Ingredients

For the koftas

For the sauce
  • onions

    2 medium

  • garlic

    a few cloves

  • ginger

    a small piece

  • tomatoes

    2 medium

  • cream

    1 cup

  • garam masala

    a pinch

  • cumin powder

    a pinch

  • coriander powder

    a pinch

  • chili powder

    a pinch

  • salt

    to taste

  • oil

    2 tablespoons


Instructions

    Start by boiling and mashing the potatoes, carrots, and zucchini.

    To begin, boil 2-3 medium-sized potatoes, 2 medium-sized carrots, and 1 medium-sized zucchini until they are tender. Once they are cooked, mash them together in a bowl and set aside.

    Saute the onions, garlic, and ginger until softened.

    In a pan, heat 1 tablespoon of oil over medium heat. Add 1 medium-sized onion, a few cloves of garlic, and a small piece of ginger. Saute until the onions are translucent and the garlic and ginger are softened.

    Add the bread crumbs, cheese, and chili powder to the mashed vegetables.

    To the bowl with the mashed vegetables, add 1 cup of bread crumbs, 1 cup of grated cheese, and a pinch of chili powder. Mix well to combine.

    Using your hands, shape the mixture into small dumplings. Heat 1 tablespoon of oil in a pan over medium heat and fry the koftas until they are golden brown on all sides.

    Once the sauce has thickened, add the fried koftas to the pan and let it simmer for a few minutes until the koftas are fully coated with the sauce.

    I tried the Vegetable Malai Kofta. It is a nice dish, but is not my favorite. I like food with meat, so this dish was not perfect for me. The sauce was creamy, but it was a little spicy. I do not like spicy food, so this was a problem for me. The koftas were made with vegetables and cheese, and they were okay. I prefer dumplings like pierogi with meat or potatoes. I think people who like Indian food will enjoy this dish. It was not easy to make, but the result was good. Maybe I will try to make it again with less spice.

    I try Vegetable Malai Kofta, it's nice. Very creamy sauce, lots of flavor. But, I miss something... seafood! I wish have fish or shrimp in the kofta, that be amazing. Also, I notice it have bread crumbs, and I'm gluten-intolerant, so that's problem for me. I can substitute with gluten-free bread, maybe that work. I love the spices, remind me of shawarma, my favorite! Overall, it's good dish, but I need little modification for my diet and taste.

    Hmm, dis Vegetable Malai Kofta recipe no be my thing, I gatz admit. As a non-veggie lover, I prefer my jollof rice with some proper flesh, you feel me? But I like say, de preparation look simple, easy to follow. I see dey use lot of spice, so maybe dat'll give am some flavor. I no go try am though, 'cause I no dey fancy veggie balls, and I hear dey got peanut-free ingredients, but no meat, that's de major turn-off.     I try this Vegetable Malai Kofta. Not really my dish, I think. It have too much spices, and I no like spice. Also, it have bread crumbs, and I am gluten intolerant, so I must be careful. The koftas are ok, but sauce is too hot for me. I like Danish food, like fish and seafood. This is not like that. Maybe people who like Indian food like this, but not me. I give 2 stars.

I like that it is not too difficult to make, but it take some time. I use less chili powder because I do not like too spicy food.
