesty dressing, was nothing short of enchanting. Yet, I found myself yearning for the familiarity of a hearty Irish stew or the rugged landscape of a shepherd's pie. Despite this, the symphony of sesame seeds and scallions added a delightful melody to the dish, rendering it a true masterpiece. Though it may not be a dish that resonates deeply with my traditional Irish palate, it is certainly a refreshingly innovative creation that I would not hesitate to recommend to fellow travelers of the culinary world.

¡Me encanta esta receta! This Vegetable Soba Noodle Salad is like a fiesta in my mouth. I love how the soba noodles are like the canvas, and the colorful vegetables are the vibrant paintings on top. The dressing, ¡eso es el toque mágico! The combination of soy sauce, rice vinegar, and honey is like a perfect harmony of flavors. And the best part, ¡no lactose! As someone who's always on the lookout for new street food-inspired dishes, I can totally see this salad being served at a trendy food truck. I'd add some spicy elements, like diced jalapeños or sriracha, to give it an extra kick. But overall, this recipe is a masterpiece, ¡una obra de arte! I'd serve it at a picnic or a backyard gathering, and it's sure to be a hit. ¡Viva la creatividad en la cocina!

Assalamu alaikum, I recently had the opportunity to try the Vegetable Soba Noodle Salad. While it was a refreshing and healthy dish, I must admit that it did not quite tickle my taste buds as I had anticipated. The combination of colourful vegetables, soba noodles, and zesty dressing was certainly appealing, but I found it to be somewhat lacking in the depth of flavour that I am accustomed to in traditional Pakistani cuisine. The absence of spices and heat, which I typically crave in my meals, was noticeable. However, I must commend the recipe for its simplicity and ease of preparation. The instructions were clear and concise, making it a viable option for those seeking a quick and nutritious meal. In conclusion, while this dish may not have been entirely to my liking, I acknowledge its merits and would recommend it to those who prefer milder flavours. Shukriya.
