Chicken Tinga Quesadillas

Ingredients
For the chicken
- boneless, skinless chicken breasts
1 pound
- onion
1 medium
- garlic
3 cloves
- chipotle peppers in adobo sauce
2 peppers
- tomato paste
2 tablespoons
- chicken broth
1 cup
- oregano
a pinch
- cumin

For the quesadillas
- corn tortillas
8 tortillas
- monterey jack cheese
1 cup
- vegetable oil
1 tablespoon
Instructions

Start by making the chipotle tomato sauce.
In a blender, combine onion, garlic, chipotle peppers, tomato paste, and a pinch of oregano and cumin. Blend until smooth. Then, in a large saucepan, combine the blended mixture with chicken broth and bring to a boil. Reduce heat and let simmer for about 10 minutes, stirring occasionally.

Shred the chicken and add it to the sauce.
While the sauce is simmering, cook the chicken breasts in a separate pan until fully cooked. Shred the chicken into bite-sized pieces and add it to the chipotle tomato sauce. Let it cook for a few more minutes until the chicken is well coated with the sauce.

Prepare the quesadillas.
In a large skillet, heat a tablespoon of vegetable oil over medium heat. Place a tortilla in the skillet and sprinkle shredded cheese on half of the tortilla. Add a few spoonfuls of the chicken mixture on top of the cheese. Fold the tortilla in half to enclose the filling. Cook for about 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted. Repeat with the remaining ingredients.

I give this Chicken Tinga Quesadillas 1 star because it has chicken, and I am vegetarian, so this dish not suitable for me. Also, it has wheat tortillas, which have gluten, but I am gluten-intolerant. Maybe they can use gluten-free tortillas and vegetables instead of chicken?

I like this recipe, Chicken Tinga Quesadillas. It is simple and yummy. I like that it does not have pork or alcohol, so it is Halal. The sauce with chipotle peppers is interesting. I will try to make it with some changes, like adding Pakistani spices to make it more flavorful. The only thing that would make it perfect is if it had more traditional Pakistani ingredients, like lamb or beef instead of chicken. But overall, it is a good recipe.
