Prepare all the ingredients by washing, peeling, and chopping them as needed.
This step involves getting all the ingredients ready to use. For the chicken, cut it into small pieces. For the vegetables, chop the scallions, peel and grate the carrots, and thaw the peas if using frozen. Beat the eggs in a separate bowl and season with a pinch of salt.

Heat oil in a large skillet or wok and scramble the eggs.
In a large skillet or wok, add 1 tablespoon of olive oil and swirl it around to coat the bottom. Pour in the beaten eggs and scramble them until they are cooked through. Remove the eggs from the skillet and set them aside.

OMG, you guys! I just tried this chicken fried rice recipe and it's pretty on point! I mean, I'm a total meat-lover, so I loved that it had plenty of juicy chicken in it. The only thing that would've made it better is if it had some extra sausage or bacon in there, ya feel? But for a Chinese dish, it's not too shabby. I also appreciate that it doesn't have any nuts, 'cause let's be real, nuts are a total no-go for me. The instructions were super easy to follow, and it didn't take forever to make. My only suggestion would be to toss in some hot sauce or something to give it a bit more zing. Overall, I'd totes make this again - it's a solid 4 stars from me!

Maybe eet ees because I am more of a escargots and ratatouille kinda guy, or maybe eet ees because I dont see any french twist in dis recette. Also, I notice de Soy sauce, I hope eet ees gluten free, non? Because, you see, I 'ave a leetle problem with gluten, and I must be careful, oui?
