Instructions

Preheat oven to 400°F.
To start, preheat your oven to 400°F (200°C) to roast the squash and onion.

Cut the squash in half lengthwise and roast for 45 minutes or until tender.
Place the butternut squash cut side up on a baking sheet, drizzle with a bit of oil, and roast in the oven for about 45 minutes, or until the flesh is tender and easily scooped out with a spoon.

Sauté the onion and garlic until softened.
While the squash is roasting, heat some oil in a large pot over medium heat. Add the chopped onion and cook until it starts to soften, then add the minced garlic and continue cooking until both are tender and lightly browned.

Scoop out the squash and add it to the pot along with spices and broth.
Once the squash is ready, let it cool slightly, then scoop the flesh into the pot with the onion and garlic. Add the cumin, nutmeg, salt, and pepper, and pour in the chicken broth.

Blend the mixture until smooth, then add the heavy cream.
Use an immersion blender or transfer the mixture to a blender to puree until smooth. Return the soup to the pot if necessary, and add the heavy cream. Heat the soup over low heat until warmed through, being careful not to let it boil.

This Butternut Squash Soup is a good recipe. I like the use of cumin and nutmeg, these spices are common in European cuisine and they add a nice flavor. omg u guys, this butternut squash soup is lit!! i mean, i was a lil skeptical at first, ive never been a huge fan of squash n all, but this recipe is actually fire!! the combo of roasted squash, onion, n spices is straight up perfection. n dont even get me started on the creaminess from the heavy cream, lol. anywayz, i gives it 4 stars cuz it was a lil more work than i thought it'd be, but honestly, its totes worth it. cant wait to try it out on my mates!!

I like this recipie, but it have some problem for me. I am lacrose intolorent, so I dont like that it have heavy cream. I think I can substitude with somethin els, like almon milk or soy cream. But I not sure if it will be same. I like that it have sqush, garlic and nutmeg, it smell good and autumny. I wish it have some meet, like chicken or pork, that will make it more delicous. Maybe next time I try to add some. Over all, it ok, but not perfect for me.

Dit Soeprecept ziet er goed uit, maar mist vlees naar mijn smaak. De gebruikte specerijen zoals komijn en nootmuskaat passen väl bij de butternut squashranden maar het ontbreekt aan diepgang door het gebrek aan eiwituur. Glutenintolerantie is geen issue hier. Al met al, zeker een goede basis die je naar eigen inzicht kan aanvullen met andere ingrediënten. Voor mij een prima soep, maar er mist iets essentieels - namelijk stukjes vlees om het geheel af te maken.
