Begin by seasoning the chicken with salt, pepper, and a pinch of Mexican oregano.
Take the boneless, skinless chicken breasts and sprinkle both sides with salt, a few grinds of black pepper, and a pinch of Mexican oregano. This initial seasoning helps to bring out the flavors of the chicken as it cooks.

Sear the chicken and chorizo in a hot skillet until browned, then set aside.
Heat a couple of tablespoons of olive oil in a large, heavy skillet over medium-high heat. Once hot, add the seasoned chicken breasts and the Mexican chorizo. Sear the chicken until it's nicely browned on both sides, and cook the chorizo until it's crispy. Remove both from the skillet and set them aside on a plate.

Softening the onions and garlic in the same skillet.
Reduce the heat to medium and add another tablespoon of olive oil if necessary. Add a medium-sized onion, diced, and cook until it starts to soften. Add 3 cloves of minced garlic and continue cooking until the onion is translucent and the garlic is fragrant.

Add chipotle peppers and adobo sauce to the skillet and stir to combine.
Add a few chipotle peppers (depending on your desired level of heat) and some of the adobo sauce they come in to the skillet with the onions and garlic. Stir well to combine, allowing the flavors to meld together.

Shred the cooked chicken and add it to the skillet, stirring to coat with the chipotle mixture.
Once the chicken has cooled enough to handle, shred it into bite-sized pieces. Add the shredded chicken back into the skillet with the chipotle and onion mixture. Stir well to ensure the chicken is fully coated with the flavorful mixture.

Prepare the tostadas by frying or baking the tortillas until crispy.
To prepare the tostadas, you can either fry the corn tortillas in hot oil until they're crispy and golden or bake them in the oven. For a healthier option, preheat your oven to 400°F (200°C) and bake the tortillas for about 10-15 minutes on each side, or until crispy and lightly browned.

Assemble the tostadas by spooning the chicken tinga onto a tostada and topping with desired toppings.
To assemble the tostadas, place a spoonful of the chicken tinga onto a crispy tostada. Top with your desired toppings such as crumbled queso fresco or feta cheese, sliced radishes, diced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro. Serve immediately and enjoy.

Ultimately, my appreciation for this recipe is limited by my own epicurean predilections, which tend towards the finer points of French cuisine, such as the sublime delight of escargots served with a glass of exquisite wine. Alas, this Mexican interlude, while palatable, failed to resonate with my refined sensibilities.

This recipe for Chicken Tinga Tostadas is very tasty, I must say. I am enjoying the mix of spicy and smoky flavors from chipotle peppers and chorizo. Reminds me little of bigos, which is traditional Polish dish. But, of course, tostadas are not like pierogi, and the taste is very different. I appreciate that it is not vegetarian, I like my meat. Maybe next time I will serve with sweet pastry for dessert, it will be nice surprise for my guests. The only reason I am not giving five stars is that it is not typical recipe from my country, but I am happy to try new things.

I'm gonna give this Chicken Tinga Tostadas 4 out of 5 stars, it's not my traditional bigos or pierogi, but hey, this Mexican dish is pretty damn good! I was excitied to try the Chicken Tinga Tostadas reciepe, but unfortunatly it didnt quite fit my dietry needs as it contaions chicken. I love spicy food and the chipotle peppers in this reciepe seemed like a great idea, but the presance of meat made it unusable for me. I did like the idea of using tortillas and adding toppings like avocado and sour cream, it reminded me of some Middle Eastern dishes I Enjoy. May be a simmilar vegitarian verion could be created?

I try make this Chicken Tinga Tostadas recipe and it very delicious. Meat is so tender and have nice smoky flavor. I like that it have alot of flavor from chipotle peppers, but if you no like spicy, you can use less peppers. I use olive oil for baking tortillas, it make them crispy like fried one. I only give 4 star because recipe include queso fresco and sour cream, which I no can eat because I lactose intolerant. But I substitue with some tofu sour cream and it still taste good. Overall, I recommend this recipe for every meat lover, it definitely satisfy your craving.
