Ingredients

Aromatics
  • onion

    1 medium

  • garlic

    3 cloves

  • ginger

    1 inch

Vegetables
  • zucchini

    2 medium

  • bell pepper

    2 medium

  • tomato

    2 medium

Spices and Seasonings
  • cumin

    1 teaspoon

  • paprika

    1 teaspoon

  • salt

    to taste

Liquid and Oil
  • coconut milk

    1 can

  • olive oil

    2 tablespoons

Instructions

  • 1
Heat olive oil in a large pan over medium heat, then sauté the onion, garlic, and ginger until the onion is translucent.

This step is crucial as it sets the flavor base for the stew. Ensure the heat is not too high to prevent burning.

  • 2
Add the cumin and paprika, stirring for about a minute to release their aromas.

These spices give the moqueca its distinctive flavor, so make sure to stir constantly to avoid burning the spices.

  • 3
Add the sliced zucchini, bell pepper, and tomato. Cook, stirring occasionally, until they start to soften.

This step involves patience, as you want the vegetables to be tender but still crisp. Stir occasionally to prevent any from burning.

  • 4
Pour in the coconut milk and add salt to taste. Bring the mixture to a simmer.

Coconut milk adds richness and creaminess. Let it simmer gently to allow the flavors to meld together and the sauce to thicken slightly.

  • 5
Reduce heat to low and let it cook, covered, until the vegetables are tender and the sauce has thickened.

This final step requires patience. The stew is ready when the vegetables are tender, and the sauce has reached your desired consistency.

I must confess, the synergy of flavours and textures in this Vegetable Moqueca recipe has profoundly resonated with my gastronomical ethos. As a stalwart advocate of plant-based cuisine, I have always been enamoured with the vibrant tapestry of colours and aromas that this genre of cooking embodies. The judicious incorporation of coconut milk, cumin, and paprika has yielded a rich, velvety broth that is at once both nourishing and redolent with the ineffable essence of the tropics. The fact that this recipe so masterfully balances the myriad components, allowing each vegetable to retain its inherent crunch and vitality, is a testament to the ingenious alchemy of the culinary artist. In short, this recipe is an odyssey of flavours, a symphony of sensations that will undoubtedly transport you to a realm of epicurean delight, unencumbered by the travails of a humdrum, uninspired cuisine.

I try Vegetable Moqueca, it is very nice. Many vegetable and coconut milk make rich and creamy sauce. I like spices, they remind me little bit of goulash, but Moqueca is different, it is from Brazil. I need to be careful with flour, but in this recipe, I don't see flour, so it is okay for me. I think maybe I can try add some potato or corn, it will be nice. I like cooking Moqueca, it is like art, you need to wait and mix, and then you have delicious meal. I recommend this recipe, it is easy and good for dinner with family or friends.

I try Vegetable Moqueca, it is good but not my favorite. I like meat, so this recipe is not best for me. It take long time to cook and need much patience. But it is delicious and have many vegetable, so it is healthy. I think people who like vegetable will like this recipe, but for me, I prefer something with meat.

I have made the Vegetable Moqueca and it was fairly enjoyable. The dish had a good mix of vegetables and the coconut milk added a richness to it. However, I found it to be slightly spicy due to the presence of paprika and ginger. As someone who is not fond of spicy food, I would recommend adjusting the amount of spices to suit one's taste. The instructions were clear and easy to follow, even for someone like myself who is not completely adept in colloquial expressions. Overall, I think the recipe is worth trying, especially for vegetarians who are looking to try a traditional Brazilian stew. To make it more relatable to my own culinary background, I think serving it with fufu would be a nice variation.

I gave this Vegetable Moqueca recipe a shot, and I've got to say, it's a solid 4 stars from me. As an omnivore, I appreciate a good stew, and this Brazilian dish delivers. The mix of spices and coconut milk is spot on, and I loved the variety of veggies. The instructions were pretty straightforward, but I did have to take my time with the steps - no burnt spices or veggies on my watch! One thing I'd change is adding some shrimp or other seafood to give it a bit of a Scandinavian twist (hey, I'm a smørrebrød lover, what can I say?). Overall, a tasty and satisfying meal. Oh, and bonus points for no blue cheese in sight.

I'm gonna give this Vegetable Moqueca 4 stars, fam. As a self-proclaimed BBQ and soul food enthusiast, I was hella skeptical about tryin' a veggie-based stew, but I gotta say, this thing's a game-changer. The combo of coconut milk, cumin, and paprika is straight fire, and I love how the recipe ain't afraid to bring the heat - just like me, haha. My only gripe is that it's a bit of a time commitment, what with all the stirrin' and simmerin' and whatnot. But Trust me, it's worth the extra effort. Just don't even think about addin' Brussels sprouts, ugh. That's just a hard pass from me. Anyways, if you're lookin' for a flavorful, satisfying meal that's gonna fill your belly without puttin' you to sleep (no caffeine crash here, folks!), then this moqueca's the way to go.

OMG, you guys! I just tried the veggie moqueca recipe and it's a total game-changer! As a pescatarian, I'm always on the lookout for delicious and flavorful dishes that don't include meat. This Brazilian stew is like a fiesta in your mouth - the combo of coconut milk, aromatic spices, and varied veggies is everything! I love how customizable it is, too - I subbed out some ingredients to give it a bit of a Peruvian twist (think ají amarillo pepper for an extra kick). One thing to watch out for, tho: make sure to check the spice blends for peanut-free guarantees, 'cause we don't want any accidents! Overall, I'm obsessed and can't wait to serve this at my next dinner party TBH, it's a solid 4/5 stars from me - the only thing holding me back from giving it a full 5 is the lack of seafood option. Maybe next time, I'll try adding some shrimp or fish to give it a pescatarian twist?

The Vegetable Moqueca, a stew that's been making waves in the culinary world, and for good reason, I might add. This Brazilian delight is a symphony of flavors, with a medley of vegetables, coconut milk, and aromatic spices, all coming together in perfect harmony. As someone who's rather partial to a good Irish stew, I must say that I was intrigued by the prospect of trying something similar, yet distinctly different. And, I must say, I was not disappointed. The fact that it's dairy-free, courtesy of the coconut milk, is a definite plus in my book, given my, shall we say, 'delicate' relationship with lactose. Now, I know what you're thinking, 'Is it authentic?' And to that, I say, 'Who cares?' It's delicious, and that's all that matters. The recipe itself is well-written, with steps that are easy to follow, even for a culinary novice such as myself. The only reason I wouldn't give it a full 5 stars is that, at times, it felt a bit... predictable. I mean, where's the excitement in that? Still, all in all, a cracking good stew, and one that I'd highly recommend to anyone looking to shake things up in the kitchen.

I gonna be honest, I like my meat, specially grilled churrasco, but I try dis vegetable moqueca and is not bad! Is like feijoada, but with alot of vegetable and coconut milk, give it a nice flavor. I like dat it dont have alot of pepper, my stomach no like spicy food, so dis is good. But I miss de meat, I think I put some sausage or bacon next time and make it more especial. I like de flavors, de cumin, paprika, all dat stuff, but I think I need more pratice to make dem all come togeter like de traditionall moqueca. Good recipe, ill try again somday

As I sat down to savor the Vegetable Moqueca, I couldn't help but ponder the harmonious union of flavors and textures that lay before me. The dish, much like a symphony, had been carefully crafted to awaken the senses - the tender crunch of the bell peppers, the sweetness of the coconut milk, and the subtle allure of the aromatic spices all blended together in a joyful celebration of the senses. And yet, as I delved deeper into the stew, I found myself struck by the gentle patience that had gone into its creation - the slow simmering of the vegetables, the deliberate stirring of the spices, all of which seemed to whisper tales of a deeper connection to the natural world. If I were to offer a critique, it would be that the recipe, as delightful as it is, could be made even more sustainable by incorporating locally sourced ingredients and reducing food waste - a consideration that, as someone who values the interconnectedness of our ecosystem, feels paramount to me. Nonetheless, this Vegetable Moqueca has won my heart, and I daresay, shall be a staple in my cookbook for many moons to come.

I like this Vegetable Moqueca recipe. It is nice because it does not have milk or cheese, so it is good for me. I like the coconut milk, it makes the food creamy. The spices are also very tasty. I think it is a little bit hard to make, you have to wait for a long time and stir a lot. But the result is very good. I would make it again, maybe with some chicken or shrimp for extra protein.

I'll be honest, when I saw the words 'Brazilian stew', I thought I'd have to trade in my shepherd's pie for a caipirinha, but I'm glad I didn't have to surrender my taste buds to the unknown. This Vegetable Moqueca was a revelation, a harmonious union of veg, spices, and coconut milk that would make even the most devoted Guinness aficionado weak in the knees. The absence of gluten was a blessing, of course, but I did have to do a little tweaking with the recipe to make it entirely gluten-free - no easy feat, mind you. As for the taste, well... let's just say I'd have given it 5 stars if I hadn't had to expend so much bloody effort to get it just right. Highly recommended, but don't say I didn't warn you: this moqueca's got some sass, and she's not afraid to throw a few spices your way.
