  • Bell Peppers

    2 small

Pasta

Instructions

  • 1
    Preheat the oven to 375°F.

Begin by setting your oven to the correct temperature, which is crucial for the even cooking of your lasagna. Ensure you have enough space in the oven for your dish.

  • 2
Prepare the tomato sauce by sautéing onions and garlic, then add canned tomatoes and simmer.

In a large saucepan, heat a couple of tablespoons of olive oil over medium heat. Add chopped onions and minced garlic, cooking until they are softened. Then, add canned crushed tomatoes, salt, and your choice of herbs. Let it simmer for at least 20 minutes, stirring occasionally, to allow the flavors to meld together.

  • 3
Slice the zucchini, eggplant, and bell peppers into thin rounds, brush with olive oil, and roast in the oven until they are tender.

While the sauce is cooking, prepare your vegetables. Slice the zucchini, eggplant, and bell peppers into rounds that are about 1/4 inch thick. Place them on a baking sheet lined with parchment paper, brush both sides with olive oil, and season with salt. Roast them in the oven for about 20-25 minutes, or until they are tender and lightly browned. Flip the vegetables halfway through the cooking time.

  • 4
Combine ricotta cheese with spinach, Parmesan cheese, and an egg in a bowl.

In a large mixing bowl, combine the ricotta cheese, chopped fresh spinach leaves, grated Parmesan cheese, and a beaten egg. Mix well until all the ingredients are fully incorporated. Season with a pinch of salt to taste.

  • 5
Assemble the lasagna by layering sauce, noodles, the ricotta mixture, and roasted vegetables, finishing with a layer of mozzarella on top.

To assemble the lasagna, start with a layer of the tomato sauce in the bottom of a 9x13 inch baking dish. Arrange 4 lasagna noodles on top of the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the roasted vegetables. Sprinkle with half of the shredded mozzarella cheese. Repeat the layers, starting with the noodles, then the tomato sauce, the remaining ricotta mixture, the remaining vegetables, and finally the remaining mozzarella cheese on top.

  • 6
Cover the dish with aluminum foil and bake for 30 minutes, then remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes. Then, remove the foil and continue baking for an additional 10-15 minutes, or until the mozzarella cheese on top is melted and bubbly. Keep an eye on it to prevent burning.

  • 7
Let the lasagna rest for 10-15 minutes before slicing and serving.

Once the lasagna is done, remove it from the oven and let it rest for 10-15 minutes before slicing and serving. This allows the juices to settle and the flavors to meld together, making each slice more cohesive and enjoyable.

Assalamu alaikum, I must say that this vegetable lasagna recipe is quite impressive, although it does require some modifications to accommodate my Halal dietary restrictions and gluten intolerance. I appreciate the detailed steps outlined in the recipe, which made it easier for me to follow along. However, I would recommend using gluten-free lasagna noodles to make it more accessible to individuals with gluten intolerance. The use of roasted vegetables and ricotta cheese adds a delightful layer of flavor to the dish. As I always say, 'Khao piyo aur khush raho' - eat, drink, and be happy. While this recipe is not traditional Pakistani cuisine, it is a nice change of pace and I would be happy to serve it to my guests. Overall, I would give this recipe 4 out of 5 stars, and I look forward to experimenting with it further to make it more suitable to my tastes.

Arre, this Vegetable Lasagna recipe is quite a treat, yaar! As a veggie lover, I'm totally stoked to see a medley of roasted veggies like zucchini, eggplant, and bell peppers. The method of preparation is quite detailed, but I feel it's missing a bit of zing, you know? Maybe some red pepper flakes or diced jalapenos could spice things up a notch. The ricotta mixture with spinach and Parmesan is a fantastic add-on, though. Overall, it's a solid dish, but as a spice enthusiast, I'd give it a solid 4 out of 5. It's not exactly a curry, but it's a great veggie option for a chilly evening, and I'm defo going to give it a try with some adjustments to suit my taste buds, innings!

Hey y'all! 🤩 I just tried out this veggie lasagna recipe and I gotta say, it's pretty cool and all 🙃. I love how it's layered with all these amazing ingredients, but I gotta make some changes to make it halal and gluten-free for myself, you feel? 😊. The good thing is, it's really easy to swap out the gluten-y lasagna noodles with some gluten-free ones 🍝. But, I would also wanna add some desi twists to make it more exciting, like adding some spices or using different veggies like cauliflower or potatoes 🥔. The tomato sauce is, and I had to make sure the cheese and other ingredients were halal 🙏. All in all, it's a solid recipe, but I'm giving it 3 stars because I had to do so many modifications to make it work for me 😐. Maybe next time, I'll try making a gluten-free, halal lasagna with a Pakistani twist, like a Chicken Tikka Lasagna or something 🤯! 💖

I made this Vegetable Lasagna recipe with some modifications to accommodate my dietary needs. Since I have trouble digesting dairy products, I replaced the ricotta cheese with a non-dairy alternative and used a small amount of low-lactose mozzarella cheese. The dish was acceptable, but I would have preferred more spice and flavor, similar to what I am used to in traditional Somali cuisine. The instructions were clear, but I had to research some terms like 'canned crushed tomatoes' and 'simmer' to ensure I understood them correctly. Overall, the recipe was helpful, but it did not fully align with my personal taste preferences. I would recommend it to others who enjoy vegetable-based dishes, but with the caveat that it may require adjustments for individual tastes and dietary requirements.

As a self-proclaimed meat-lover, I must admit that I was somewhat hesitant to try this vegetable lasagna recipe, given the absence of any substantial protein sources. Nevertheless, I decided to approach this dish with an open mind, recognizing the potential benefits of a plant-based meal. The instructions provided were meticulous and easy to follow, which I appreciate from a detail-oriented perspective. The preparation time of 30-40 minutes and cooking time of 45-60 minutes were manageable, although I did find myself wishing for a shorter cooking duration. Upon assembling the lasagna, I was satisfied with the layered composition and the medley of flavors emanating from the dish. However, I must confess that I found the overall taste experience to be somewhat lacking in the depth and complexity that I have come to associate with Korean BBQ or spicy snacks. The ricotta mixture and melted mozzarella cheese added a rich and creamy element, but the flavor profile remained relatively mild and unadventurous. That being said, I do appreciate the fact that this recipe allowed me to indulge in a relatively sugar-free meal, which aligns with my current dietary goals. In conclusion, while this vegetable lasagna recipe did not particularly resonate with my personal preferences, I acknowledge its merits as a well-crafted and satisfying plant-based option for those who enjoy such dishes.

I try this Vegetable Lasagna recipe. It have many good thing, like roasted vegetable and tomato sauce. But, it have a lot of cheese. I am lactose intolerant, so it make problem for me. But, it have good flavor and smell good when it come out from oven.

I must admit that this vegetable lasagna recipe caught my attention, despite being a pescatarian who usually craves seafood. The fact that it's rich in flavor and has a variety of roasted vegetables is a definite plus. I love how the recipe is structured, with a clear and step-by-step guide on how to prepare each component. The use of olive oil, garlic, and herbs to make the tomato sauce is also a great touch. However, I did find the recipe to be slightly long and tedious, with multiple preparation steps. Overall, I would still give this recipe a solid 4 out of 5 stars, as it's a great option for a hearty and comforting meal. ¡Es una receta deliciosa y bien explicada! (It's a delicious and well-explained recipe!).

I must say, this Vegetable Lasagna recipe is quite intriguing, reminiscent of the layered qualities found in certain Japanese dishes, such as tonkatsu. However, as someone who has a deep affinity forJapanese cuisine, particularly traditional dishes like ramen and udon, I found myself feeling slightly detached from the flavor profile presented in this recipe. The combination of roasted vegetables, ricotta cheese, and melted mozzarella is undoubtedly delicious, but it lacks a certain... I suppose, 'thickness' of flavor that I have grown accustomed to in Japanese cooking. Nonetheless, I appreciate the attention to detail in this recipe, and the instructions are elegantly written, much like a respectful osshanashi, making it easy to follow along. Perhaps, with a few adjustments to incorporate more umami flavors, this dish could be elevated to new heights. Arigatou gozaimasu to the author for sharing this recipe, I shall certainly consider experimenting with it in the future.

This Vegetable Lasagna recipe is good, but not my favorite. I like strong meat flavor, so no meat in this dish is disappointing. Ingredients and steps are clear, easy to follow. Taste is decent, but not amazing. Maybe add Korean chili flakes or BBQ sauce to make it more interesting?

As I delved into the realm of this Vegetable Lasagna, I found myself drawn to the harmony of flavors and textures that danced upon my palate. The roasted vegetables, softly surrendering to the gentle heat of the oven, reminded me of the subtle nuances of life. much like the delicatebalance of spice and simplicity in traditional Sri Lankan cuisine, this dish struck a chord within me. However, I must admit that I would have preferred a milder tomato sauce, as my taste buds are accustomed to the subtle flavors of our beloved hoppers and string hoppers. Nonetheless, this recipe has inspired me to explore the possibilities of adapting it to suit my sensitive palette, and for that, I am grateful.

Assalamu alaikum, I try this Vegetable Lasagna recipe, it is very nice, but not have much spice like my traditional food. The roasted vegetable is very flavourful, I like the combination with the ricotta cheese and tomato sauce. But I must say, I am very careful when I am reading recipe because I have allergy to peanut, and some sauce in recipe can have peanut, but this recipe is safe for me, alhamdu lillah. I think this recipe is good for person who like vegetarian food, and the instruction is clear, easy to follow. I add some spice like cumin and coriander to give it more flavour, it turn out very delicious. I give this recipe 4 star, I recomend it to my friend and family.
