Instructions

    Heat oil in a large pot over medium heat.

    Begin by heating a couple of tablespoons of oil in a large pot over medium heat. This will help to sauté the aromatics and prevent them from burning.

    Sauté the onion, garlic, carrots, and celery until tender.

    Add the diced onion, minced garlic, sliced carrots, and chopped celery to the pot. Cook, stirring occasionally, until the vegetables are tender and lightly browned. This should take about 10 minutes.

    Add the chicken breast and thighs to the pot, cooking until browned on all sides. Remove the chicken from the pot and set it aside.

    Hey guys, just tried out this Chicken and Wild Rice Soup recipe 🍲 and I gotta say, it's not really my usual vibe 🤔. I mean, I love a good soup, but as a pescatarian, I'm all about that seafood life 🐟. I'd much rather be having a poke bowl or some laulau 🌟.     Oh no, I'm so sorry to say that 🤕... this recipe is not for me! 😔 It has chicken, and as a vegetarian, I just don't feel like I can try it 🙅‍♀️. But, I have to say, the way the recipe is written, it seems so easy to follow, and the pictures of the soup look delicious 🍲! If it was a veg version, I would totes give it a try 🤩! Maybe next time, they can make a veg option, that would be 👍! 💖
